When I bought this knife, I was impressed by the way that the extra heft of the forged blade cut through crust without complaint. I also bought a plastic "bread keeper" (which works very well), and it included a plastic slicing guide. I noticed that the Calphalon bread knife was able to produce consistant, thin sandwich slices with less effort than the lighter stamped knives. This Calphalon Hard-Anodized set is a perfect starter set and is a good value. I use my 2-1/2-quart saucepan more than any other pan. (Later, you may wish to add the Calphalon double boiler insert and/or universal steamer insert for use in this pan.) The 10-inch omelet/fry pan is a good size for two-to-three servings of eggs. The 8-quart stockpot is great for cooking pasta (and you will want to buy the Calphalon 8-quart pasta insert), boiling corn, simmering stock, or making soup. The 4-quart chef's pan with lid (which I do not use that often) would make a good casserole pan. This set is a good way to begin your own Calphalon collection or to give as a gift.
First, it is important to note that hard anodized cookware is NOT a coating...it is an intregal part of the cooking surface...hence it does not wear off. In terms of conductivity; which is the degree to which heat is transferred through the cooking surface, copper traditionally ranks the best. Copper is followed by aluminum, stainless steel and cast-iron. If looks are an important consideration in your cookware choice, then stainless steel with a layering of copper might be your best bet. Cast-Iron heats slowly but retains it's heat very well. It is excellent for casseroles and the like. Copper is great too, but it is very, very expensive and has the drawback of reacting with acidic-based sauces. Aluminum has this same problem. However, hard-anodized aluminum removes this roadblock to cookware nirvana. Which makes Calphalon such an important tool for your kitchen. I have 14 separate pieces of Calphalon in my collection. So I guess I "walk the walk"....As much as I respect All-Clad and Le Creuset; Calphalon Professional and Calphalon Commercial are the best, most versatile sets of cookware, in my opinion. Much for the same reason most professional cooks use gas ranges as opposed to electric ranges, would be the main argument as to why Calphalon is such a superior product over less expensive variants. It is important to have direct heat control to turn out exceptionally finished product on a consistent basis. Obviously, the expense of a set of cookware reflects to a degree the ability maintain control over heat....On the other hand, it is still very value-priced, compared to some other well known and more expensive competitors. I think the main reason for this is simply that even cookware follows "asthetic trends" and this might be one small area where Calphalon lags behind. Nothing beats the beauty of highly polished stainless steel cookware hanging from your kitchen ceilings... except maybe copper! But if you are more interested in cooking performance as opposed to how the cookware looks, you would be hard pressed to find a better value. ...just bear in mind that Calphalon is "stick-resistant" as opposed to "non-stick". This is actually good. And necessary. This is because it is important for foods to brown properly. Not to "seal in the juices", so to speak. That is a misnomer. Juices are not "sealed in" as a result of browning. What browning serves to do, besides giving a great appearance to the food, is to carmelize the base. This, in turn, enriches the taste of the finished product. And it would stand to mean that any deglazing that's done for sauces afterwards would also impart an added richness of flavor. Both Calphlon Commercial and Professional Cookware do this particularly well. Much as there are many sound reasons as to why an oven chicken roaster is shaped oval or why a good braising pan does not have gently sloping sides; it is also important to note that with whatever you decide to roll into your kitchen with, it should most importantly reflect what you are trying to accomplish once you walk in there. The thick, heavy aluminum results in great heat retention and excellent conductivity, which is crucial for properly searing meats and seafood and sautéing vegetables without overcooking. I've lived in a city environment for the past 10 years where gas stoves are hard to come by, and the heat retention and conductivity have been tremendously valuable when bound to electric stoves. Although we don't cook with them every day, they've taken a beating and still perform as well as ever. The "stick-resistant" hard-anodized material is an excellent balance in terms of cleaning ease and performance: a brief soak and a Scotch pad will clean them off, but you can still get a good sear that isn't possible with most non-stick cookware. The only concerns are very minor: 1) The aluminum interior and exterior have stained a bit after prolonged use. A minor concern, as it hasn't affected performance at all. 2) As with all hard-anodized cookware, it is difficult to see the actual color of translucent sauces, stocks, etc. This is admittedly a minor annoyance, but one that becomes more noticeable with experience. Could be solved by buying a stainless-steel ladle or spooning some of the liquid into a white bowl. I would still recommend a nonstick pan (such as Calphalon's excellent 10" Commercial Non-Stick omelette pan) for omelettes, eggs, or other low-temperature, delicate foods that don't need a hot sear, but certainly not a whole set; nonstick surfaces deteriorate and have to be treated carefully in terms of utensils, temperature, etc. The pans in this line are extremely durable, can be used for nearly anything, and should last a lifetime. I've recently started moving to All-Clad to address issue 2) above, but only because the roommate took his pans with him. ... this set is a steal.
