The first slice through an onion I knew where the extra money goes, some of it is for the name, but the rest is all quality. These knives will amaze you with how well they feel with their perfect balance and with a little work, you can get the blade sharp enough to shave with. When I held the 14" knife balanced on a tomato and just pulled, the weight of the knife sliced through it with a clean stroke. The 10" chefs knife I picked up as my 3rd addition and find it excellent for slicing, for dicing I prefer the heavier knife though. Cut all the coke cans you want with your Ginsu, but leave the real jobs to a real knife.

Don't get me wrong the Henckels Pro-S is still the best knife you could buy, but I was astounded that quality control missed this defective blade. I thought I would never have to make use of the lifetime warranty (especially 3 days after buying a set). But hopefully the exchange will go just as smooth as these excellent knife cut though food.
And the most used knife in the lot is this one, the 5-inch serrated knife. Whether you are slicing a few vegetables, peeling a fruit, or want an ultra-deluxe steak knife of the gods, this is the one. The Professional S design is a classic that will hold up well over the years.

It is a very attractive item (this would make a great hostess gift or part of a cheese basket) and feels good in the hand. The angle of the slicer is good and its easy to maneuver the slicing ... It works best on harder cheeses (as do all items in this catagory). Soft cheeses like mozzerella do no slice well and tend to *string* as opposed to slice. A medium hard cheese like cheddar will slice well with it. I really like the stainless steel so cleaning is very thorough and easy in the dishwasher. The paring knife is handy for so many more things than just paring (which it does quite well), I've used it more than once as a steak knife. For some reason I cant stand serrated edges anymore. Cut all the coke cans you want with your Ginsu, but leave the real jobs to a real knife.
The three inch blade makes it perfect for paring whether it be a garlic clove or potato. With a user friendly handle it fits neatly into your hand, and is easy to grip for lengthy chores. Pop it in the dishwasher, and it's like new.

If you need to cut up a whole chicken, or do similar tasks working with meat on the bone, this knife is just lovely. The big handle is a great fit for my (average male) hands, giving much more control than traditionally shaped handles. The knife arrives reasonably sharp, and with a little maintenance on a honing steel gets notably sharper. The blade has a nice medium amount of flex: it doesn't bend when you don't want it to, but it does bend when you want it do. The best feature is the little curve at the back of the blade, an area which is especially sharp and deep. This ensures that you can cut off anything just by pushing the knife forward until the curved part reaches the aree being cut. Don't confuse this with a general-purpose cook's knife or utility knife or paring knife. It's a poor substitute for any of these, because of its specialized design. But if you want to cut up meat around the bones, it's a fine tool, well designed and well crafted.

Apparently all the engineers started working for NASA, and nobody stayed around working the "consumer applicance bit". When I first came to America in 1989, and stepped inside a SEARS appliance store, I was totally in shock. What are these "spiral-type" electric cook-elements I kept asking myself ? These appliances looked and function like 1950 models in Europe ! No smooth cooktops, no SILENT / QUIET dishwashers, no convection wall ovens, no washer and dryer in-one combinations, no front-loading washers. With other words the total appliance DESERT ! Now I am coming to the point. I am building a house right now. All the (european type)applicances I like to have, I have to buy through some major (almost black-market) type deal, because what is mainstream in Europe is NOT mainstream / very hard to come by and is always called GOURMET in the US. THE SAME is true for cookware (e.g pots and pans, silverware, knives AND Steak knives. Nothing cuts around here :-) except some European designed knives. Apparently, it is very hard to find stainless steal cookware (pots and pans) in the US with tempered glass lids, an itemn that has been standard in Europe for 15 years, why is that ? To get back to the steak knives, we owned these for several years, they are great, fit good to our other Sambonet (Italian styled silverware) and really do cut, without the UGLY woodenhandles and "chromed" plates. I can't even find a decent corkscrew in this country ! This is really pittyful, BUT on the other hand the land and the houses are cheaper :-) "Come on America", get to work and clean up this mess in your appliance, kitchenware and knive offerings, I know you can do it ! You went to the moon for crying out loud, why can't you design us some decent 21st century style appliances, pots & pans, AND KNIVES ? Until this day will come I HAVE TO RECOMMEND, brands like BOSCH, Miele, Krups, WMF and these steak knives from Henckels or Zwilling as they are called in my native Germany. There is nothing better in this country in this segment, but these knives. Believe me, I have done the research ! I own 16 of those(you know when friends stop by for some steak dinner) If I were you, buy as many as you can, while they still exist ! Fact: The best beef is in America, that's why I am here too, but I have to cut the american beef with German knives for the time being. :-)
If you are expecting to use the knives to actually cut steak, look elsewhere. The blades are not particularly sharp - they rely on the sawing action of the serrations. If you don't have firm grip on your fork these knives will just drag your steak around the plate. The knives don't cut, the RIP through the meat. The small serrations quickly become clogged and any semblance of cutting disappears. My wife has some steak knives she got years ago as a premium for buying a full tank of gasoline... these knives, with a few strokes on a good stone, will cut a 1 inch steak in a single pass - something you could NEVER accomplish with the Henckels.
I wanted a good cut from a dishwasher safe knife. Cool thing #1: The 8 J.A. Henkels steak knives I ordered have been washed nearly every day in the dishwasher for about a month now, and they still look great and are as sharp as new. Cool thing #2: One piece = no seams to get food caught in, or hidden places for rust like the wood handled ones. These get used for prepping veggies, and all sorts of times where a paring knife is needed, without concern of "NOT THE NICE KNIVES!". Cool thing #3: These are a nice, basic, simple design. Don't even waste your money on cheap knives, ever. Get one set of good ones, and have them for years, like chefs do. What knives do you really need? An 8 inch chef's (This is a 12, frankly a bit of overkill except for certain applications), a paring knife of the same quality, a block to store them (OUT OF THE DRAWER please) and a steel. A diamond block to sharpen is also a must unless you have a true professional sharpener in your area (the factory guy comes to our hardware store yearly and makes them practically lethally sharp; you may not have such an advantage.) Get a good chopping board; a huge plastic one is a great choice, as you can wash it and sterilize it easily. 12 inches is a bit large; I prefer the 8 for most applications. However, for vegetables and Chinese foods, this is a super size. The handle (very important) is well designed and comfortable. BE WARNED: you must NOT chop chicken bones or you will damage the fine edge. If you want to chop and debone meats, get a cleaver or boning knife. I like a Chinese cleaver for this type of work.
