This knife is a superstar! I cannot express how much more enjoyable food preperation has become since I purchased it. After two years of almost daily use, it looks and performs like it just came out of the box. Of course, I only hand wash and dry it, and I never allow food or anything else to dry on this gem! Though seemingly expensive, it is well worth every penny!

About 5 years ago I got into cooking stir fry a little bit and found that cutting carrots, onions and many other vegitables was quite a chore with the cheap selection of knives that my kitchen was stocked with. I had to get sometimes near paper thin slices of various ingredients and there was no way even the best knife sold by Target could stack up to the task. I went to a real cookware store and purchased this knife and the 14" sword like knife for starters.

The first slice through an onion I knew where the extra money goes, some of it is for the name, but the rest is all quality. These knives will amaze you with how well they feel with their perfect balance and with a little work, you can get the blade sharp enough to shave with. When I held the 14" knife balanced on a tomato and just pulled, the weight of the knife sliced through it with a clean stroke. The 10" chefs knife I picked up as my 3rd addition and find it excellent for slicing, for dicing I prefer the heavier knife though.

Cut all the coke cans you want with your Ginsu, but leave the real jobs to a real knife.

This 10" chef's knife would impress Crocodile Dundee. It features fine balance and a comfortable handle (like all 4-Star knives) and an incredibly sharp edge. Just be sure to wash and dry by hand.

I have cooked for over ten years professionally. My 10" Henckel Chef's Knife has been my best friend. I have literally used this knife so much that I have a callus all the way across my right hand from standing over a cutting board for 10 plus hours a day. I admit there are other blades that are comparable such as those by Wusthof, but this brand has never failed me. I have 7 other Four Stars and they are all quality through and through. Razor sharp is not an exageration either, after running these blades over a oil stone you can literally shave with them. Touch up the edge on a steel before starting each job through the day and the edge is good for weeks, depending upon usage. Like other reviews I have read, I agree, DO NOT PUT THESE BLADES IN THE DISHWASHER. The finish on the handles starts pealing off if the are put into the dishwasher. Besides they are stainless steel and need only be wiped off with bleach-water and thoroughly scrubbed down at the end of the day or after a really messy job like cutting desserts. With care this blade should last any professional at least 5 years in a high volume shop. One last point I would convey. Take care to not allow this type of hard steel blade to fall or get dropped on a hard surface floor such as the usual kitchen tiles used in most restaurants. Any large blade made from hardened steel is inherently brittle. I have actually seen a 10" Henckel, not mine thank God, break into three pieces when it fell off a counter in one of the restaurants I have worked in.

Simply put, this knife if well worth the cost. If you are a professional, a student, or someone who just loves to cook, you will find this knife a valuable addition to the kitchen. Just one thing, the description states that this knife is dishwasher safe. If you are going to purchase a knife this good, PLEASE PLEASE PLEASE don't chuck it in the dishwasher. Just to let you guys know, Cutco hires what they call "web solicitors" to hype up their products on sites like this. Also, Cutco is sold by Cutco salespeople only and these salespeople have an interest in bashing other knives on the net. Truth is Cutco can't really compare to Henckels in anything but a guarantee, and how often have you known a Henckels knife to fall apart on you (and besides Henckels carrys a lifetime warranty too). My wife did not want new knives. She get attached to things and misses them when they are replaced. She replaced old knives however with this 5 star set, once she had a chance to try them in the kitchen. Great ballance. Very convinient handle. Extrimally well thought through craftsmanship

Henkles is the second best knife out there. Unfortunately, the best one is cheaper. In a straight up comparison with Henkles-five-star to Cutco, Cutco destroyed the henkles knife. I won't mention prices, but Cutco is less expensive. Also the guarentee on Henkles is only "life-time," which by law only means "7 years".
Cutco guarentees forever replacement and forever resharpening for all of it products.
The straight edges on the henkles wore out much quicker than those of cutco. Regardless, the Cutco knives are always guarenteed to always be sharp. So you can always send them back to be resharpened.
Imagine only buying one knife and passing it on for your grandchildren's grandchildren...etc...

