As the spokesperson from the kitchen of a family of five(which includes boys and their friends that use flatware to fix paintball guns, play extreme outdoor games, and use spoons to open locked doors, etc.), I have to say this has been great tableware for us. No dings, dents, or rust. I've had this set for over four years, and it still looks great. It's time to fill in lost pieces that are somewhere out in the yard . . .

Overall a nice product, but I have noticed that this flatware seems to get more "spotty" in the dishwasher than my previous set. Also, a few of the knives have developed rust-like blemishes where the handle meets the blade, but it's hardly noticeable. This is definately nicer than my previous cheap set, but it doesn't have the same heft or "quality feel" that the my Heirloom Oneida flatware has. Overall, I love the way this flatware looks, and it has very nice serving pieces included in the set.

Just got them in the mail today, and we love them! Nice weight, and great look. My husband wanted to buy another set of Martha Stewart flatware at the big K, but once he saw these he liked them. Great price with the "no shipping" costs!

This set is great...the weight is wonderful, & the style mixes well with other styles of plates. I have owned it for 6 months without any signs of the aforementioned rust...& I always throw it in the dishwasher. I, too, am ordering another set to replace any damaged or lost ones in the future, & to make sure I have enough for guests.

We have been looking for a while for new everyday flatware. Balancing price with the desire for a weighty feel and the desire for oversized Euro flatware; Earl suits us just fine. We bought two sets and they go in the dishwasher. No problems so far with rust as others have mentioned??? Maybe there was a defective run?? I will be on the lookout for that but so far I love the look and feel of this weighty oversized pattern. Just wish I could get more speciality pieces in the same pattern.... iced tea spoons and such..... oh well the pattern is simple enough to mix well with others ... Read more

But then, the price tells you - this product is not made in Germany.

They don't feel that light, but they are not substantial enough to give that upscale look to your setting. Also these neat, simple, slim handles are not the most comfortable to hold. Well, this set certainly looks sleek, especially in this price range.

Of course, style and appearance are personal preference, but I have been looking for a sleek yet simple set of flatware for a long time that wouldn't look or feel cheap. I would've have been willing to pay more, but was thrilled with this set at such a fabulous price.

The design looks great with my modern dishes as well as my grandmother's vintage china from the 40s. We find them very comfortable and the weight is exactly what I'd expect from a slim design. I love how shiny they are. You can tell they're quality 18/10 stainless.

I haven't any problems with the knives in the dishwasher, as another reviewer did. Perhaps Henckels corrected this problem. Mine come out of the dishwasher looking great. There is a warranty, though, if you do experience problems.

I spent all day in the kitchen preparing for a dinner party and what do I get the most compliments on? My flatware. Our friends have gone crazy over the look and especially the feel of this great stuff. We could not be happier. We have had no problems with the knives. You won't be disappointed.

I love my set. I notice some have complained about the 2 piece construction on the knives, but mine are one piece (making me wonder if they have improved upon that flaw in the new sets). I love the feel of them in my hand and my whole family prefers them to other sets I have. Guests usually comment on the look and feel and want a set too. After numerous uses and washings, they are still looking like brand new.

When I was washing the knife I noticed that the fine edge on the serrations had bent over to the non-scalloped side of the blade. I guess i found this a little irritating since i spent a fortune on this knife. It cuts bread fine, but i would not purchase again if i had the choice.

A fine knife for most bread but when cutting large, tough loaves it has trouble "finishing" off the bottom of the crust. A better design is a knife with a slight curve, and sure enough Henckels has one of those as well. If you like hearty, thick crusted bread, then spend a few more dollars and buy the 9" instead.

What can you really say about Henckels knives? Only that they are the best on the market. As such you'd expect to see a 5star rating, however the reason it only attained 4 from me is because of one minor incident.

