A curved blade helps cut tough homemade bread when that bit of crust at the bottom hangs on until the end. Straight blades tend to hang up at the tip. I'm not sure that you need to spend this much on a bread knife, but it's a beautiful knife that fits with the rest of this set and it's the better of the two.

First of all they are both Henckel Pro-S knives. They don't have bad points.

#1 The country knife has a slightly curved blade as compared to the straight edge of the regular bread knife

#2 The country is 1" longer (duh)

And the winner is . . . 8" Regular. The reason? They are both made by Henckels and both are top of the line. Unless there is a real need for an extra inch of cutting surface and slight curve to the blade for a couple of bucks more(and so far I can only see that holding a bigger knife is more spectacular), go for the 8" regular unless you really believe that bigger is better. ... This knife was bought for me by my husband from my wish list for Christmas to replace my old Henckels that accidentally got broken (trust me it took alot!) It is much heftier than the old one and took a few uses to get used to, but this knife is GREAT and for the price, just can't be beat. I'm one to take my knife with me when I travel, as I tend to cut myself when using "foreign" (Inlaw's) knives. So this one will be now travelling with me every summer and of course is my "daily driver"!!

I work in a production kitchen and use knives of varying size everyday.

I purchased this knife so I could have ny own knife that would remain sharp and remian in good repair.

On The "maiden voyage" this knife proved to be an invaluable ally. I needed to prep some vegetables for a fruit paltter, and this knife made the job abreeze! First time I had ever made my own fruit platter, adn I received compliments from our executive chef on the quality and uniformity of the pieces in the display!!

Henckels is known for making quality knives and that quality is even evident in this less expensive line of knives. I always hesitated to spend $20-$30 on a paring knife, but no more! I have been using this knife daily for nearly two years. I have others, but always pull this one out. The size is perfect and it's easy to handle. Well, I must tell you, I totally adore this knife! It is my best friend in the kitchen and I use it pretty much for every kind of food except bread cutting. I could not afford to buy the whole set and decided that if I could have one knife that cuts just about everything I would be a happy gal. I am totally satisfied with this knife and recommend it highly.

Zwilling J.A. Henckels "Pro S" cutlery is by far the most advanced on the planet. Hand-crafted in Solingen, Germany since the early 1700's. The blade is high-carbon steel, ice-hardended by Henckel's proprietary FrioDur process. The blade is then laser-honed to tolerances of less than one-thousandth of an inch. The black acrylic (?) molded handle is permanently bonded to the full tang (which is fully visible all the way around) then riveted. Not only does this create a virtually indestructible knife, it is also quite attractive. The handle is perfectly suited to how the knife should be held...even a novice can effectively use them as if by second nature. The weight is just right - not so light you can't control it, but also not so heavy that you can't work quickly. All in all, the tool feels like an extension of your own hand. The blade has a nice curve, suited to many cutting applications like dicing, slicing, chopping, etc. Cleanup is a breeze, thanks to the highly-polished blade.

Henckels may seem a bit pricy to someone who has never experienced the pleasure of their use; however, you will soon see that they quality of the craftsmanship is well worth it to pay a little extra. To sweeten the pot, they are unconditionally guaranteed for life; if you can manage to break one (and congrats if you succeed...quite impossible) they replace it. If you keep the blade properly sharpened (Sharpening Steel . . .))they last. You'll want to keep them in a block or get one of those nifty magnetic strips - throwing them in a drawer exposes their precision edge to damage.

Compared to Wusthoff, I'd say these rank a little higher. Design is more attractive, more solid feel, better reputation.

All I can say, in summation, is watch your fingers...these knives bite!

This steel actually works very well out of the box. The trouble is as stated above, the diamond dusting wears off in no time at all. I used this for two weeks at my job on high volume carving stations w/2 Henckels 5-star 10" Granton Roast Slicers, & at the end of two weeks the dusting was completely gone on both sides. If you were to use this at home it would of course last much longer, but still not nearly as long as the Henckels Pro-S 12" steel I replaced it with. This knife's best at slicing tomatoes and other veggies. It's a bit short for cutting big peasant loaves, and the straight blade makes it harder to cut at an angle down through the bread, since the sharp point, while great for starting a cut through an obstinate veggie skin, can get stuck in your cutting board. The serrations work great, however, slicing through both crust and soft inner breadness.

After buying a bread machine, we now no longer buy our bread. Everyone (children and adults) cuts their own bread, at the table, to the slice thickness they prefer. With my old bread knives, the slices quite often came out looking like an ocean surface (waves and all). After upgrading to this Henckel (to match my other Henckel knives), we can now all cut straight slices. It doesn't matter if the bread just came out of the bread machine (yum) or if the bread was baked yesterday. No longer is the French bread (hard crusts) squashed while we try to slice it. This a wonderful manual tool to have in your kitchen. This garlic press is solidly made, well-balanced, and feels good in the hand due to a clean, functional design. It is true that some garlic pieces will ooze out the sides, but this usually happens if the grid compartment is overloaded. I so enjoy this tool because the removable grid slips out fast and is easy to wash. Immediately after using I give it a rinse under running water to remove the small garlic particles. This is a tool I have come to depend on almost daily. Last week in the rush to evacuate from hurricane Isabel I forgot to pack this favorite kitchen tool and now I am about to order another one to use in my out-of-state sanctuary.

I have had this model for about a year and a half now and say that, while it gets the job done satisfactorily, I wouldn't recommend this model. Garlic squishes out the sides when it is used, doesn't work well with unpeeled cloves, and having the removeable attachment is more of a pain in the rear than a useful detail. It is not particularly easy to clean as well. I only use it when I want the garlic minced really fine.

Distinguished by 18/10 stainless-steel, satin-finish handles, Twin Select knives embody Henckels' world-renowned craftsmanship. Henckels uses a high-tech welding process to form the knives in its first-rate cutlery lines. This process combines three types of high-carbon stainless steel into a single piece so that each part of a knife--blade, bolster, and tang--performs optimally. This 7-inch santoku is a Japanese chef's knife, a low-tip style with a broad blade. The cutting edge is less curved so the santoku provides less rocking action than a European-style chef's knife, but for straight-down slicing and precise chopping it's superb. Shaped like a gentle wave to fit the hand snugly, the ergonomically designed handle contains a full rat-tail tang and is fully watertight with no gaps. My husband just came out to start cooking, pulled out this knife (we own all the twin select series knives) only to find 4 (yes FOUR!!) huge splits (if you will) in it! The blade broke in 4 different spots.. you literally could (if you dare to) spread the blade apart where it split! We are planning on calling Customer Service about this on Monday but could not believe out of no where this happened? My husband loves this knife... we joke that I'm not allowed to touch very few things of his- one being his tools and the other this knife. He sharpens it routinely as per the directions, so we are completely dumbfounded by this. My husband thought it was a piece of hair at first because it was a fine slit. Anyhow, I doubt this is something that happens often, otherwise I'm sure this company wouldn't be one of top ones out there. I hope Henckels compensates us for this, only after assuring this isn't their norm. On the brighter side, all of other knives seem to be just fine and are unbelievable when it comes to cutting.
