Most cookware is way too thin, which leaves you with hotspots. For years, I would make up for this by using a cast iron "defuser" to even out the heat and keep the direct flame off the bottom of the pan. I don't have to do this any more. With the triple-layering, you get even heating, regardless of whether it's the middle of the pan or the outer edge. Personally, I like the stainless. MC2 wasn't around when I bought mine, and I might have chosen that because of the low-maintanace exterior, but I'm not regretting it either. I don't have to be worrying about scratching through the coating with it and it cleans up easy enough with a little water and even less elbow grease. Cooking will always be a chore, even if you enjoy the act in itself, if you never invest in good cookware and good knives. This is the first step on at least one of those. You might also wish to add a double-boiler, the steamer insert and a 1 qt. saucier; and maybe a larger stock pot (12 qt. if you can afford it), but this really lets you hit the ground running.
The most impressive thing I've noticed so far is the even temperature control throughout all of the pieces I purchased and have used so far. Even when boiling water, you can see at the bottom of the pot that the heat is being distributed evenly, which is a major downfall of most other cookware. The first downside is that they are, in my experience, a PAIN to clean. Following the manufacturers recommendation to NOT put them in the dishwasher, I have washed them by hand after every use. I highly recommend washing them IMMEDIATELY after use to avoid having to spend a lot of time getting them clean. The other downside is that I think these pots and pans will work much better on gas cooktops than on radiant cooktops. Fortunately, I'll have gas cooktops again in a few months, but really feel that buyers with radiant cooktops should test out a piece or two before commiting to the whole set. Other than those two minor downsides, this is a "keep-for-life" set of pots and pans, and well worth the investment. Check out the rest of the All Clad stainless series for other great pieces (highly recommend the omelette pan to complete this set in particular).
It's kind of like the difference between cooking in a shack and cooking in a castle. (I have a regular house) but I am so excited when I cook with this cookware - it was definitely not expected even from seeing the pictures of it and reading the other reviews. I am 50 years old, and no other cookware has ever made me chuckle and go yee-hahhh! when I used it. The food tastes great in it (much better than same food cooked in Revere Ware or Tefal) and it is SO easy to clean. I did not buy the non-stick kind - but it cleans up just as easily as non-stick cookware. The food tastes like you get in a fine restaurant - clean, crisp - it has integrity and character. Does not taste like it's been beaten up or left in the pan too long. This cookware retains heat so well, that when you rinse it under warm or hot water after cooking with it, (even though it starts out cold) - it stays warm afterwards for a long time - in the dish drainer while it's drying! I have been getting food magazines for years. I usually read the recipes and look at the pictures. Now I actually look forward to trying the recipes in real life. If you have ever loved cooking in the past or love it now - you'll love these pans, and they'll love you too - (Now what other pans could you say that about!?)
When it came time to upgrade from the Calphalon Commercial Nonstick set that I have at home, I considered All-Clad, Mauviel Professional and Demeyere Sirocco. I chose All-Clad because it is a good and inexpensive compared to other cookware in its class. I have this set along with a 12" Nonstick frypan. I also have 9 pieces of Le Creuset. All-Clad skillets and saucepans are awesome. If you are making an omlette, use an All-Clad nonstick frypan. All-Clad does heat up very fast; however, it cooks very evenly. Buy All-Clad and you will never have to upgrade. Almost every chef on TV uses All-Clad and Le Creuset. BTW: Zojirushi makes the best bread machines and rice cookers. Kitchen Aid and Cuisinart make the best of the other appliances. Wüsthof, Henckels, Global, Boker and Kyocera make really good knives. Use Ateco for piping bags and tips. Use Wilton for baking pans. I would also recommend two Silpats or Exopats and two half sheet pans if you like to make cookies.

Tip: If you should get something stuck to the stainless steel use a product called "Bar Keepers Friend" to clean it. Most supermarkets have it and Kitchen Etc. and Bed, Bath and Beyond carry it too. The container (like a Comet can) is gold with blue and white writing. All Clad recommends it for cleaning stainless steel and it works like a dream and is very inexpensive.
The bottom is ULTRA THICK and it is solid and heavy. Overall I consider I made a very good purchase.