The first time I used the knife it was on a very hard crusted loaf from Panera that decided to not have them slice because i wanted to play with the new addition to my collection. The Henckles made quick work of the loaf as expected. When I was washing the knife I noticed that the fine edge on the serrations had bent over to the non-scalloped side of the blade. Nothing visiable, but you could feel them when running your fingers over them. A swipe or two with the honing steel from the back and a few twisting pulls in each scallop from the other side trued the folds straight again.

Honestly its a little my fault too for taking it straight to this "rock" before breaking it in a little first. Not that Henckels need to be broken in, but you know what I mean.

Mmm cut thick bread good, but too big for butter.

Seriously, this is a perfect bread knife, especially for someone slicing through tough-crusted baguettes almost daily. However, since it's "only" a bread knife, I can only give it four stars. But just as soon as I get my hands on one of those Santoku knives...

They shouldn't call this a bread knife, they should call it the Everything knife. The ultra-sharp steel saws through just about everything...I use it as my carving knife for meats, and it has held up without any problems for more than two years so far.

We received these knives as a wedding gift when we had them on our registry, and they've been great! Been using them for two years now, and they are still extremely sharp. They are well balanced, a nice weight and easy to use. I always hand wash mine, just to be on the safe side, and they are just like new. I cook often and can't stand a cheap or dull knife, and these have been a great deal for the money. Ours is a 7-knife set with no steak knives. Highly recommend them (and per an above review, these are a 'single man' marked set, not a double or twin marked set, so not Henckels top of the line, even).

For the price you cannot expect any more than you get. If you want high-end quality then spend some dough. If you want a good starter set to thrash on for every day use, then, for 40 bucks, you cannot go wrong with this knife set. It has all the basic knives a person could want. The block is of lesser quality and stunk like glue! It was a little overpowering at first. But, like I said, this is my first block set and I'm treating it that way. Great starter set, I'd recommend it.

Unless your consistently cutting steel cans or opening them with your knives, this set is great. It holds the edge well and you'd spend 5 times the money to get the better "lifetime " Henkels. Do you really want the same set of knives your whole life anyway?

We got this as a wedding present...what a great gift! I use these knives constantly, but especially for cutting up meat or vegetables. They are so sharp but even cut up baby tomatoes with ease. The wood block is small enough to be stored on a counter top and not take up much space at all. I'm so happy we got these!

I registered for these because Henckels has a good reputation, but i am really disappointed. The knives are not recommended for the dishwasher and I have hand washed them all. Despite this after one time of using the chopping knife and hand washing it, it has begun to rust. I wish I would have registered for the more expensive knives. Despite its name, this tool doesn't truly sharpen a knife. It's an alternative to a knife, or "butcher," steel. Like a steel, it performs the vital task of realigning, or "resetting," a knife's edge, which bends this way and that when contacting a cutting surface or other hard object. Because it employs steel and ceramic wheels to do the work on a knife's edge, it can grind a bit of steel off the blade. But that's more a polishing, or honing, than an actual sharpening. I tried this sharpener (for practice) on the ...Farberware knives I hadn't touched since I tried Henckels 4-star and Pro-S knives. These knives had been beaten up from throwing them in the dishwasher, and the Twinsharp put a very serviceable edge on the Farberware slicing knife; while not as effective or well-balanced as the Henckels knives, it *would* once again, smoothly and without fuss, cut through an onion. Be careful about the downward pressure you apply - a little more may be required at first, but a light pressure and smooth motion is required for the final finishing strokes, and you want to tilt the knife to keep the EDGE parallel to the countertop at the point the sharpener touches.

I then ran my 6-month old Henckels chef's knife, which was still pretty effective, though the sharpener. The knife cuts much more smoothly, and the sharpener eliminated any "dead spots" in the cutting edge. In addition, this sharpener smoothed out the three nicks that resulted when the knife slipped while I was washing it, bouncing off the drain of my stainless sink... if you look close you can still tell where they were, but the edge is greatly improved; a bit more use and a sharpening or two, and it should be visually impossible to tell the difference.

