These pans are amazing. I always hated how teflon slowly peels off in thin increments into my food.. and my regular steel pans always left a bit of flavor somehow. Food tastes better cooked in this.. and it makes cooking fun (it's really easy to clean.. and always looks so darn beautiful!) I've had mine for almost two years now.. fwiw.

I first became interested in Sitram's technology two years ago by way of an industrial technology article. I patiently waited for the price to come down and eventually ordered the 11" Frypan w/ Cover in Dec 2003. My expectations for its nonstick properties were too high. Following the use instructions precisely, I discovered its nonstick properties to be far far less that those of my main nonstick pan, a nearly worn out 11" Berndes. Do not get this pan for omeletes. Contrary to Sitram's graphic advertising, be prepared for an experience much closer to that of a good metal pan than a below average well-worn teflon pan.
On the up side, it is easy to clean, virtually scratch-proof, can be heated hotter than you would ever have need to, and is residue-free and beautiful.
I still think this pan is worth the price. I only want the reader to know they will still be using that teflon pan as well.

I bought this frypan when my husband broke the handle off an
old generic one. Normally, I would save up for an All-Clad
as I really like that brand. However, we were in a hurry to
replace it.

The pan is solidly built and heavy; however, the lid is light.
The surface is very shiny--so much so you could use it as a
mirror.

Thus far, I have used this pan to saute pasta, cook a grilled
cheese sandwich and scramble eggs. It has performed these
tasks very well with smooth, even cooking. I've used steel
utensils each time without any scratches occurring.

Clean-up is much easier than with a stainless steel pan. I soaked the pan for 5-10 minutes in detergent and then used a soft sponge. I hardly had to apply any pressure at all to clean the
pan. Everything came off easily.

Overall, we are very pleased with this pan. It is beautiful and
easy to clean. From reading other reviews of this product, I
believe if you are used to Teflon coated pans you may be
disappointed with the surface. But if you are used to cooking
with stainless steel, you will be pleasantly surprised. ... Read more

5-0 out of 5 stars Don't Catch This One Up Side the Head!
I was surprised at the weight of this pan; I have been a devotee of "Calaphon" for over 20 years. I am starting to convert to stainless little by little. I have some Cuisinart that is also very good, but I like this better.

The handles are angled up which keeps them out of the way and lets them clear other pans on the stove if you have a major cooking project going. The handle also has a gap where it is welded to the pan which lets fluids drain down rather than collect in a pocket. It can make your stove a little messier, but it is easier to keep the pan clean.

The interior is silky smooth and requires just a small amount of oil to keep food from sticking. The recommend that you use non-metalic utensils to keep from scratching it. The heavy layer of copper bonded between two layers of stainless on the bottom works great to distribute heat accross the pan. The side are a single layer of heavy stainless, so they do not get hot and cause food to burn on.

I was introduced to Cybernox in Canada, ey. It isn't as stick-free as teflon but it's not a coating. It's a unique new crystallized metal that lines the cooking surface of the pan. I was informed that the French govt. created the material and licensed it to Sitram.
I'll be buying more for Christmas, ey.

This pan really works. I've been abusing it heavily and it has remained non-stick. For example, I fried some sausages and there were left some stubborn-looking brown patches that came right off with a little soap and water. It's so convenient not to be forced to use wooden or nylon utensils all the time, and to be able to throw it in the dishwasher.

One note: you must follow the directions -- you have to heat the pan on medium-high heat for 2 minutes before putting anything into it.

Also, as far as making omelettes goes this pan is pretty good but it won't beat a purpose-built non-stick omelette pan. My success rate with omelettes is lower than with a dedicated pan. However that is mostly due to the fact that this is designed for general-purpose use and has steeper sides than you want for omelettes.

Anyway -- who cares! The big win with this pan is that you can use it in all those cases where you wouldn't have used a non-stick pan (for fear of damaging the non-stick surface). It makes clean-up about five times easier. ... Read more

The Cybernox surface is terrific. It's not as slippery as Teflon and other non-stick coatings are when they are new, but it is slippery, allowing you to cook with little or no added fat. Best of all, it keeps its non-stick properties throughout the life of the pan. It doesn't deteriorate over time like other non-stick surfaces, regardless of price.

Another advantage is its ability to develop a fond -- the browned bits of food that develop on the pan and add richness and color to sauces when deglazed with a little wine or broth.

The all-metal construction means you can finish a dish in a hot oven and even under a broiler, if you'd like. It's not cheap, but this quality line is offered at Amazon for the best prices I've seen anywhere -- and I've shopped around.

I am not a cook or even an enthusiast when it comes to cooking. I bought this pan just to cook my own stuff occasionally; like over-easy eggs and potatoes and such. I wanted something good, that would last. Two things that were not as expected:

1) One of the site's write-ups I read said they were "stay cool" handles. They are not ... completely. The half of the handle closest to the pan gets too hot to handle. The end of the handle has-- so far-- stayed cool enough to pick the pan up by.

2) I expected, from the write-up, that this was going to be a no-stick type of pan. So far I have not been able to turn over an egg without it breaking because it sticks.

That said I am very happy with the pan. It cooks the food really good and it does -- by using the cleaning thing it came with it -- clean up like new. Even my wife has taken to using it to cook small amounts of stuff. If I buy any more pots or pans, I am pretty sure I will stay with Sitram. ... Read more
