High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than high-carbon stainless-steel knives. Edges are ground razor-sharp at a more acute angle than traditional European-style knives. Although Global also makes a "heavyweight" line, its original knives--of which the three knives in this set are examples--have thinner blades and are lighter than traditional knives. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation.

These three knives--an 8-inch chef's knife, a 5-1/2-inch cook's knife, and a 4-inch paring knife--equip a cook to perform most basic kitchen tasks. The two smaller knives' wedge-shaped handles are particularly well engineered for grasping securely with a relaxed hand. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. --Fred Brack ... Read more

5-0 out of 5 stars Keen, Klever, Kwick, Kitchen Ka-nives - GO GLOBAL!!!
I recently purchased a whole set of these knives after doing MUCH research on various
brands, materials they are made of, and general sturdiness and price. My favorite is the Japanese Chefs Knife (ALSO CALLED SANTOKU) But I also love these three selections. If you are looking at purchasing ONLY ONE global knife I recommend the Santoku, but if you are looking at two, get this set! It is a STEAL!

YES, Global cutlery is EXPENSIVE! But compared to Wustof or Henkels, these knives
outshine, outsparkle, and outperform them by a longshot. Comparable in price with Wustof
and Henkels, for just a bit more money you can own the GOOD STUFF! An acquaintence of mine owns an upscale restaurant and he just replaced ALL of his Wustof knives in the kitchen to these GLOBAL GREATS!

Global knives are made of one, solid, sturdy, but amazingly light piece of steel. Very
balanced also! No worrying about wood or plastic handles, tangs or rivets here, nor
cleaning! They clean up like a breeze.

I love my knives and I know they will last me a lifetime. If they break Global has a lifetime guarantee!

Remember, my friends... You get what
you pay for and these beautiful and professional knives are worth their weight in gold! SO... Go Global, my gourmet gastronomical babies!

5-0 out of 5 stars Looking for a good home for my old Wusthofs
The only thing better than the way the Global knives cut is the way they look. I have been a diehard user of Wusthof Trident Gran Prix knives, but since I bought this set, I have stuck my Wusthofs in the drawer.

The edge on the blades is phenomonal, and I have yet to use the ceramic stone I got with this set. I have decided to replace all of my old knives over the next few months.

4-0 out of 5 stars Cool, light, high-quality but not so ergonomic
The look is stunning, the blade quality is very high and the weight is much lighter than other knives. But the handle is not so ergonomic as some other knives (I like the twin select from Henckels) and gets quickly uncomfortably warm when I use it. I would recommend this knife to women due to its lightness and, of course, to design-lovers.

5-0 out of 5 stars Love Global Knives
We already had a Global Chef Knife when we got this 3 piece set last Christmas. We tried Global after buying a dissappointing Henkel. We are now diehard Global fans. When I visit people's homes and they have dull knives, I am further in love with my Global. It makes such a difference to have a good knife when cooking! Pay bon marche bon!

5-0 out of 5 stars We look for any excuse to use them
This may be a repeat of what you have already read, but these are by far the best knives that I have ever used. My wife and I started out with a Sabatier starter set (Chefstar), and the set was great, especially for the price. About a year later we got this set as a gift, and we literally look for reasons to cut food. These knives, along with an awesome set of cookware, are a wonderful cattleprod to direct anyone into cooking more at home.
Cutting meat is like passing the blade through water.
You know that the construction is solid. There are no joints in the knife at all.
Finally, the design of the knives goes quite well if you use a lot of stainless steel in your kitchen.
Just to beat a dead horse, these knives are the closest to the Platonic ideal of anything we own. ... Read more

Many professional chefs are replacing their traditional heavy German knives with lighter Japanese-made cutlery. Manufactured from a hard grade of stainless steel, the blades on these knives are face-ground with a long taper and at an acute angle to produce long-lasting razor-sharpness. Thestainless-steel handles are seamlessly constructed to the blade and indented with a dimpled pattern to make them slip-free. Metal or sand fills the handle to provide the proper balance for cutting and slicing.

This full set includes an 8-inch chef’s knife, an 8-1/4-inch carving knife, an 8-3/4-inch bread knife, a 5-inch chef’s utility knife, and a 4-inch paring knife. All cutlery safely fits in the included stainless-steel storage dock, which rests horizontally for in-drawer storage. All Global knives are covered by a lifetime warranty against breakage and manufacturing defects. --Cristina Vaamonde ... Read more

5-0 out of 5 stars Amazing knives
These have got to be the sweetest knives I have ever used. I used to use a Henckle chef knife, but it doesn't hold a candle to the Global.