Just for kicks (and probably disobeying a few common-sense safety rules) I sharpened a dollar-store stainless pizza cutter, holding the sharpener to the floor with my boot and holding the cutter handle with one hand and rotating the blade (to simulate pulling a knife through) with the other. The cutter, which had previously been a pain ...and required a bit of pressure, cut right through a Tombstone pizza on the first pass.

I don't know if it will work for serrated knives, but for smooth-edged knives this sharpener seems very effective and easy to use - just hold the handle solidly against the counter and pull the knife through, keeping the cutting edge in good contact. The sharpener design and knife guides make it easy to hold the knife square in relation to the sharpening elements, resulting in a clean edge. The lefties are correct in their comments; this sharpener IS designed for a right-handed person, and there is no left-handed alternative available, but I found it to work very well for me.

I hate when I squish the tomatoes when I try to chop them with a not so sharp knife (I have a Henckels)...so got this sharpener with not so much confidence its going to solve my problem...

BUT, I was wrong..this thing brought my knife back to how it was when I bought it brand new...crisp, clean, ultra-thin slices of tomatoes in a matter of seconds!!!

Easy to use, very-light, works like a charm! Highly recommend it!!

I've used this on my 8 inch Sabatier-Chef and it works fine. Foolproof, there is only one way you can put the blade through the sharpener. Also works well on sharpening the whle blade, from base to tip. Light weight, small, stores easily.

2-0 out of 5 stars Threw mine away today - puts notches in the knife edge
Took me a while to realize it, but this sharpener has actually been destroying my JA Henckels knives. A few months ago, I ran the 6" utility knife through it. The knife was quite sharp afterwards, but I noticed the edge was notched (i.e. a small triangular piece was missing). I thought "What thoughtless person used my knife to cut something on a ceramic surface thereby putting notches in my knife??"

Last week, I ran the 6" chefs knife through the sharpener. Ahh, sharp as ever. But wait, somebody had put notches in this blade too! Today, I figured out what it must be. I took the chefs knife out and looked carefully at the edge. I then ran it through the sharpener again (medium pressure, smooth pull). Sure enough, there were more notches in the edge.

I threw the sharpener in the trash. Going back to my flat whetstone. Takes more time, but I've never taken divots out of the edge using the old-fashioned method of sharpening. I give this 2 stars because your knives will actually be _sharper_ after using this device, but you'll have a serrated edge instead of a smooth one.

.. be sure to practice on old knives first so you get the right touch. I'm sure glad I did, because a bit too much pressure on an old, inexpensive knife took a bite right out of the blade. The thing cuts better than ever before though. Go figure.

One needs to apply constant, medium to light pressure as you draw the blade through the sharpening wheels. You want to achieve a smooth stroke without allowing the blade to chatter as you draw it through. After some medium-firm strokes, test for sharpness. If it's enough, then draw the blade through lightly a few times to help hone the edge. Then follow with a few strokes on your steel to have a perfectly smooth finish.

Once you master the right strokes, this is a most wonderful kitchen addition. It's handy and easy to use. No more dull knives! I'd happily buy another when this one wears out. ... Read more

The Japanese version of the chef’s knife, the santoku is useful for straight chopping, mincing, and slicing of larger quantities of vegetables and meat. Cooks with smaller hands may prefer this 7-inch blade as the shorter length offers better control while cutting. The width also provides a great platform for transporting chopped vegetables from cutting board to sauté pan. This version of the santoku actually has a hollow edge or oval cut-outs along the blade. The benefit to this blade style is that cooks can cut paper-thin slices and individual slices won’t stick to the blade.

Part of the Pro S series of cutlery, this knife has a fully forged high-carbon stainless-steel blade. The blade, bolster, and tang are welded of one piece of metal using Henckels’s Sinter Metal Component Technology, which distributes the right quantities of metal to each part of the knife. The result is a longer-lasting edge and a more consistent angle on the blade. The blade has also undergone Henckels’s Friodur ice-hardening process, which further strengthens it and protects it from discoloration. This knife is the cream of the crop. I am in the food industry and i have never used a knife this awesome. The weight and feel is unbeatable. Definatly a 10 out of 10.

