Balanced and powerful, these 10-inch shears have curved, high-carbon, stainless-steel blades for cutting apart poultry. One blade is notched to cut through bones easily. Handles are made of tough polypropylene and, for storage, they lock at their butt end with a short arm that swivels into place. The sturdy barrel spring between the blades ensures the blades move precisely. The blades themselves curve inward so they meet in only one place at any given position and cutting action is smooth and exact. For resharpening, the blades can be taken apart. I'm on my second pair of these shears. The first pair was inherited when I got married, the second was a gift to replace the first (due to the plastic catch falling out and the blades rusting).

In less than one year, the second pair is almost unusable. The coil that is supposed to spring them back into the open position has lost its bounce due to rust inside the coil. The safety catch works too well - it catches automatically almost every time I close the shears. This is extremely annoying when clipping through a chicken breast. I have to stop on every other cut to re-open the shears. Finally, the shears cannot be separated for full cleaning.

NOTE that this model has a different catch mechanism, but the coil does look the same.

This makes a very good starter set for me because I only needed to replace the 3 knives that I use everyday in my cutlery set. I am not a great chef but using these knives seemed to make me feel close to being one because of it's sharpness and smoothness. I believe in the saying "You get what you pay for". At first I thought these were a bit expensive for my simple lifestyle but once I've started using them, I felt good about cooking. Cutting carrots, slicing tomatoes and meat were a breeze, my wrist felt lighter. That's when I know I made the right choice.

Some might find the price to be a bit much when compared to other fillet knives, but believe me, this knife is worth every penny. If properly cared for, another will never be needed. I have been using Henckels knives since 1975 when I began working in a restaurant kitchen. At that time I knew nothing about the difference between knives, type of steel used or anything else. I've learned a lot since then and I am totally sold on Henckels products. I still own the first 8" chef knife that I bought from Henckels in 1975 and it is still as sharp as a razor (a good sharpening steel is a must). I received the 7-inch fillet knife as a gift just over a year ago and it is a tremendous addition to my collection. I now use my fillet knife almost exclusively to fillet fish - I spend a lot of time fishing - and it is important to have a very sharp, but still flexable knife to cut through or around bones as needed. This is especially true for filleting Walleyes, Bass, Northern Pike and Blue Gills. I've used other brands, and I can't really say anything bad about them because they worked. Perhaps for a novice, a shorter blade might be better to start with. But for my money, this knife is by far the best I have used and I prefer it over all others. ... Read more

This is a nice cleaver, but it is a tad small for all around work. I used one for a while, and prefer the 5 star cleaver. I wrote this review because someone said that the only difference between the 4 and 5 star is the handle. Not so. The 5 star is a 6" cleaver, while the 4 star is a 5" cleaver. The extra inch makes a huge difference. It can tackle larger jobs, yet does the smaller ones with less effort, and better control. I know that the 5 star description says 7" length, but that is not the blade length. It is 6". Trust me. Also, the 4 star cleaver advertises the use of the multi steel "welded, then forged" contruction that is supposed to offer good edge quality with ease of manufacture, while the 5 star cleaver is made of a single forging of their "ice hardened" Friodur steel. The handle is a personal choice. I prefer the 5 star handle for comfort and control, but some will prefer the other. I just wanted to set the record straight, and let prospective buyers know that there are real differences between the 4 and 5 star cleavers. Some people might need a larger one, but I have never met anyone who would give up a 6" cleaver for a 5" model. It's a cleaver, not a slicer.

This is a hefty, well balanced cleaver that tackles any job with aplomb, then cleans up in the dishwasher and stays sharp almost forever. It will not fit in any block though, so (carefully) arrange a space in your knife drawer for this beauty.

A 12-inch chef's knife is the largest made, suitable for professional chefs and serious cooks with good knife skills. Its curved, stainless-steel blade is perfect for rocking through chopping and mincing tasks; as a kitchen workhorse, the knife is also useful for cutting and slicing. Classic three-rivet handles distinguish Pro S from the company's other quality lines: TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. I'm picky! When I cook, nothing but the best will do. This is the best! Visitors to my kitchen are amazed at the size of this knife; until, I get it in their hands. It's balance is the best I've ever experienced. It is a joy! A must have for any cook.

Great knife. I own stainless sets of Pro-S, Grand Prix and Grand Chef. My favorite for the road is Grand Prix, because the knives are light, but my favorite set for everyday use at home is the Pro-S. This particular knife is as big as anyone could want for use in a kitchen. Great feel, balance and "rock," assuming you like the "shove-forward" type of chopping. Use a good steel, like the F. Dick, to keep it sharp, and this knife will last for 3-4 generations.

I have always used an 8 inch chef's knife for everything. Because the inexpensive knives I had, took so much work to put an edge on them, I only kept the 8 inch chef's and the steak knives sharp. I recently aquired a three piece set (with an 8 inch chef's knife) and this 12 inch knive. As a result, the new Pro-S 8 inch felt quite at home in my hand as I employed it for the first time. I found familiarity combined with great sharpness and quality. It was a Joy to sail through a pile of vegatables large enough to make 3 gallons of spaghetti sauce from scratch. Next the 12 inch chef's. It was suprisingly much less awkward than I thought such a blade would be to a novice like myself. It is very well balanced and takes care of its- self. When I get used to using the various blades for their appropriate tasks this Very Fine knife will perhaps be my "other" favorite. If you are a fan of melons this knife will be very handy. As with other Henckel Pro S knives, the blade is very sharp, and the handle is very well crafted. Because this blade will not fit in most blocks, I would recommend obtaining a blade cover/guard to protect both you and it before placing it in a drawer. ... Read more

This is a classic French chef's knife, with a broad blade and a curved cutting edge for rocking through a chopping task. The 8-inch blade suits most cooks; those with small hands might prefer a 6-inch blade and those with large hands might choose a 10-inch one. Henckels' International Fine Edge is an inexpensive cutlery line made in countries other than the company's home of Germany. These knives don't have bolsters and their blades are thinner and less strong. We liked this knife very much until the handle broke off while cutting pizza. Used for about 3 mos & never put in the dish washer or left submerged in water. I found the the knife required little shapening as the blade was hard & that portion in the handle was also hardened unfortunately and broke due to a brittle fracture. How do I get a warranty replacement?

This knife is a nice little multi-purpose knife. Like others have said it loses its edge fast, but is soft steel that sharpens quickly. This knife, however, is not useful for chopping or mincing. The bolster is too small and after chopping a few items you'll find that you have bloody knuckles, not very appetizing while preparing food. I bought this knife for camping but I don't find it as useful as a proper chefs knife.

I would definetly recommend it for the casual home cook, it is a very reliable knife, but if you are a cooking student invest more money you will want a more professional knife in the future

I bought this knife because I love my other, more expensive Henckels, and needed something in about this size. I figured I'd try the low-priced model to see how it compared.

Out of the box the knife had a great edge, and worked exceptionally. After a couple weeks of heavy use, however, the edge was all but gone. A quick run through a Henckel sharpener, however, and the great edge had returned.

You'll need to sharpen this knife a lot more than the more expensive versions, but if you don't mind taking the 10 seconds every other week to do this, you should be very happy with this knife.

I paid about [$$$] for this knife and have used it for a month now. it's a very good knife for this price. the blade is thin at the sharp edge and is thicker that the top; so it is sharp and strong at the same time. it's not carbon steel, so it will need sharpened once in a while but it doesn't take much work since the blade is thin.
