Although steels often are touted as sharpening tools, fewactually sharpen knife blades, but they do perform the vital task ofrealigning, or resetting, edges, which bend when contacting a cuttingsurface or other hard object. Because this tool's chrome/vanadiumstainless-steel rod contains hundreds of thousands of diamondparticles, it's hard enough to somewhat sharpen a blade. Using thissteel won't replace a professional sharpening job, which proceeds fromcoarse grinding to ever-finer grinding at tightly controlled angles.However, it will lengthen intervals between sharpenings better than asteel without diamonds because it accomplishes the final task of aprofessional sharpening, which is polishing the edge to a finepoint.

Exceptionally well made, this tool's rod has a solid core and has beenplated with hard chrome for additional resistance to abrasion and toextend its life. Because the rod is a 3/4-inch-wide oval, it exposesmore surface and works quicker than a cylindrical rod. This is a steel made expressly for Global's Cremova 18 and Molybdenum/Vanadium stainless steel blades which is harder than the average German stainless steel. This is a large sized stone with a good non slip base. The honing surface is reasonably thick, and very uniform. A minute of honing will turn a factory edge into a razor edge. No gimmicks, no bull. You see the results of your effort right now, and quickly learn to fine tune your technique. Unless you have very badly abused blades, this stone and a good steel will be all you need to keep an envious edge on your knives.

It's easy to use and it does a great job with my Global knives. But it also works with other brands of knives if the blades are thin enough to fit into the slots. I regularly use this sharpener on paring knives. I find it is easier to set up and use than my expensive, electric knife sharpener.

This is a great aid to sharpen Global knives. I disagree with the review that said it dulled the knives. The tool has ceramic wheels set at the proper angles to get the correct Japanese set to these knives, which have different angles to each side of the blade. After 8-9 passes - with no pressure on the knife - through the rougher and then the finer wheels, the knife is ALMOST back to factory condition. Then, it is necessary to use a fine DIAMOND hone to get that last degree of razor sharpness. And make no mistake, a properly sharpened Global knife is that sharp, and this tool makes it easy to keep them razor sharp. Instead of a diamond hone, you can also use a very fine waterstone to hone them, but trust me, the diamond hone is easiest, although it does not leave the edge quite as polished as the finest waterstones. This tool and a diamond hone let me return my Global knives to scary sharp in less than 5 minutes each. They are so sharp that whenever I sharpen them, I warn my wife that they are super sharp (as opposed to very sharp!), just to make sure that she is extra-careful when she uses them.

Now, having said that, the package states that it is recommended for Global knives, and no one should use this tool on anything other than Global knives, or similar Japanese-style knives. It is not meant for European-style knives, whose blades have a different set.

3-0 out of 5 stars A very expensive gewgaw
Before you buy the Shinkansen Sharpener for your Global knives you must understand that it doesn't return the blades to their factory sharpness.

When I first bought my Globals I was warry of using my old ceramic stone on their extremely acute edge, so I bought the Shinkansen Sharpener to go with them. When they arrived, the knives' sharpness lived up to everything that's said about them, but after I ran the chef's knife through both slots several times... the knife got DULLER! Repeated use did not do any more harm to the blade, but it never improved either.

It seems that, because of it's simplicity, the Shinkansen Sharpener is best for returning very dull blades back to a servicable edge, but it will never get them really sharp.

5-0 out of 5 stars Sharpens an unsharpable knife...
Good sharpener...keeps the knife at the right angle, grinding the front more than the back (as Global advises), with no chance of harming the blade.

If your Global has gotten particularly dull, it will take a while to get sharp...like several 'applications' (an appplicaiton is about 7 pulls from each grind). If you blade is damaged, you'll have to use a stone.

Overall -- its a good little tool.

First off I would like to say that these work as advertised and are a wonderful tool. They help immensely when sharpening your Globals. That being said, I do have one minor complaint about them. They grip the knife too tight. When you slide them on to the blade they leave a decent scratch. Granted, this isn't the end of the world and by no means reduces the quality of your knife, but it's quite frusterating to see scratches running along the tops of all your brand new (and expensive) knives. If you are interested in buying them, get them. They are great! I just wish someone had warned me about the scratches first.

i cook every day and i love sharp knives. i've always loved sharp knives. it makes cooking a much more pleasant experience. i am not the best person with a whetstone however. well, that was until i got these guides. now all it takes is a few passes on the stone and i get the exact factory specific angle on my global chef's knife. just like new. i can slice through anything with my new edge. gotta love something that can make sharpening fun. ...