After buying the Calphalon Classic Santuko knife I felt compelled to buy the J.A. Henckels version for comparison. First off, this knife was sharp as a razor and stayed sharp for a long time, the Calphalon dulled within 3 slices of a lime. The weight and handle are not as heavy and as comfortable on the Henckels, the steel is far more lightweight. But aside from the smaller grip handle and lightness, I enjoy using it more than the Calphalon. I suppose it's just personal preference. Once you use these knives, you will want to throw all your others out. At least I do.

Although steels often are touted as sharpening tools, few actually sharpen knife blades but do perform the vital task of realigning, or "resetting," edges, which bend when contacting a cutting surface or other hard object. Because this tool's surface contains diamond dust, it's hard enough to somewhat sharpen a blade. While using this steel won't replace a professional sharpening job, which proceeds from coarse grinding to ever-finer grinding at tightly controlled angles, it will lengthen intervals between sharpenings. This steel will also perform better than a steel without diamond dust because it accomplishes the final task of a professional sharpening, which is polishing the edge to a fine point while realigning the edge. The rule is that a steel should be at least as long as the knife blade being drawn across it, and this steel's 12-inch rod handles all household knives. We just received this today and my husband of one month has proceeded to put a very sharp edge back on each knife in our Henckels knife set. The reason for four stars instead of five? When it arrived, the sharpener was not round, as I expected, but a two-sided oval sharpener. Although it is very easy to use and does a great job, it arrived with no directions. For someone who has never used this type of sharpener before they may not find it as easy to use. But for those of you (like my husband) would say "All I care about is that it sharpens the knives and it does a great job." (A direct quote from one who prides himself on putting a good edge on our knives. As a matter of fact he is scouring the neighborhood looking for more knives to sharpen.)

I am very pleased with the results of this diamond steel. It sharpens all our kitchen knives, big and small. I was a bit disappointed with Amazon's package. It is completely shrink-wrapped, bare steel, with no manufacturer's package or warranty paper, nothing! However, this is a fine product. It took me less than 2 minutes to sharpen a knife - no kidding.

Not so much a "cutting board" as a "cut board," this breath-taking piece showcases the seemingly endless reserves of Henckels's creativity. I believe Gattingsburg was correct when he cautioned us in the February ArtForum to "expect greatness from a certain up-and-comer (not to name names, but he monograms his luggage 'J.A.H.')."

However, collectors should be warned: An authentic Henckels will feature not only a brand, but also a signed certificate sealed by the Brussels Institute of Hardwood Blocks and Slabs (BIHBaS). I feel sympathy towards the lady with the plastic seal, but the error was her own. When making an investment of this size, it is perfectly acceptable--nay, it is matter of course--to request an outside appraisal while funds are held in escrow. At least this is how we at Christie's East handle all Henckels sales.

I do not like my knives to slam and penetrate the back wall of the drawer, if I should close it to quickly. This block is a welcome release from that hazzard. Also the famous J. A. Henckels crest, and unlike the block purchased by the reviewer of March 2003, is truly burned into the wood. Futhermore, I simply arrange the knives by choice, the size of the slots is irrelevant to me. I was very happy to find it for sale at Amazon.com, for the same price of a distant Ware House Mall, in my state.

I like this, it meets my need, but not my desires. My honing steel pokes out the bottom and I have no idea, which knives are supposed to go in which hole. BUT it keeps my knives protected and my fingers too!

The hardwood block is great, however, I was disappointed somewhat, as the Henckel block pictured shows the emblem burnt into the wood itself. What I received was the block with a little plastic Henckel emblem glued to it, making me wonder the authenticity of the product.

I think this block is pretty good. It holds my knives perfectly which prevents the unfortunate slice of the finger when rumaging through my drawer. Two things one should be aware of before purchasing this block though.

1)...If you have a long steel, it may bottom out on this block. I have a Henckles 4-Star/5-Star steel and it fits perfectly.

