This is a classic French chef's knife, with a broad blade and curved cutting edge for rocking through a chopping task. Its 10-inch blade suits strong and/or big-handed cooks; those with smaller hands might prefer an 8- or 6-inch knife. Classic three-rivet handles distinguish Pro S from Henckels' other quality lines: TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. The steel used in the Pro S line is identical to that of the Five and Four Star lines. High-tech welding of larger knives combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics: a hard edge; a strong, stain-resistant bolster; a stain- and corrosion-resistant tang. i'm not a professional chef.
this knife is my 1st full tang knife and my 1st 10 incher.
an 8" stamped knife was what i used then.
there is a considerable difference in feel and took me a couple of days to adjust to it.
it is a well balanced knife and feels smaller than it actually is.
its heft becomes an advatage as soon as you learn how to use it.
instead of applying more pressure as you cut, use the weight to penetrate as you glide the blade.
a relax but secure grip is all you need.

but because of its length, you might want to consider a proportionately big board of which i have.
the slim sharp tip is useful for smaller things and its height at its widest end is high enough to clear your knuckles off the board.
the blade is well bowed for rocking motion.
however i do agree with the other reviewer eric, that this knife does not have a good factory edge on it.
a good whetstone and a good honing steel is a must.
i did not find it difficult to sharpen to its optimum and regular swipes with the honing steel maintains its edge pretty well.
i hone it every after use.
since it's bolster runs all the way down to its heel, i suggest that when sharpenning with a stone, start from the heel and on towards the tip, very much like how you would steel hone it.
as for the grip, well it really depends on the size of your hand and a matter of personal preference.
the only 1 thing that i feel henckels should improve on are the edges of the back of the blade and the corners of its bolster.
both the edges and corners should be rounded off for a smoother and a more comfortable hold.
i don't advise this but i used a metal file rod to round off those edges which surely made a difference.
its 9" version is another good option.

4-0 out of 5 stars a very very good BIG knife
This is the knife I find myself reaching for most often while working in my kitchen. Why? 1) it feels right in the hand, it is well ballanced and the grip fits my admitedly beefy hands quite well. 2)The excellent ballance makes it feel like a smaller knife in my hand, that is to say I have no touble using it even for semi-precission tasks. This makes it very versitile and I don't find myself switching knives for every task. 3) I find that a few passes across the diamond steel brings the blade up to razon sharp. Once honed on the diamond steel I can prepare meals for hours with only the occasional pass across the diamond steel to maintain the edge.

All this said, I will say that the high carbon content of the Henckels knife makes the blade quite hard and if you let the edge go entirely, you will need to find a professional to return the knife to razor sharpness as doing it yourself is very difficult.

A side note: I do not use a "regular steel" with any or my knives. They are not really intended to "sharpen" a knife but rather to straighten the edge. The diamond steel will give thes knife back its edge and does so quickly and rather gently at that.

4-0 out of 5 stars An Excellent Knife, But There Are Limitations
First, I'm a big guy - long arms, big hands, and I tend to favor tools that are somewhat oversized. This knife clearly fits the bill. The blade height, the handle length and the overall heft contribute to a really secure feeling. I find the Pro S handle easy to work with and more comfortable than the Gran Prix and Four Star handles.

These things said, I don't think the blades come wih a particularly good factory edge on them - I've found that even cheap stamped knives like Victorinox are better in this regard. I also find that, despite being high-carbon stainless, these knives are harder for most users to sharpen. They're slow to take an edge, in my opinion, and they hold it less time than a comparably priced knife from, say, Wusthof-Trident. You'll want to have a good steel and a good stone to keep the edge on this knife - steel it before every use, and store the knife on a magnetic rail, not in a drawer or on a block. While it's a lifetime-capable tool, you will not be able to treat this knife like a Ginsu and get high performance for very long.

This is perfection. You will never use a better knife. Unlike many other high quality knives, this knife also has weight to it that makes it more balanced. Plus, it's high enough quality, your grand kids will fight over it as their inheritance. This is the only tool I will ever call perfect....

I've had one of these knives for about a year and look forward to using it everytime I cook. Chopping is no longer a chore, it's entertainment, as this knife slices and dices like no other. It's nice and tall, so even with my large hands I can easily rock it and dice without hitting my knuckles on the cutting board. The blade is heavy and maintains an edge well, though I recommend getting an electronic sharpener to keep it perfectly honed. It is well balanced and the handle is comfortable.

This really is the Mercedes Benz of knives, and although the cost is high, I trust it will last me for many decades to come. Worth every penny, and puts a smile on my face everytime I use it. ... Read more

When someone bought me a set of *good knives* for a gift this was included. They thought, and I did as well, that this was a knife sharpener. After 8 months of use resulted in some very dull, expensive knives I asked a friend about it.

These tools are excellent for what they do but they dont sharpen, per se. As the knives are used the blades lose their *straight* edge...you cant see it with the eye but it effects cutting. These will perfect the edges between uses, and probably prolong time between sharpening a bit but they wont make a dull knife sharp.