Folks concerned about the heavyness of the Emeril pans should check them out in the store, and compare to the Calphalon Commercial products, which also carry a lifetime warranty and have excellent cooking characteristics. It seems a little pricey, but once you cook with it a while, you realize why it is so good. Metal handles help when doing oven pan roasting -- they don't melt like plastic ones do, but still stay cool on the stove top -- unlike some other brands metal handles. You get a good fond with it, so you have lots of good stuff left for making gravies and pan sauces with. No non-stick stuff to flake off. Metal handles are rivoted on, so they don't fall off like those cheap bolted on plastic ones (anything by Faberware) or the welded on metal ones. The only caution is don't cook things like eggs and pancakes in it -- they stick like crazy no matter how much oil you use..... buy a non-stick pan for that sort of stuff.
If you can swing it, I would advise anyone to invest in this pan. It will last a lifetime. But what if you can't spend big money on just one pan? The price is steep, and let's face it, All Clad is so well known that at this time you're paying a little something extra for the name--that's why I'm giving it 4 stars rather then 5. No pan really compares, but believe it or not, the Martha Stewart line at K-Mart is the second best alternative I know of. Although it's sometimes nice to have such a big pan (the pan is 12 inches across the top, but only about 8 or 9 inches across the bottom), I wish it were an inch narrower on the top since I have a relatively small stove. The pan is so wide that the only other pan that will fit on the back burner behind the skillet is a 1 or 2 quart saucepan, but not anything larger. I didn't think about this before I bought the pan, so I recommend that others get out a ruler before making a final decision. Also, the pan is quite heavy, which is nice for retaining heat, but for someone who's relatively small (like me) it can be difficult to lift. The heavy weight and single long (rather uncomfortable) handle to one side means that it takes a lot of strength to hold the pan up by one hand while using a spatula to move food from the skillet to a plate. I can't offer a very confident evaluation of the non-stick surface. It's my first real non-stick pan, and I haven't used metal utensils or put it in the dishwasher, but I like to use high heat to dry-fry zucchini and tofu, which the instructions say not to do unless you're boiling water in it. I find this to be quite limiting, but still I suppose I can't complain that the surface is starting to flake off and the middle of the pan is no longer non-stick after about a year. I do like that the pan can go in the oven, but unfortunately what I most often want to do is put in under the broiler for a minute, which isn't allowed. I agree with the other reviewer that says the script "Emeril" on the handle is tacky, and that a lid would be *very* useful. Overall, if you have a large enough stove and big enough muscles then it's a good pan that heats well and cleans up easily as long as you accept the limitations of nonstick and follow the instructions and only ever use medium heat.

Let me tell you, I'm glad I did! I was concerned from the picture that the outside surface was aluminum but, but it is actually a very nice brushed stainless steel. I also own some of the thick and heavy (and expensive) All-Clad stainless line, and while the sides of this big pot are thinner (making it lighter to handle), it is every bit the quality product you would expect. I will be making many more big meals in it for years to come!
Since another reviewer was so negative, I thought I would add my $.02 to the versions I did not purchase, since they are made in the same way as the 16 quart. I will admit that the description is somewhat misleading -- according to the All-Clad representative I emailed and to my observations of the pot, it is not "clad" all the way up the side but has the aluminum core only on the bottom (the same goes for the 20 and 24 quart versions). This is not part of the durable, timeless All-Clad stainless line; this doesn't discount it as a quality product, though. While this does have a "lip" where the clad bottom meets the stainless sides, it is on the outside of the pot, not the inside, so there is no danger of food getting caught or burning, as another reviewer warned. The inside is smooth from the bottom up. Is this the exact same quality as the All-Clad stainless line? No, but at about 1/3 the price of the stainless 12 quart stock pot, it is a great alternative and I wouldn't hesitate to buy another. It is an *extremely* heavy stock pot, far superior to other stock pots in this price range.

The exposed copper looks like more of a marketing thing than functional. How else can you show that there is copper, which serious cooks all "know" is best, without it? Other than that buy good pans when you are young, they'll last a lifetime.

