There are lots of fancy cookware materials out there but cast iron still trumps them all with its even heating, heat retention, price, and duration. Always a greasy stove top mess to clean up after using this thing, even with a splatter screen... it's not really big enough to fry a big batch either... it comes with a nice thermometer but it's clip doesn't fit the edge of the pot.. it seems to fit best in the hole in the small open handle opposite the big handle.. Cast iron is one of those materials true kitchen aficionados love. It gets better with age and seasoning, won't warp or chip, and keeps food warmer longer. Put your seafood, veggies, hushpuppies, or beignets (French doughnuts--they're heavenly) in the fry basket, then lower into the fry pot. Just remember that cast iron is very heavy--this pot weighs 7 pounds--which is why there's a looped handle on the opposite side to help you lift the pot (use a hot pad). The pot has two pour spouts, and the kit includes a 5-inch thermometer that goes up to 400 degrees F. In general, you'll want to hand wash the pot with just hot water. However, prior to first use and occasionally thereafter, you should season it by washing it with a little soap, oiling it inside and out, and cooking it in the oven for an hour. The finish will soon turn black--the sign of a well-seasoned cast-iron pot. --Doree Armstrong

A solid product & an excellent value. I was using an all clad pan for deep frying until I got the lodge pan and the basket. There's a huge improvement in the quality of fries & fritters I make now. The cast iron pan keeps the oil at a more constant temperature, the heating is uniform and the frying is even. I highly recommend this product. For larger families, the size may be a problem as others have mentioned.
This one also comes with the thermometer even though the product description does not mention it.

5-0 out of 5 stars Great fryer if you use it correctly
For those chefs among us who either can't afford to have a built-in countertop deep-fryer, or for whom it would be impractical, the Lodge cast-iron deep fryer is a worthy and effective substitute. This is a great device, provided you use it properly. There are three essential rules to follow to achieve successful deep-frying. Though they are not complex, they are incredibly important, and failure to follow them will lead to less than satisfactory results:

1. USE THE RIGHT OIL - For deep-frying, I prefer canola oil, which has a lower fat content and higher burn point than other oils, although some chefs sometimes use peanut or safflower. Leave at least three inches of room at the top when filling the pot with oil, because it will foam up when you drop food in to fry.

2. FRY AT THE RIGHT TEMPERATURE - This means using a thermometer, which Lodge has conveniently included with the frying kit. You cannot fry successfully without a thermometer. It is obviously impossible to know what the oil temperature is without one, and for great deep-frying results, you want the oil to be in the 350-375 F range.

3. GET THE BATTER RIGHT - If you're making fish & chips, fritters or other goodies that involve batters, it becomes key to make the batter properly - not too watery, but not too thick, either. This sometimes involves some trial and error, but once you get the hang of it, you'll be able make fish & chips as good as in the restaurants.

This pot is another quality Lodge product and works well if it is seasoned correctly. It is easy to clean and works as heavy cast iron should. It is a bit small and would get 5 stars if it were 3.5 quarts. Well-worth the money, however and useful.

2-0 out of 5 stars Takes forever to heat up. Heavy, hard to clean & store.
I didn't get much enjoyment out of this kit despite its pretty good quality. Because it's so heavy, it maintains temperature well (very important for frying), but wow it takes a really long time to heat up. And if you put in a frying thermometer (very important), it gets in the way of the frying basket. And if you want to store the oil to fry more a bit later, there's no cover for storing it right in the pot.

In addition, you may be concerned about the safety issues about frying in an open-topped pot with no thermostat -- in which case, get an electric fryer.

Lodge cast iron products are wonderful, but this just isn't the best way to handle the relatively touchy task of deep frying. If you want to do a lot of frying, seriously consider an electric fryer instead of this kit. And if you want to do just a little, use a regular heavy pan or a wok, with a strainer-on-a-handle tool to pull things out and drain them.

In addition I should note that the "Good Eats" program on the Food Network (a cable television network) specifically recommends against frying in cast iron -- they say it tends to make the oil go bad sooner.