(1) Read all the other reviews and you will see that almost all of them are five-star. Yes, the set _is_ that good and there is no need for me to repeat what others have said, perhaps better than I might have been able to. (2) It's not just cookware, it may turn out to be an investment. About a year and a half ago, I bought the Calphalon Commercial Hard-Anodized Limited Edition 5-Piece Super-Sized Set, which has been discontinued. At the time, the price was one hundred dollars. As of the time of this writing, an Amazon merchant is offering the same set for three and a half times the price I paid. (3) All the pieces in _this_ set are made in Toledo, Ohio, USA, and the quality is first-rate. The same cannot be said for some of the other pieces of Calphalon hard-anodized cookware made in China. (4) At the time of this writing, there are exactly 59 entries for the Amazon product search for "Calphalon hard anodized". This is the only set being sold. All the others have been discontinued. Of the individual pieces listed separately, almost all have been discontinued and few have third-party sellers. (5) So why buy it NOW? Because when it is gone, that's it. There wil be no more. Calphalon is already switching to its new Calphalon One line of semi-nonstick cookware to mixed reviews...and at a very much higher price. At one hundred sixty five dollars for this set, reduced further by a twenty five dollar Amazon promotion, it is almost as low as I have ever seen. Happy cooking!!
Some reviewers contend that you can't wash these pots in the dishwasher, you can't use brillo, or that the anodized coating will wear off, or that the handles get hot. Yep, all true, But, errr, so what? I have purchased Calphalon for my family many times, and most recently for my recently wedded son in law and his bride. What I figure about Calphalon is this: You got two choices with it: A. You can use brillo, toss it in the dishwasher and don't worry about it, OR B. Take very good care of it, meaning don't put it in the dishwasher and don't use brillo. Now in comparison, All Clad Stainless steel can be put in the dishwasher, but you're now using a stainless steel pot around an aluminum core, and I think Calphalon on a gas burner is the cat's meow as far as I'm concerned cooking. Copper pots are pretty, super expensive, but they are a REAL pain to keep pretty. (My wife snorts reading this...you DON'T know, she says. I guess she does clean our copper pots and I don't.) What I like about Calphalon is that you CAN toss them in the dishwasher over and over. (By the way it's the harsh dishwasher detergent that causes the problem of metal discoloration.) And I do use brillo. YES, eventually some of the anodized coating wears off (on the inside) and this way of cleaning them results in metal discolorations over a period of months or years. So what, I ask? They're just POTS, for gosh sakes. We don't need to mystify them. I still use the original pots I bought 20 years ago, and like the ONE RING, I don't think you can destroy these pots. I've dropped them on concrete floors, left them on burners and in the oven. And yes the handles get a bit hot. Use a hot pad. With metal handles you can toss the whole thing in the oven at any time. And I like the metal lids over the glass. They don't break. I can take off a lid to look inside the pot if I need to. I'm not trying to be smart alecky, it just seems to me that if you want eternal pots and don't EXPECT them to look brand new ten years down the road, you can clean these pots anyway you want to and they'll remain completely functional for YOUR lifetime, at least. If you're THAT picky about looks, you can get copper and work yourself to death using copper polisher, and alternatively brillo will still scratch All Clad in stainless steel (even though you CAN toss those in the dishwasher without discoloring the finish). So since no pots are PERFECT, then the PERFECT, but expensive solution will be to buy pretty copper pots to hang up and display above your stove (but don't actually use THEM), and buy the Calphalon to use, take shortcuts, be lazy, abuse the heck out of them and store them in the cabinet... But I just buy the Calphalon (and a couple of copper pots and cast iron items for other things), and the copper pots aren't looking so swift either cause we (errr...she) got tired or cleaning them meticulously years ago. And they are tedious to clean: They are harder to clean than any cast-iron or stainless steel pan. Baking seems actually to forge a new composite material from the metal and the dough. The folds and the corners are natural traps for debris and the worst parts to scrub, but even the flat parts cling to bread. These are expensive pans and require babying. They have not worked for me, despite my taking extraordinary care to protect their "non-stick" surface and making numerous trials of using different lubricants and oven settings.
