I have one of these machines and have had no problems with it. HOWEVER, I sent my 86 year old father one for his birthday (he had used a Panasonic for 11 years but it gave up the ghost! and he bakes bread like three times a week!). Anyway, he has done nothing but turn out "bricks" with this machine. Trying to help him over the phone has been frustrating, especially because we live 1,200 miles apart. Would I give this Zo bread machine as a gift again? NO! NO! NO! NO! NO!

I can't believe all the glowing reports I've read about the Zojirushi breadmaker model BBCC-V20. I have yet to make a good loaf of bread. Today I tried using an expensive mix from the store where we bought the machine. It is a flop! I do like using it for mixing and rising and then removing the dough to finish the bread outside the machine. My husband has talked with the sales rep, but her suggestions have not helped.

Just received my Zo X20 after using a West Bend bread machine (it died from overuse) for 5 years. I am delighted with the horizontal loaves and beautiful texture. The bread pan releases the loaf easily and I can't imagine having trouble with warping as the pan is quite substantial. I would like more recipes in the instruction manual but should be able to find some online. I'm surprised some people have had a bad experience with the Zo as my family and I have been very pleased.

If you have reached this page looking for a reference to the Zojirushi, here is my delima: I purchased this machine and wish I hadn't.
It looks and seems like it would be a good purchase, but when I got it home and tried baking several loaves, they were hard as a rock and wouldn't release from the pan. I called the company and they sent me new blades. That helped with turning the loaves out, but they were not eatable. The crust was very hard and the bread was so terrible, I gave it to the birds. I kept calling the company and they finally said to contact the sender and get my money back....thank goodness, I returned it and by recommendation of one of the South Beach forums, was advised to purchase the Breadman Ultimate. I hope this saves whoever reads this some time and aggrivation! Happy Shopping!

The journey to a perfect piece of toast begins with a ZO cx20. Out of the box, with recipes from the manual, one can be an instant able baker. The ZO turns out bread with a wonderful texture, nicely crusted outside with a tender interior. Perfect with a dab of butter when hot out of the loaf pan; great toasted with jam or cinnamon sugar the next morning. Not being of the baker persuasion, I purchased the Zo - after much web research - following the traumatic closing of our neighborhood Jewish bakery. I have experimented conservatively beyond the supplied recipes and have not been disappointed. The ZO's cost may seem steep to some at first, but in our house we are now eating better, but less, bread. Going from three modest to two large loaves a week, I figure the break-even (3x$2.50 purchase v. 2x$1.25 ingredients) will be less than a year. In about 10 minutes from this writing we will be enjoying just-baked slabs of white/wheat bread with good strong coffee. The prefect way to start a Saturday morning! ... Read more

Zojirushi Home Bakery looks like an ordinary bread machine, but its additional features are a welcome surprise. It not only makes French, sandwich, basic, wheat, homemade, and other bread types, but it also makes jams, cakes, and pizza dough. Using the technology found in most bread machines--dual kneading blades, automatic timer, crust control, and auto shutoff, the Home Bakery heats and mixes jam ingredients, leaving refrigeration as the final step. The cake setting operates similarly to the bread process, but the machine adjusts its temperature to retain the moisture of cakes, such as German chocolate or butter.

Aside from the plethora of uses, this machine offers many important technical features. After major research of available breadmakers, I chose the Zo a couple of years ago and have never been disappointed. It was my first breadmaker. My final choice was based on features, reviews, and support from both manufacturer and the breadmachine community (web forums, etc.).

In my mind the important features are the size and shape of the loaf, the ability of the machine to produce a properly kneaded loaf, the flexibility to create your own bread making process flow (knead, rise, bake, etc.), and the durability to make any kind of bread (white or whole multi grain). The Zo was the only one that combined all of these in one machine in a way that suited my needs.

The folks who have had problems with this machine either received a bad machine (and should return it) or can't follow directions. There is no margin for error when using a breadmachine. You must follow the recipe EXACTLY (unless you are at higher elevations).

If this is your first breadmachine I also highly recommend the books Bread Machine Magic and More Bread Machine Magic. These are well written books with a nice variety of recipes that always worked the first time for me. The machine comes with a good manual with a few recipes that are also good but is a little short on bread making theory (which is nice to have when things go wrong).

Is it perfect? Nearly, but my wish list includes more flexibility with some of the settings (sometimes there is no need for the preheat cycle) and more programs (create your own bradmaking process). The window leaves a lot to be desired as well, but that applies to almost all of the machines. Don't expect those little windows to work like they do in a regular oven!

At our house this machine gets used not only to make bread, but for bread dough for baking in the oven and fresh made pizza dough (one of life's important little treats).

All of our recipes are made from scratch, but in the beginning I also used mixes from King Arthur Flour---highly recommended! The premade mixes are great in the beginning of your breadmachine adventures as they eliminate one source of error (measuring ingredients).

All things considered, when the time comes, my next machine will be a Zo 20 as well.

My mother taught me to make homemade bread as a child and I have been making it ever since, but a breadmaker certainly is easier. I've had two, a Magic Chef which stopped working after I accidentally left the pan soaking overnight (the mechanism that turns the paddle won't budge), and a Zojirushi, which I now use every week, and don't leave soaking in the sink. (I chose the Zojirushi because it had good reviews and because I have their rice steamer and love it.)