I cook a lot, and and very picky about knives. This one's a winner! If I could only have one single knife in my whole kitchen, it would be this one. The big curved handle fits my (average male) hands really well. The blade is the right size and has the right amount of curvature. There is plenty of weight and an almost totally rigid blade (doesn't flex more than you'd want). And most importantly, the thing sharpens up like a sword. After I hand-sharpened it, guests who use this knife tell me they find it almost scary how sharp it is. And it stays sharp with very minimal maintenance. This knife is the best for all-around cooking. (For more delicate, super-precise cooking, try the Wusthof Asian Cook's Knife instead.)

If you've been using dept. store knives like Chicago Cutlery or similar.... going to a Henkels 5-star is like going from a black and white TV to a DVD Home Theatre set-up. Razor-sharp - and I mean razor-sharp... right out of the box, and better yet, they're easy to sharpen, strop, and they really hold an edge. These are truly professional-quality tools - you will love them.

For those of us who want everything to look perfect on the serving platter, I recommend this slicer. It's hollow grind gives you total control over the width of the slice, and its wide blade makes it easy to transport the meat from the cutting board. Plus, the high carbon steel gives you an edge that could easily be mistaken for a laser - forgive the cliche, but it finds its way though any meat as though it were butter.

This is the perfect knife. I have many, many other knives of various brands including Cutco, and I always find myself reaching for this one. Well worth the price! I always throw mine in the dishwasher and after several years, still no sign of rust.

I bought the 7pc. Pro-S block set. This knife was included in that set. As I was admiring my new tools I was utterly suprised to see what looked like a stain at the bolster of this knife. As I looked closer it was actually a small section of pitted steel. As I was looking at this moderately small spot I noticed a pitted crack approximately 1/2 inch in length extending from that spot down toward the point. At the point another pitted area covering approximately 1/8-1/6 of an inche from the tip down the scalloped side of the blade.

Don't get me wrong the Henckels Pro-S is still the best knife you could buy, but I was astounded that quality control missed this defective blade. I thought I would never have to make use of the lifetime warranty (especially 3 days after buying a set). But hopefully the exchange will go just as smooth as these excellent knife cut though food.

The Professional S series has been a blessing in our family in the two years since it replaced a set of those cheapo "Never-needs-sharpening" knives.

We live on our boat, almost full time. Although our galley is about the size of a medium on-land kitchen, the space for cutlery is relatively compact. The Pro-S series, in general is superior to any knife I have ever used. Specifically the 5 inch serrated utility knife is the single most used knife in our collection. For slicing veggies or anythng with a crust there is no equal. For slicing tomatoes it is almost a joke between Liz and I, that we can make one tomato last for a week because we can make the slices so thin and even. ... Read more

This slicer is excellent! First it is stainless steel all over...most have some other material for the handle so after years of use even if the slicer is in impecable shape the handles are bound to have suffered. (I have had wood handles split and crack and lucite handles that got nicked and shabby looking)

It is a very attractive item (this would make a great hostess gift or part of a cheese basket) and feels good in the hand. The angle of the slicer is good and its easy to maneuver the slicing ... It works best on harder cheeses (as do all items in this catagory). Soft cheeses like mozzerella do no slice well and tend to *string* as opposed to slice. A medium hard cheese like cheddar will slice well with it.

I really like the stainless steel so cleaning is very thorough and easy in the dishwasher. You can even use a bit of steel wool on it some of the cheese sticks and dries out on it. ... Read more

These knives are mainly used for cutting. They have largely fulfilled this purpose. Be sure to grasp the handle (the black end) so as to avoid unnecessary trauma.

I have had other knives before, and will no doubt have different ones in the future.

All in all I am pretty ambivalent about these knives, but knives do not play a major part in my life. You???

Got this knives set during an Friday Sale. A real good deal for Swilling JA Henckels product line. The blade is similar to the Henckels 4/5 star and Pro-s blades except this is stamped instead of forged. Although this is a stamped knife, the blade is actually thicker than the blade of a comparatively higher line of 4/5 star, so Forged or Stamped blade makes no difference for this steak knife. These steak knives make cutting steak easy and "classy". Your friends would think these knives are very expensive, for which is the contrary. If this set got any cheaper like the previous sale, just get a few sets at once, you won't regret it. Just beware not to sharpen it on a steel or manual sharpener, it has to be prifessionally sharpened. The only puzzling thing is in the weird design of the blade where there is a little offset curve blade near where the blade and its handle meet; what is this offset for, it can actually cuts a finger if someone got a big hand. Just be careful in handling any type of knives.