2) If you have more than two large knives get the larger block. This is the only thing that disappointed me. I wished they could have had another slot for another "Chef's Knife" sized blade.

This is the perfect size for a versatile paring knife and the 4 Star line is the most underrated line on this sight. When a rookie comes to work in my kitchen and asks me what line of knives to invest in I send 'em here for 4 Starz. These are the knives I started with in 1979 and I still use an 8 inch chef's.
A bargain in price,indestructable, sharp, easy to keep sharp, attractive and built since 1976...timeless.

Buy this one, an 8 inch chef's, an 8 inch bread, a 5.5 inch boning knife, a 10 inch steel and the Santoku. Add more as needed. Buy 'em now!

While the shorter paring knives are more commoly seen, this 4" paring knife is actually a better choice for many jobs. In our kitchen it gets many times the use of either the 3" paring knife or 6" utility knife. If I could only have two knives to do everything, I would choose this 4" paring knife and my Kershaw Shun granton edge Santoku. I use both of these more than any of the rest of our knives.

The Henckels Four Star is a well regarded premium German knife line whose pros and cons have been covered endlessly over the years, so I'll not revisit them. While I love the razor edge of my Kershaw knives, I prefer the more rugged durability of the Heckels Four Star for my paring and utility knives.

Excellent weight and shape, strong blade, very versatile. I've had this knife for twelve years--and for several of those years, in my poor-student days, it was the only knife I owned, apart from a couple of cheap hand-me-down steak knives. Now I have a block full of Wusthof-Trident (a gift) but this Henckels is still the knife I use the most.

This is my first set of really fine German made knives. I've heard for years that the best knives come from Henckel in Germany. I thought the price was right and was looking for a "fatter" handle on a knife. This knife set is beautifully designed and well made. I have a touch of arthritis in both thumbs and the skinny handle on most kitchen utencils is difficult for me to hold. This knife set fits my hand nicely and glides through everything like it's warm butter. Great knife - great value. This set will last a life time!

I got a big set of 5 star knives for Christmas, and think they are great! They cut beautifully, are very well made, and easy to clean. I think the handles are really just a personal preference. I understand the blades are the same in the Pro S and 5 Star line. My dad (who also swears by Henckels)has the Pro S series, and finds the larger more ergonomic handles in the 5 Star line uncomfortable. But I find them easier to work with. I have noticed a few spot/stains on the blade of the large chefs knife in the past few months, but I assume that this is probably due to my own maintenance practices.

The knives are very good, however every handle on the 5 Stars looks worn (almost scratched). I thought it may have been shipping damage since the knives do move around in the box. However, I took a trip to the many stores to see in what they look like at retail stores. Every store (including Williams and Sonoma) had very worn looking handles. I check display and from brand new boxes. There is something wrong with either the composite they are using or the process. BEFORE you order any 5 star knives check them out in person to avoid frustration with the handles. Henckels is a great company and these are great knives, but be forewarned the handles on all of the knive look dirty (especially the [end] of the handle).

I ordered these knives using a Gold Box offer.... They arrived 11/26 and I have been in love ever since.

The Chef's Knife is heavy with a good balance and razor sharp. This knife does a great job on tomatoes, onions, peppers, and it's great for mincing garlic. The paring knife is equally sharp and useful, it peels and slices easily and fits nicely in the hand. The shears are also great and I find myself using them for more than just cutting open packaging. The handles seem like they would be awkward, but they have a great feal to them and fit nicely in my hand.

If you have the 200 dollars and the desire to get a great set of knives, these are the ones to get. If you can only get one knife, I'd suggest the Chef's knife. If you can afford 2 knives, I'd get the paring knife as well. These 2 knives are must haves and you will find yourself using them frequently. ... Read more

I love all my Henckel knives, but this one is definitely the most versatile. It's 5" length and super sharp serrated blade make it ideal for vegetables as well as meats and smaller bread loaves. If you're not going to buy an entire set of quality knives, you really should have this one amongst the few you choose.