I only have two beefs with these knives:

1) They are so sharp that they can leave deep gouges in your cutting board if you are careless (especially the serrated while cutting bread).

2) The knive handle is more difficult to dry because its dimples like to retain water. When it is wet it can create an unusual tactile sensation in your hand.

These are minor things though. The bottom line is that the knives make cutting and chopping a pleasure.

And they look cool too!

5-0 out of 5 stars Fiercely sharp, yet light and elegant
The Global 5 knife set features the standard lightweight, ultra sharp knives which make the Global name famous. The addition of a knife dock/rack makes storing your knives even easier. The set starts with the basic 8 inch chef knife with a slighly flexible blade that can be used to chop vegetables or fillet a fish. The set contains a number of additional blades from a bread knife to utility and paring knives. The first thing you'll do when you get these knives is test out making paper thin slices of everything in your kitchen. Pretty amazing. The one thing some people have rightly pointed out, is that for people who want a heavier blade, or a larger handle, look for the thicker blades such as the 8 1/4" forged chef knife. However, if you want to make all your cutting, chopping and prep work go quickly and easily, this is a wonderful knife set.

5-0 out of 5 stars Global a world-wide hit!
Having worked with knives for some time, I am strongly biased toward the Global knives. They have great balance in your hand, are incredibly sharp (and stay that way!), and provide overall utility in a knife that is a bit smaller and lighter than the competition. My wife was initially against me getting these, and now uses them regularly and prefers them to any other brand by far - she said "even if these cost more, they are definitely worth it". I have a hard time working in anyone else's kitchen with even expensive German knives, they just don't have the same great feel. The narrow blade and sharp angle of the blade must have something to do with why they cut so well. I am not a designer, but they certainly put it all together in a well designed knife that is well-suited to even the most descriminating cook. I cannot imagine anyone being disappointed with these Global knives.

5-0 out of 5 stars Global Knife
I purchased a Global knife approximately 1 year ago. It is the best knife I have ever purchased. The balance in the knife when cutting is exceptional. It is almost like cutting air. The dimpled surface of the knife makes it easy to grip.
Over all an exceptional knife. ... Read more

Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Thinner blades result in lighter knives. (Global also makes a "heavyweight" line for cooks who prefer hefty knives.) Though most Global knives have hollow handles, the handles on the four steak knives in this set are solid. Their 3-1/2-inch blades are finely serrated on one side. They also are among the few Global knives with bolsters.

Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. 5-0 out of 5 stars Absolutely The Best Knives For Pro or Home
I was a commited fan of Henkels, Trident, and Sabatier until Global knives were recomended by a professional I trust. I'd been battling carpal tunnel syndrome and many of my knives were just too heavy and unbalanced for steady use. I began with two of the vegetable cleavers/knives and continued to buy more. They are as sharp as razors and hold an edge beautifully. The edge is very different from that of European cutlery, so you must learn a different sharpening technique, but that comes quickly. If you are thinking of buying premium knives, be sure you try Global.

5-0 out of 5 stars The perfect knives for light and heavy kitchen duties.
Global knives are always tops for reliability and durability, and they are the only knives I use. This particular set gives pretty much all the average household will need, and they require little maintanence.

The two knives I found most useful are the Chef's knife, which is the one you will use the most, and the bread knife. The Chef's knife is lightweight and razor sharp, and can be used for anything, from cutting tough meats to finely chopping viggies. The bread knife is excellent because it doesn't dull as quickly as most bread knives tend to. Nothing kills me more than a fresh loaf of bread getting crushed because the knife wasn't sharp enough to cut from the top.

The other knives in the set, such as the carving and paring knives, are also very useful, depending on what you are cooking. All knives in the set come with Global's trademark handel grip, which makes gripping the knife easy, and there is less chance of the knife slipping, possibly lopping off a finger. You can't beat that.

For the price, this is quite possibly the best knife set you can buy. The knives are top quality, and will require only the occasional sharpening. For someone who is considering a career as a professional chef, this set is indespensible. But for any household, this is also a great and practical investment.

5-0 out of 5 stars Great knives, take a beating
Not a pro or anything, but I love these knives. . . got them after having a Chicago Cutlerey set, and these are vastly superior - work great, look great. But another great benefit -- for kitchen clutzes like me, no wooden handles to get trashed from soakings or dishwashers, and no plastic to accidentally melt on stove burners, etc. The all steel construction is the way to go. I also highly recommend getting a magnet bar to show them off in the kitchen :)

5-0 out of 5 stars Best Bet
In the Culinary area I have used many different knifes, I love the globals. They are well made. They have great balance, not too heavy. I have used knifes that are as well balanced as Global but they wieght was too much. With the Globals you get great balance with a perfect wieght. ... Read more