About 5 years ago I got into cooking stir fry a little bit and found that cutting carrots, onions and many other vegitables was quite a chore with the cheap selection of knives that my kitchen was stocked with. I had to get sometimes near paper thin slices of various ingredients and there was no way even the best knife sold by Target could stack up to the task. I went to a real cookware store and purchased this knife and the 14" chefs knife for starters.

The first slice through an onion I knew where the extra money goes, some of it is for the name, but the rest is all quality. These knives will amaze you with how well they feel with their perfect balance and with a little work, you can get the blade sharp enough to shave with. When I held the chefs knife balanced on a tomato and just pulled, the weight of the knife sliced through it with a clean stroke. The paring knife is handy for so many more things than just paring (which it does quite well), I've used it more than once as a steak knife. For some reason I cant stand serrated edges anymore.

Cut all the coke cans you want with your Ginsu, but leave the real jobs to a real knife.

My 3" paring knife broke. I decided to replace it with the Henckels 4 Star model. What a mistake! It is beautiful, sharp, extremely well balanced and obviously well made. Naturally, the rest of my knives took great offense, and I promptly ordered the whole set of 4 Star knives, block and all. At least I'll get a free set of Henckel's steak knives!

It seems that everyone's kitchen drawer holds more than one paring knife - ours certainly does, and this small knife by Henckels is a favorite.

Recommended for people who cut up chickens, turkeys, or other bone-filled pieces of meat.

If you need to cut up a whole chicken, or do similar tasks working with meat on the bone, this knife is just lovely. The big handle is a great fit for my (average male) hands, giving much more control than traditionally shaped handles. The knife arrives reasonably sharp, and with a little maintenance on a honing steel gets notably sharper. The blade has a nice medium amount of flex: it doesn't bend when you don't want it to, but it does bend when you want it do.

The best feature is the little curve at the back of the blade, an area which is especially sharp and deep. This ensures that you can cut off anything just by pushing the knife forward until the curved part reaches the aree being cut.

Don't confuse this with a general-purpose cook's knife or utility knife or paring knife. It's a poor substitute for any of these, because of its specialized design. But if you want to cut up meat around the bones, it's a fine tool, well designed and well crafted.

Just the facts.... being European, loving to live in America, put a major dent into my so familiar "Kitchen-Life"

Apparently all the engineers started working for NASA, and nobody stayed around working the "consumer applicance bit". When I first came to America in 1989, and stepped inside a SEARS appliance store, I was totally in shock. What are these "spiral-type" electric cook-elements I kept asking myself ? These appliances looked and function like 1950 models in Europe ! No smooth cooktops, no SILENT / QUIET dishwashers, no convection wall ovens, no washer and dryer in-one combinations, no front-loading washers. With other words the total appliance DESERT !

Now I am coming to the point. I am building a house right now. All the (european type)applicances I like to have, I have to buy through some major (almost black-market) type deal, because what is mainstream in Europe is NOT mainstream / very hard to come by and is always called GOURMET in the US.

THE SAME is true for cookware (e.g pots and pans, silverware, knives AND Steak knives. Nothing cuts around here :-) except some European designed knives. Apparently, it is very hard to find stainless steal cookware (pots and pans) in the US with tempered glass lids, an itemn that has been standard in Europe for 15 years, why is that ? To get back to the steak knives, we owned these for several years, they are great, fit good to our other Sambonet (Italian styled silverware) and really do cut, without the UGLY woodenhandles and "chromed" plates. I can't even find a decent corkscrew in this country ! This is really pittyful, BUT on the other hand the land and the houses are cheaper :-)

"Come on America", get to work and clean up this mess in your appliance, kitchenware and knive offerings, I know you can do it ! You went to the moon for crying out loud, why can't you design us some decent 21st century style appliances, pots & pans, AND KNIVES ?