4-0 out of 5 stars Nice but too small to feed a family on fried fish.
This pan is great if you are single (or maybe a couple) but its too small for a family. (Get either the chicken fryer or the combo pan (my personal favorite) if you feed more people.

On the plus side, its nice and deep. Don't need to fill it to the top, as the food will displace some of the oil and yet it won't splatter as much as a shallower pan. So for a small fry job you'll save a lot of oil.

Cast iron is the material of choice for fat frying. Holds the heat, cleans easily, etc. The basket is handy as is the thermometer. As has been noted you can do the food in batches, keeping it warm in the oven until its all done. But you'll lose some of the cripness while you are waiting.

And you could use it as a plain old sauce pan. This is a handy size for heating soup etc. (No lid though, but I bet a good hardware store would carry a glass one that will fit. You might even find one elsewhere on this site.) ... Read more

I was looking into cast iron for a long time, and couldn't get past the prices. I had been learning the steady lesson in cookware that "you get what you pay for." I bought cheap pans, and threw them out after a year. So I was wary about the prices of Lodge cookware. But after listening to Alton Brown expound upon their greatness, and watching the myriad things he was able to do with his skillet, I decided to take the plunge. I wanted a skillet and a Dutch oven. I found this set, and said "perfect!" I get 2 skillets, the dutch oven (with the lid that fits one of the skillets too), and a griddle, for the price of a skillet and a dutch oven.
The only piece in this set I could do without is the griddle. I own a larger griddle/grill that I use far more frequently because of its more convenient size, but even so, I don't feel cheated because it was basically like a free gift at this price. And I use both skillets and the dutch oven so frequently, the meager investment isn't even a consideration.
About the cookware itself: yes, cast iron has a small upkeep. You can't clean it like you clean every other pan. You have to coat it with oil after EVERY cleaning. You MUST season the pans. BUT, this stuff is impossible to stick to after a cure has been worked in. Also, it's bulletproof. No more worrying about using those metal tongs in your teflon pan...you can scrape and jab and cut and bang, and that cure stays put. The only thing you can't do is soap it. But nothing sticks to it, so cleanup isn't really that big an issue.
PLUS it imparts natural iron to foods that are cooked in it.
So to sum up: affordable, needs maintenance, bulletproof, naturally non-stick, and makes foods a little more nutritious. What are you waiting for??

Down south, we know, and have known for years... nothing cooks as well, or cleans as easily, as well seasoned cast iron. Like so many good things of the past, all the small foundries have been forced by unremitting government regulation to cease production. Wagner, Dixie, Griswold and all the furnaces of Rome, Georgia, Birmingham, Alabama, and the steel corridor of the north now burn cold. Fear not, for one bright light burns on. Lodge is there, blazing the way for a new generation of cooks to experience the glory of cast iron. It matter not one whit, if you are competing with the Iron Chef or the talented Boy Scout next door, you will improve your chances with cast iron... and nobody pouring steel in America today does cookware like Lodge of Tennessee... America come home, out of the heartland greatness still runs, and as is so often the case, Tennessee points the way. Try it and establish a base line by which all other cooking will be measured... My brother gave us this for Christmas. At first, I was pretty disappointed if only because a pair would make more sense for a family of four. This pan is not very large and at this price, why not splurge? However, this is a fantastic pan for pancakes. It heats quickly, it makes one fast, fluffy, huge pancake at a time, it's a breeze to clean, and it's sort of funny! Also the potholder is useful when I use my "real" pans.

I've used this twice now and have been impressed....it's just like the restaurants.
I always make sure the vegetables are not fully cooked because they will cook in the fajita skillet, since it gets so hot.

I love cooking with cast iron. These fajita sets are so versatile. We do our steaks on them. Heat the skillets on the grill first, get them RED-HOT!.... then drop your steaks on them. Turn once. And serve them to guests SIZZLIN'... Your guests will be impressed... and of course they're good for fajitas, too. Ever tried drop biscuits on them? Drop some butter, preheat the skillets, then drop the biscuitdough on.
The secret to castiron cooking is to PRE-HEAT IT!!! and when you're through, wash up, turn upside down in heated oven to dry. Protects your seasoning of skillets.