(I say this with regret as I love the handle and balance of my Henkels chef knife). Henckels knifes are indestructable and I my experience (and I have heard this confirmed by a professional chef and cooking instructor) is that they are near impossible to sharpen. For many people this may not mean a lot, but a good knife should be able to have that remarkable edge for years (not just the first 3 mos). A professional may be able to sharpen these but not as well as other knives (e.g., Chicago Cutlery and others) -- no second honeymoons with these.

We purchased a Henckels Four-Star set about ten (10) years ago and use it daily. Out of the set of six or seven knives, this utility knife is our most frequently used. It is extremely useful in food preparation, holds an edge longer than the other non-serrated knives, and isn't affected by dish-washer abuse.

This is a great product that will last you many years. One caveat: NEVER allow your MOTHER-IN-LAW to borrow it and use it as a screwdriver. It will be ruined - hence my purchase of a second one of these knives. ... Read more

You can spend a lot more on a knife, but you won't buy any better performance where it counts, in the kitchen. Made of sharpenable stainless with a synthetic handle that will never loosen or break apart, this knife has a nice heft and a good edge and should last most home chefs a lifetime. Give it a few strokes with the steel every time you use it and the edge will last for years without needing to see a sharpening stone.

If your cutlery drawer is full of various inexpensive supermarket blades, "miracle" knives and the like, throw them all out and buy one decent blade like this, and you may be amazed how versatile a simple, quality knife can be.

I recently purchased this knife and am overjoyed with the performance. If you don't have a well balanced professional knife you can't imagine how nice it is to work with one. I went to the local restaurant supply stores and handled several brands and sizes to see what felt best. The Henckels Pro S 8" was the best. The 10" seemed top heavy but I'm sure someone else may feel different. The blade holds an incredible edge as well. I steel the blade before each use to keep the edge in the best cutting condition.

We live on our boat and don't leave the Cuisinart on the galley counter. I found that there is little reason to break out the Cuisinart unless I have a large amount of food to process. The 8 inch Pro S has stayed sharp and in the year I have owned it have only used the honing steel to keep the knife in perfect condition. Use a plastic or wood cutting board and use the steel and enjoy this fine knife. I plan to buy the six inch model soon.

The 8" chef knife is an absolute joy to use in the kitchen. It actually makes prep work enjoyable. Chopping, slicing, dicing, etc. are now effortless. This is a Japanese chef's knife, a low-tip style with a broad blade and slightly curved cutting edge. For Asians, this knife is the same kitchen workhorse the French chef's knife is for Europeans. Its cutting edge is less curved, so it provides little rocking action, but for straight-down slicing and precise chopping, it's superb. Its 7-inch blade can be manipulated by cooks of any hand size, and its balance should please. Classic three-rivet handles distinguish Pro S from Henckels' other quality lines. Handles are smaller, a feature those with small hands may appreciate. Pro S knives this size and larger are high-tech welded to combine three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics. I use this santoku knife every day. I cook professionally and my personal collection of knives is worth thousands of dollars. I have all the weird knives no ever uses, all the specialty tools that are supposed to make chopping fun. When it comes to cooking dinner for my spouse and I, I reach for this knife every time.

This knife gives you the edge shape and flexibility of an asian vegetable cleaver with the balance and handle of a lighter chefs knife. I like that. I don't think that softer veggies or butter or chicken breasts always need the heft of a 8 or 10 inch chefs knife. For all-purpose needs at home, this knife is the perfect size and weight. I would highly recommend it as a first knife for someone looking to build a home collection of higher-end knives. Then pairing knife, then chefs knife, in my opinion.

The Henckels Pro series, in general, is of good quality. Like any other knife in this line, however, the Santoku *will not* keep an edge without maintence. No knife, not even those horrible diamond-honed things, will. To keep your knife in good shape, hone it on a steel each time you use it and clean it promptly. Avoid those roller sharpeners: they will tear up your edge. Every few years (more often if the knife is used a lot) get the blade professionally re-ground. Oh, and just in case someone misunderstands: the above does not apply to serrated blades. Only straight ones.