Well, that much is partially true, but after I received this set for my birthday one year, I realized it was also the pots I was using. And that with the right equipment, cooking is truly a joy. I had an old set of hand-me-down Revereware. Competent enough, but their age was showing... and when it took me two hours to boil potatoes in the big pot (and they still didn't get completely done!) I was ready to throw them all out the window. Enter All Clad. All Clad is not nonstick, and you do have to take care of it (although I do put mine in the dishwasher) but the shine is enough that you won't have much trouble if you clean up (or at least soak) immediately. Don't let it sit -- I'm still scrubbing the remains of some soy sausages from my skillet! (Although perhaps I shouldn't have cooked those in the first place.) They have a solid aluminum core, which definitely makes them heat evenly. They also heat fast! As as example, when I first got my set, I whipped out the saute pan (by far my favorite piece of cookware) and added a little olive oil. I turned the stove on medium. I walked out of the room for about three minutes. When I came back in, I was going to add my chicken. The chicken sizzled... enough that I turned the heat down to medium low, even low. You don't need to cook above medium heat in these pans, because they retain heat so incredibly well. I literally had to relearn how to cook, because of how I'd gotten used to cooking in my old pans! As another example, when using one of my mom's All Clad pots while poaching fruit for a Christmas dessert, it retained heat so well that I kept accidentally turning her gas stove off, trying to get the heat low enough to keep it at a very bare simmer. I ended up settling for a rather bubbly simmer instead. I can't say enough good things about these pots. They're wonderful. In fact, I only have two complaints. One, the lids, which are also stainless steel, get very hot and since they're not steel, they're not see through, either, which I rather miss. And two, the fry pan, as others have mentioned, is so small as to be almost useless, but it is very good for cooking very small things, like a fried egg, or a few sausages for one. That said though, this is an excellent starter kit and gives you some real basics. If you're looking to just start out with a few good pieces, get it. You'll use the small 2-quart saucepan and 3-quart saute pan all the time! And then you'll add to it, as I plan to. Enjoying cooking again is definitely worth it.
The Good: The Okay: Clean up, of course, is a little trickier than with the traditional non-stick.If you get this set assuming it'll be an easy clean up job, you're diluding yourself - no matter what everyone else says. The Ugly:

The copper makes it the most even heating stock pot I have ever used. It holds heat well, so it doesn't loose heat as fast as an aluminum or aluminum core pot does -- which can have trouble when frying because the aluminum cools quickly. It works great for deep frying, oven roasting, making all types of soups, stews, stocks, etc. It is pricey, but really does work better for me than the less expensive aluminum core models. ... Though not classically tall and narrow, it simmers soups and stocks and accommodates enough ragù Bolognese to feed all the relatives. It's also ideal for braising on the stovetop or in the oven. Because the aluminum core extends up the sides, foods cook uniformly, even though the pot is 4-1/4 inches deep (11 inches in diameter). And because the interior is nonreactive, tomatoes and other acidic foods won't taste metallic. Its lid and stay-cool loop handles are riveted for strength and won't be harmed by an oven's highest heat. These pans are made very well, heat evenly, are very easy to clean and are designed to last. All Clad cookware is one of the most expensive lines around and it is worth every penny, it really is lifetime cookware (backed by a lifetime warranty). This pan is a definite must have. Very, very highly recommended! A+++!...
It seems that a stockpot is one kitchen item that never wears out, so I'd been making do with what we had. But, when I was fortunate enough to be gifted with this stockpot from All-Clad I couldn't believe the difference! It has a thick conductive base that spreads the heat evenly, not just where the burner might hit it. And, it has solid stainless steel walls that keep the heat in. There's also an All-Clad steamer insert available at a very low price. I don't have it yet, but the helpful reviews here have persuaded me that it would be a useful addition.
Also, if you should get something stuck to the stainless steel use a product called "Bar Keepers Friend" to clean it. Most supermarkets have it and Kitchen Etc. and Bed, Bath and Beyond carry it too. The container (like a Comet can) is gold with blue and white writing. All Clad recommends it for cleaning stainless steel and it works like a dream and is very inexpensive.
All-Clad is the heir apparent to the position of "creme de la creme" among cookware. The inner layer of metal is aluminum to evenly conduct heat throughout the pan. The cooking surface is stainless steel, the ideal surface because it is non-reactive, easy cleaning, and more durable than nonstick compounds. All Clad offers a variety of exterior finishes to suit your taste. Finally, this line is WELL BUILT. It will outlast anything else in the kitchen. This may be the most expensive cookware but it's also the best. For a person who doesn't have the physical strength to handle very heavy cookware, this may not be a good choice. For anyone else who is willing to pay for it, this is what you want to cook with.
