Oh potatoes!
You've GOT to try mashed potatoes done with a food mill. They are superb!

As food mills go, this is a good one. It's really sturdy and comes apart easily for cleaning. I like this one better than some of the more expensive brands, (Rosle). It's also a little more solid than some of the cheaper brands. In all, it's a pretty good value. Hey, anything that's dishwasher safe is okay by me! I also love the fact that this comes with three disks, I've used all of them.

I use my food mill for a variety of tasks, as you probably already guessed, mashed potatoes are my favorite.

Great tool
I bought this tool because I read that it was the absolute best way to make mashed potatoes, and indeed it is. Last night I saw this particular mill recommended on the "Cook's Illustrated" television show. They liked it because it's very sturdy, the discs are changeable, and, unlike an electric version they tried, the motion is reversable. My only complaint about this product is the lack of instruction that comes with it. While it didn't take me too long to figure out how to put it together, it wasn't until I saw them use it on t.v. last night that I realized that you're supposed to reverse the motion if food gets stuck. Until I saw that, I had been having a terrible time with this product and was about to send it back. Now it works like a dream and we are in mashed potato heaven!

My German Childhood Remembered - Great Mashed Potatoes
I had to chuckle when I received the food mill because I remembered the comment I had read on not being able to put it together, and I felt like a complete kitchen pro (I am definitely not) putting this food mill together in 5 seconds flat.
I wanted to make mashed potatoes for Sunday dinner, and boy, does this take the work out of making mashed potatoes. Well, you still have to peel the potatoes (won't do that for you regrettably, but hey, that's what kids/loving spouses are for, right?). But the actual mashing part was done in under two minutes, and the potatoes were SO good! I love this food mill and will have to try out other foods.
My only comment would be to concur on the rather skimpy instruction booklet.

An Underrated Tool
I'm surprised that more people don't talk about food mills. I got this one for Christmas. I don't have a food processor and I want to be able to make thick pureed bean soups, homemade applesauce and the like. I can't get enough of this food mill! The three blades are more than adequate for everything I have done so far. I may never buy applesauce or tomato sauce again. I'm looking forward to trying it for mashed potatoes and more soups. The only drawback is that the assembly instructions aren't really clear. I was able to get the food mill put together without much trouble, but clear instructions would have been nice. There are also a few recipes enclosed that I have tried with great success.

We replaced our aluminum food mill with this stainless steel one and really like it. We've canned tomato juice and applesauce using this food mill and it did a great job of preventing the seeds from getting through. What a pleasant surprise.........
If you are anything like me you have probably bought your share of gadgets around the house that seemed like a 'must have' when you bought it ... then seemed like an 'i'ts Ok' when you firts used it and then into the junk drawer ... never to be ssen again until you move.

Well, if you like mashed potatoes then this is a MUST HAVE little and trust me you'lll use it over and over. (Darned if I know why they call it a ricer since it has diddly to do with rice. I mean we alll KNOW that potatoes hate rice anyway)

For us semi professional cooks you know that potatoes when boiled in their skins not only maintain their nutrients, but also, most importantly the flavour! In the past that has meant peeling hot potatoes which was never much fun. With this machine however you just dump the potato into the bowl and squeeze, voila ..... the potato comes out the bottom and the skin stays in the bowl ... I don't know how to explain it but the closest I'll come to is to say it's MAGIC.

You can usually do like 3 potatoes and then just pop open the ricer, scrape away the boiled potato skin and continue ...

no fuss no musss no burned hands no cutting and mashing just perfect fresh flavourfull mashed potatoes to add butter, garlic, cheeese or whatever else turns you on ...

Skip peeling the potatoes!
I too learned about potato ricers from Cook's Illustrated. They're right -when you use a ricer, mashed potatoes are fluffier and taste much better. (It helps to follow their rule of adding melted butter first, then mix, then add hot milk or cream, then mix again). But the best thing about the potato ricer is that you can boil the potatoes in the skins, plop them into the ricer, and voila! Mashed potatoes with no peeling. Even better yet is that potatoes cooked in their skin retain more flavor than peeled potatoes. Of course, a few bits of peel might escape through the holes and end up in the mashed potatoes -but those are easily picked out -or left in unnoticed. I've even done this for fancy dinner parties for 20 people -once you have the hang of it (I use a fork to pick out the peels in one large piece between potatoes), it takes a couple of minutes to rice a pot full of potatoes. It's so easy that I'm willing to make mashed potatoes on a busy weeknight when I would never think of making mashed potatoes if they required peeling. I can't vouch for any other brand of ricer. Mine is the cuisipro and I'm delighted with how well made it is. Clean up is a snap (in the dishwasher or just rinse) and the construction is excellent -heavy duty stainless steel that is quite rigid and still looks brand new after a year of heavy use. I'm about to order a couple of these as christmas presents for friends who are serious cooks who seriously envy my potato ricer :)

this is it...if you know what a ricer will do for potatoes and you learn how to use it, this is the one your looking for. The Williams-Sonoma is plastic, it flexs and it does sloppy work. The Cuispro straddles a bowl, is rock solid and drops in the dishwasher for cleaning. buy it.

A Ricer is Nicer
Yep - a ricer is a whole lot nicer--and faster--than a potato masher. I've been living in the dark ages, having never even heard of one of these contraptions until I read about it in Cook's Illustrated, and I will be forever grateful to them, and Cuisipro, for introducing me to a really great piece of equipment. It's solidly built but not overly heavy, has a long enough handle to make quick and easy work of mashed potatoes, spatzle and other "squeezing" chores, and comes with three disks. It also fits perfectly on both large and small pans. Whether you're a beginning cook or a seasoned pro, the Cuisipro is a great addition to any kitchen.

BEWARE!!!
I ordered one of these with great anticipation but when I got the ricer it seemed fine then when I open and closed it a few more times it started binding badly. I returned it for an exchange and when it arrived it too was binding after open and closing it. I notified Amazon customer service that they may have a bad inventory of ricers but they responded that I should contact the manufactuer....I returned it and I guess I'll buy it somewhere else. Cuisipro is a very good manufacturer and I'm sure Amazon just got a bad shipment of ricers. I bought these to replace some old tin cups. They are great. The oval shape makes it easier to get it into a jar. And they are nice and heavy duty.

Great, especially with the standard sizes.
These have nice highly-polished scoops that clean easily. The symmetric oval shape is the best (from experience). The shape easily fits into spice jars, etc. The shape also allows you to eyeball say 2/3 of a scoop if you need to without dirtying up another spoon.

On the down side, a minor engineering mistake in handle length prevents the spoons from nesting flat when held by the ring (the holes don't line up). Be sure to get the standard size set, too. Also, beware. The stainless steel is not as strong as you'd think. I bent my 1T spoon after a few uses scooping out some brown sugar.

Overall, it's the only company with the shape I like and that offers a full range of sizes.

Ever try to balance a teapoon full of a dry ingredient while trying to mix or do another task with the other hand? Ooops, there goes the spoon full.

These nifty spoons have a bent handle so that the spoon can rest on the counter without tipping while you do whatever needs to be done. Why didn't someone think of this sooner?

JUST MY CUP OF.........
These handy measuring cups deserve a better name than "Odd Size," although that is indeed what they are. A better name is deserved because they're time saving and beautifully crafted.

The cups are 3/4, 1 1/2, and 3 3/4 cups. No more using two cups when one will do. Further, they're made of stainless steel and can be used on the stove to melt chocolate or butter.