Features I like: Double paddles. This is absolutely the way to go if you want a horizontal loaf, otherwise some of the flour can get stuck in a corner and not get mixed up. You can solve this by scraping the sides during mixing, but having to do that sort of defeats the purpose of a breadmaker.
Another thing I like is the "Homemade" setting, which allows you to customize the cycle times. The default is for French Bread, which, incidentally, comes out very well. One caution, their recipe calls for 3 teaspoons of yeast, which caused it to overrise. I now use 2 teaspoons and get great results. Also, the "default" setting for Homemade/French Bread wasn't set correctly on mine at first, but the instruction manual listed the correct settings and it was easy to reprogram. Good instruction manual, by the way.
One other nice feature is the preheat cycle. The trickiest part with bread machines is getting the right amount of yeast for the machine's timed rise cycles. Cold liqueds slow down yeast action, warm ones speed it up. I've found that the preheat cycle helps give more uniform results. (Age and amount of yeast affects it too, but the breadmachine can't compensate for that.)
Most of the other features, like jam and cake settings, I never use.

Disappointments: The window gets steamed up during processing and opening the cover causes it to pause so you can't really watch what it is doing. Also, the delay timer only works with the "Basic" bread setting. I wanted to set it to have French bread ready when I came home, and couldn't.

The thing I use most: The "Dough" setting. I prefer to let the breadmaker mix everything up for me and do all the initial risings, and then throw it in a pan for the last rising and bake it myself. This way the paddles don't get baked into the bottom of the loaf, and I don't have to worry about over or under rising. Honestly, it is the yeast that causes most problems people have with breadmakers. Old yeast, or not enough, and your bread comes out like a brick. Too much and it either overrises and sticks to the top, as it did the first time I made French bread with 3 tsp. of yeast, or it caves in during baking and you have a U-shaped top. (If it rises but the top is flat, rather than rounded, it's not the yeast. You probably have too much liqued or too little flour - adjust accordingly.)

I don't use mixes, so I can't comment on that, but I have an electric wheat grinder and often use fresh ground whole wheat (which they don't recommend), and this breadmachine handles it beautifully. I like being able to use all healthy ingredients, like whole wheat instead of white flour, and honey instead of refined sugar. In this case though it does need extra yeast, since the whole wheat flour is heavier.

I recommended this breadmaker to both my step-mother and my best friend, so I guess that's a pretty high recommendation. (My mother still does it by hand. Maybe someday I'll get her to try a machine.)

I have owned one other bread machine before this one -- another Zojirushi. It lasted for 10 years, and I used it regularly, so if that machine is any indication Zojirushi produces high-quality bread machines. Despite that, if I were to use the Amazon star system, I would have given it a four. The old machine produced upright loaves, and when using the "bake" option I never was able to make perfect loaves. Usually the loaves would be light and airy on the top, and a bit too dense on the bottom. Therefore, I turned to making almost exclusively homemade loaves using the dough option.
When my bread machine died a couple of months ago my wife and tried to live without it, but we realized that not only did we miss having a constant supply of fresh bread that is always better than even our best local bakeries, a bread machine is very cost effective. A good loaf of bread in Hawaii, say a French country loaf, is $3-4. I can make that in my bread machine for about 50 cents. Granted, I have the original expense for the bread machine, but considering that I make so many hand-shaped loaves that I'll easily make up the original investment.
Anyway, all of this made us decide to buy a new machine, and naturally Zojirushi was our first choice. I looked around on the net at various reviews and concluded that this machine was the best value -- it appears that they're phasing it out, so it's price has dropped recently. I got an exceptionally good deal from Amazon (which included free Fedex to Hawaii, amazingly enough, and a $20 gift certificate), and so we were back in the world of bread machines. I have now had it for about one month so I think I can speak with some authority on it. First of all, it makes normal horizontal loaves, and as a result the consistancy of bread baked in the machine is just fine. I will be using the machine to make basic white bread from this point forward. As for the dough feature, I have had no problems, and so have been able to continue making my handshaped loaves as before.
In sum, this bread machine is a good value, and does what it promises. If it proves to be as durable as my previous Zojirushi, all the better. I highly recommend it.

THIS BREAD MAKER IS THE WORST AND ONLY ONE I HAVE OWNED THAT WILL NOT MIX BREAD EVENLY.
THE DOUBLE PADDLES PUT DISAPPORTIONED AMOUNTS OF FLOOR AND YEAST INTO BOTHSIDES OF THE PAND RESULTING IN A TORPEADO SHAPED LOAF OF BREAD. HIGH SIDE TO LOW SIDE, NOT EVEN ON TOP

5-0 out of 5 stars Zojirushi is a Great item, easy to use, and easy to clean!
I had an older machine that was a present, and I never liked it, so when it died I was actually pleased. I did research before buying a replacement, looking for a machine that was easy to use, restartable (my key complaint about my old one - if the power flickered or you pushed the wrong buttons, you had to unplug it to reset). The controls on the Zojirushi are easy to use and a key feature is that it remembers the last bread choice you made! I have heard complaints that the bread does not come out, and I had this problem the first time, but after I figured out to remove the pan from the machine and let it sit at room temperature for a few minutes, I have had no problems. Also, it is easy to clean, since you can reach down into it properly!

One of my favorite "features" of this machine is the traditional style of the loaf - I don't really care for the tall skinny loaves many machines produce. I watched the video (Excellent idea!) and have tried cake, breads, and jam. I have also been experimenting with modified recipes with good results.

If I had one suggestion it would be: tell me when the machine will request additives such as fruits, so I don't need to sit and wait for the beep. Other than that, a truly fantastic machine! ... Read more