I recommend the Santoku. In fact, I'm thinking of getting a second one: one for veggies, one for meat, so I don't have to keep cleaning my knife while cooking.

I bought one of these knives for my wife because she wasn't comfortable with traditional chef's knives, and I didn't like to see her using a pairing knife as a primary kitchen knife. After going to a few different stores and trying out different knives, she decided on the Henckels Pro S 7-inch Santoku. Although I probably would not have picked this knife for myself, I'm now hooked. Here's what I like most: (1) It came with an excellent factory edge. In fact, it was much sharper out of the box than my Global chef's knife. I probably won't use my Global much more until I can get it professionally sharpened. (2) Excellent balance and overall quality. It just feels good in your hand. This is something that everyone needs to try and decide for himself. (3) Versatility. The wide blade is better for scooping up chopped vegetables, herbs, etc than most chef's knives. It is sharp and light enough for relatively delicate work, but long and sturdy enough to handle bigger jobs. (4) Unlike traditional European-style knives, where the blade comes up against the bolster, the entire blade is exposed. This gives you more useful blade space, and is much better for future sharpening (bolsters get in the way of sharpening and stick out once part of the blade has been removed in the sharpening process). The only things I might change are that the 7-inch blade is a bit shorter than I would like, and the handle is relatively small (this is one of the factors that were best for my wife, however). The advice that I would give to anyone purchasing this knife is to please take care of it. Do not run it through the dishwasher, cut on hard glass or marble cutting boards (pure evil), or use any gimmicky home sharpening system. Maintain the edge with a high quality honing steel (a smooth steel is gentlest on the blade), and sharpen only occasionally by someone who knows what they're doing.

My husband bought me a set of Henckels Professional knives a few years ago for Christmas! He just bought me this knife for my birthday (I love kitchen gadgets, but he also bought me a diamond ring, so I can't complain!) I love to cook, and this knife fits into my hand very nicely!!
It is a great knife to add to my set.

I'm sure by now, you're confused by which brand you should choose... is it the Henckels or the Wusthof Santoku? If that isn't your dilemma, skip on down to the next reviewer. I just got the Santoku for a steal of a price... and that is why i went for this over the Wusthof which goes for $5 more (Classic hollow-edge). I was looking at the Wusthof for over a month and was completely impressed w/ the feel and balance. I think the Henckels still comes in just below the Wusthof. There are hundreds of other knife manufacturers in Solingen, Germany... it's only that Henckels spent tons of money on global marketing. Back to the knife... once i got home, I quickly dug for a carrot (tougher to chop) and a cucumber. I tried to chop the carrot like i was banging on a drum... and it chopped fine. As far as the traditional, knuckles out cutting technique, it worked fine. My only advice for you is to definitely try out both knives and look for the most comfortable. You'll notice that one may have a heavy-heel/light-handle feel to it(vice versa)... it is ALL PREFERENCE. I actually got kind of tired chopping the carrots b/c theAlso keep in mind... the hollow edges on the knife really don't make a difference. If anything, it's an aesthetical bonus. So try out the non-hollow edged ones... it may be a few $$$'s cheaper. Also keep in mind, the difference between the Pro 'S', "4-Star" and "5-Star" knives are the handles. I didn't like the "5-Star" knives b/c of the ergonomic handle. Anyone can tell you that you're not supposed to wrap your hands around the whole handle. Instead you should be using your thumb and index to grip the finger guard/bolster. So thus, the Pro 'S' is a good pick, but I'm still going to give the 5-star rating to the Wusthof Classic 7" Santoku.

OK, So I'm a "Traditionalist" - whatever
This is an excellent knife, as a culinary student I get to play with huge varieties of knives the college makes available to us, and while this is one of my favorites, the Wusthof beats it by a long shot. There's just something to be said for traditional forging methods, there's a feel to it that you just cant beat with super-hi-tech invisible welding magic. Can't really say exactly what it is, but my old-fashioned preference is the only reason it got 4 stars.