This is a very good model. I dont have any experience with any other ones. Many appear quite similar so its hard to know at times what makes one better than the other. This handle is very comfortable to use. Solid when you are holding it in one hand, and a knife in the other.

Personally, it isnt something I find totally necessary in the kitchen but i know many do. For them this would be an excellent product

As a honing steele, this atractive product perfecly performs the task of realigning the blade. I have the 22 knife big block and it sits in that perfectly. It bottoms out in smaller blocks with the tip of the steele making fairly harsh contact with whatever material is under the block. Could chip a tile counter.

This is useful for setting up the edge on an already sharp knife, but don't expect to sharpen a completely dull knife with it.

It's good to get a pro to show you how to sharpen a knife and set an edge.

If you do it right,when the knife is properly sharpened and set, you can slice a piece of paper easily, as if with a razor. If the edge is set wrong, the paper won't cut or will saw unevenly.

So after you sharpen the knife, use this steel to get the edge set exactly right. It puts on the finishing touch and makes a real difference. ... Read more

5-0 out of 5 stars Fantastic bargain on a great knife
This is the go-to knife for just about everything: slicing tasks when the paring knife just isn't big enough, cutting vegetables where you need more control and precision than a larger chef's knife would give you, and even cutting open the occasional box now and again.

It's a great length (not too short, not too long) and has a substantial feel to it. It has well-forged blade and while it's not a Pro-S or a 4-star (and it shows a bit: though it doesn't matter, the finish isn't as nice), mine lasted through two years of heavy use befor needing a professional re-sharpening. And it only needed it a little bit then -- it was still sharp enough to be safe and effective. Mine never stained, and clean-up just involved hand washing with a mild detergent. As with any good knife, you shouldn't put it through the dishwasher.

At this price, I don't mind keeping a couple of these around. The older one gets abuse (opening those boxes and cutting into avocados, during which I often hit the pits) while the newer one gets reserved for more traditional tasks.

The Classic series knife was the third individual henckles knife that we purchased. Previously we had purchased knives from the Eversharp line and were not happy with them at all. This knive was a pleasant surprise and led us to experiment with more of the Henckles line until we ended up purchasing a Pro S series set that we absolutely love. Although the Classics are not as sharp as the S series knives they are much more affordable and are very good strong and sturdy knives. The 6 inch utility knife is a great all purpose knive that I find myself reaching for more than any of the others.

This knife is one of the best products I have purchased as of late. The balance and superior feel of this knife puts it into a class of its own. Other than an occasional pass over a steel it has maintained a great cutting edge. The small size enables you to easily tackle many small jobs that a larger cooks knife is just not practical for. I bought a collection of Pro-S knives about a year ago and never thought this one would be the one I used the most. It is great for use as advertised - peeling, strawberries, etc. But what they don't tell you is how many other things it is useful; cutting chicken legs and thighs, cutting away the ribs from prime rib, and any task where you need to cut something you can't see. Mine dropped on the floor and the tip bent today - definately want to take care of this knife - and if it doesn't straighten out right I guarantee I'll be buying another one.

I used this knife at a friends house. The balance is great. You can tell this is a quality knife. The small tip end is great for coring strawberries. The slightly wider area by the base makes it nice for pealing thin skinned items such at potatoes. This is a must for anyone that picks strawberries to core and freeze. I have owned this particular knife for 5 years now and it is one of my favorite and most useful knives. As a professional chef, i own several boning and filet knives both curved, straight,and stiff and flexible. At 7 inches it is long enough tobe used for everything from trimming tenderloins to cutting through tuna loins. it has a decent heft and the handle is large enough to fit my hand (a problem i found in other knives) another feature i enjoyed with this knife is how smooth itis without any crevices to harbor microorganisms in its handle or bolster. My girlfriend on the other hand finds the blade a bit too long for use in our home. prefering the 5.5 inch pro s boning knife. I also enjoy the slight flex in the blade it allows me to use knife in situations suitable for either a flexible or a stiff bone. All in all it is extremely useful in a professional kitchen and not a necessity in a home kitchen but it is very nice to have in both settings. ... Read more

We bought this knife several years ago, and since then we have been buying other Four Star knives from open stock. This particular one is our favorite knife. We use it daily, usually several times. It keeps an edge, looks good, is comfortable in the hand, and is just the right size for most of our kitchen tasks. Very handy.

Some time ago we accidentally left it too near a burner on our electric range, and the handle melted horribly. Even so, we still use it in preference to any of our other knives including any of our other Henckel's knives. Guess what my wife will get for the next gift I buy her? Yep, this knife. Highly recommended.

The knife is solid and very comfortable in hand, however, when I got it new, the blade is slightly bent. I expect it to be in almost Perfect condition, but it's not.

Imagine my disappointment when these knives arrived and were light weight and poorly balanced.

Imagine my outrage when I was charged a $16.00 restocking fee in addition to a $7.11 postage fee!!

I have reread all of the return policy information, which is, A LOT, and no where is there any mention of a restocking fee.

Amazon seems to be losing it if they are going to screw people over when they send over priced and inferior merchandise!