Although you could, I don't use my bakeware for meats, I prefer to use bakeware for baking and stainless (All Clad) or stoneware (Le Creuset Poterie) for meats and meatloaf. One note: you may want to check on your baked goods a couple of minutes early. I have noticed that everything is done a little quicker in pans with a dark finish. Many newer recipes will indicate the timing for dark finish bakeware. These pans are also a breeze to clean, just a little soap and water and you are done.

This pan heats up very quickly! Probably its best feature. It's very quick and sautes beautifully. Cleaning is a bit more involved than with no-stick. On the downside: 1) The short handle is too hot to touch under most circumstances; this is annoying. The long handle, however, stays cool enough if you don't grip it too closely to the pan. 2) The lid, which is heavy, needs a larger grip. You can't lift this with a finger or two -- too heavy -- so you need more fingers than can comfortably fit under the handle lid. Overall, if you have a ceramic (or perhaps gas) top that can benefit from a larger pan's heating surface, and don't mind occasionally reaching for handle covers/gloves, this is recommended. Having used a Calphalon Commercial Nonstick skillet for 7 or 8 years, I know how they wear. Mine held up to weekly use for all those years. Eventually, the surface deteriorated to the point where it was more half-stick than non-stick, and I was afraid that the coating was coming off in my food. The handles are securely bolted to the pan and will never move or get hot. Calphalon's Commercial Nonstick's one bad characteristic is its external surface. The outside of these pans is a peculiar material that I have never seen elsewhere. With use, the flame from a gas stove gives it a glassy, burnt appearance. I don't know if it's due to direct flame or just heat, so I don't know what an electric burner would do. But this unsightly finish that eventually covers the center bottom of the pan cannot be scrubbed off. So you're stuck with it. It doesn't affect the pan's performance, however. Like all nonstick pans, these skillets accumulate a sticky film around the inside rim that eventually becomes a nasty permanent fixture. If you scrub the sticky stuff with Soft Scrub periodically, it will banish the build-up without damaging the pan's nonstick surface. I really only wanted one pan: the 10-inch. This set would be a great deal for only one pan, but now I have two. I wondered what I would do with an 8-inch omelet pan. I don't eat omelets. But I have found that the 8-inch pan is useful when cooking for one person. It holds one serving nicely, and is very quick to clean up. So I'm extremely happy with my purchase. Nonstick doesn't last forever, but Calphalon Commercial Nonstick wears as well as I could expect. And this is an opportunity to get top notch pans for less money than flimsy ones. Snatch these up before they're gone!
I am actually re-learning some of my techniques for using these new pans. I also purchased the commercial non-stick 12-inch pan as well. For eggs and delicate items that would be torn by using a non-non-stick pan, this is the best I have used. For beef and pork and other meats, I still use my Commercial anodized 12 inch pan - it gives a great crust to the meats, and it is easy to clean. And I got it for a super cheap $20. And rest assured, these are the real Calphalon - from Ohio.
The quality of the pans is not bad either. Finish is not to the caliber of higher-priced Calphalon, but very good nonetheless. You still get a nice hefty pan with the easy-to-clean hard anodized exterior and stay-cool handles. The internal rivits are a little rough and eggs like to stick to them, but for the price you can't complain. I've had these pans for just 3 weeks so we'll see how the non-stick holds up. When I received them, the smaller pan had been mashed into the larger one, leaving some blue ink from the corrugated board and some abrasion of the nonstick on the latter. While the mark is still visible, it doesn't seem to affect performance. Responding to the comment from Rancho Cucamonga, CA, know that cheap non-stick is in fact slipperier than quality coatings. I believe Alton Brown in an egg episode on FoodTV even recommended using a cheap frying pan for this very reason.