Until this day will come I HAVE TO RECOMMEND, brands like BOSCH, Miele, Krups, WMF and these steak knives from Henckels or Zwilling as they are called in my native Germany. There is nothing better in this country in this segment, but these knives. Believe me, I have done the research ! I own 16 of those(you know when friends stop by for some steak dinner) If I were you, buy as many as you can, while they still exist ! Fact: The best beef is in America, that's why I am here too, but I have to cut the american beef with German knives for the time being. :-)

If you're looking for a cleanly designed knife with a wicked looking blade, these knives are for you.

If you are expecting to use the knives to actually cut steak, look elsewhere. The blades are not particularly sharp - they rely on the sawing action of the serrations. If you don't have firm grip on your fork these knives will just drag your steak around the plate. The knives don't cut, the RIP through the meat. The small serrations quickly become clogged and any semblance of cutting disappears.

My wife has some steak knives she got years ago as a premium for buying a full tank of gasoline... these knives, with a few strokes on a good stone, will cut a 1 inch steak in a single pass - something you could NEVER accomplish with the Henckels.

I am not kind to my steak knives. My old knives had wood handles, they had to be pampered and washed by hand after use. Yuck. After only three trips through the dishwasher, the finish was fading fast....

I wanted a good cut from a dishwasher safe knife.

Cool thing #1: The 8 J.A. Henkels steak knives I ordered have been washed nearly every day in the dishwasher for about a month now, and they still look great and are as sharp as new.

Cool thing #2: One piece = no seams to get food caught in, or hidden places for rust like the wood handled ones. These get used for prepping veggies, and all sorts of times where a paring knife is needed, without concern of "NOT THE NICE KNIVES!".

Cool thing #3: These are a nice, basic, simple design. It doesn't stick out much, and blends in fairly well with my other (aka basic-looking) silverware.

A perfect "everyday little, sharp kitchen knife".

We admit to being a little partial to Henckels cutlery and have wanted a 5" utility knife for some time for dicing green peppers, fine-slicing onions, and similar tasks. This item has a great smooth feel in the hand, with enough heft in the handle, and enough length on the blade, to provide excellent precision in whatever your smaller cutting tasks might be. "Sharp" goes without saying and our prior experience with Henckels serrated edges leads us to believe the knife might well outlast its owner!

This knife is definately overkill for many jobs, but for attacking watermelon & other large fruit for fruit trays it's great. I also like it for jobs like chopping parsely where the knife never seems long enough. If your not used to using a tool this big it will take some time before it feels comfortable in your hand. I like to bring my hand's first knuckle up onto the blade for the best control w/a chef's knife & the 5-star handles are great for this. It really shows it's usefullness at jobs where you push down at both the blade & handle end like cutting butts of meat in half in preperation for slicing or pushing through club sandwiches where even a reasonably sharp serated knife can catch on a tuff peice of bacon & tear apart the sandwich. If I was a prep cook this would be my main weapon.This may not be a great choice for around the house for many, but in a hotel setting it can quickly prove to be indespesable. As with all high end Henckels the blade holds an edge very well. When the job calls for a knife of this size, this mutha rocks!

Well, you will never buy another Ginsu set again.

Don't even waste your money on cheap knives, ever. Get one set of good ones, and have them for years, like chefs do.

What knives do you really need? An 8 inch chef's (This is a 12, frankly a bit of overkill except for certain applications), a paring knife of the same quality, a block to store them (OUT OF THE DRAWER please) and a steel. A diamond block to sharpen is also a must unless you have a true professional sharpener in your area (the factory guy comes to our hardware store yearly and makes them practically lethally sharp; you may not have such an advantage.) Get a good chopping board; a huge plastic one is a great choice, as you can wash it and sterilize it easily.

12 inches is a bit large; I prefer the 8 for most applications. However, for vegetables and Chinese foods, this is a super size. The handle (very important) is well designed and comfortable. BE WARNED: you must NOT chop chicken bones or you will damage the fine edge. If you want to chop and debone meats, get a cleaver or boning knife. I like a Chinese cleaver for this type of work.

Be careful shopping for name brand knives; some lines have "cheap" starter brands that aren't worth the illustrious name stamped on them. This Henckels knife is a real pro, and worth the money. ... Read more
