Its mirror finish gleams, and its black handles, including a loop handle for two-handed lifting, stay cool. Pressure cooking traps steam to heat foods at temperatures higher than boiling. An aluminum disk in the base, sandwiched by stainless steel, speeds the process even more through fast heat conductivity. It's safe on electric, gas, ceramic, and induction stovetops. Little water is required, so nutrients, flavor, and color are not boiled away. Vegetables emerge vibrantly colored from the steamer insert. Stews, soups, beans--even meat loaf, pork chops, and desserts such as bread pudding--come out tasty and nutritious. (A booklet containing dozens of recipes is included.) The construction and finish of this cooker are excellent. It is made of stainless steel, with a thick aluminum plate at the bottom to spread the heat. This is a useful feature. Typically, pressure cooking requires high heat initially to quickly build up steam pressure before you turn the heat down. That is when food can burn and stick to the bottom of the cooker. This cooker spreads heat very well. So long as you use the prescribed amount of water or other cooking liquid, this cooker will not burn food at the bottom. There is a two-level steam pressure indicator on the lid. The cooker comes with two booklets containing recipes, and a very comprehensive list of recommended cooking times for all sorts of meats, poultry, vegetables, beans, etc. If you follow directions, the cooker does not whistle or otherwise make any objectionable sounds. I can barely hear it from 10 feet away. Of course, if you forget to turn down the heat after the cooker is up to full cooking pressure, it will release a loud burst of steam. This is a safety feature. The cooker has a shield on top of the lid to direct any escaping steam downwards, so there is no danger of burning your hands. Kuhn-Rikon recommends using nylon spatulas to maintain the mirror-like finish, but you'll find them sadly inadequate when, for example, browning meat. I use a heavy gauge steel Calphalon spatula and steel tongs. After several months, I can see minor scratch marks inside the cooker, but the outside is still bright and shiny! Anyway, cookware should be designed to take this kind of handling -- it is meant to be useful rather than decorative. Stainless steel is the best material to withstand normal levels of use and abuse, and this cooker handles it well. Keep in mind that a pressure cooker can't be filled to the top when cooking. It should never be more than half or two-thirds full, so the 5 liter capacity translates to about 2.5-3.0 liters of usable capacity. If you cook large quantities, you might want to get a bigger model. This is a relatively expensive cooker, but it is well worth the money.
We use ours to cook all kinds of stews, soups, casseroles -- you name it-- and they turn out just as good as the versions cooked for hours. Moroccan lamb stew, chicken cacciatore, braised lamb shanks, and many more recipes have all been delicious. And they all cook in 30 minutes or less -- yes, that's right -- half an hour. The prep time usually takes a preliminary half hour, so a great meal in 60 minutes with no fuss.

With this model you don't have the steaming and the hissing, moisture leaving your dinner. This baby is so _very_ quiet.. I have made so many meals with this cooker, and my wife loves it. Regulating the temerature is easy, the two bars (high and low pressure) are so very easy to read. Just adjust the heat. I had an electric stove top first, it was harder to use with a pressure cooker. Now I have gas, and easy easy.... Of course, I needed to cook more than goulash...Great value, more than yes! Quick cooking, good cooking. Do yourself a favour, this is a great buy...
If you want to buy a flame tamer for your cooker (highly recommended), please get the Kuhn Rikon one! It's a bit expensive, but the two other ones I tried ended up in the trash can. I also recommend buying an 'Ohsawa Pot'. When you make rice straight in a pressure cooker it is very sticky and can get stuck to the bottom. With this pot (which you place in the pressure cooker), you get absolutely delicious rice (especially brown and wild rice turn out great!).

My wife makes succulent turkey drumsticks in only eight minutes of cooking time. None of the other brands, we previewed, appeared to be constructed as well as the Kuhn Rikon models. Needless to say, our family considers this set a great value. More important,we use it almost daily.
I ordered the "Duo" set to get the glass lid and the smaller cooker. Though I didn't need another 5L, it is quite handy to have two (I use it without pressure for cooking pasta or some soups.) The smaller (2L)size is wonderful for quickly cooking cereals, small quantities for babies or kids, or side dishes. The recipe book provided with this set is extremely helpful and detailed, so don't be put off by having to learn the cooking techniques (Note to Kuhn-Rikon: a video or CD-ROM would be wonderful! I received a marketing CD-ROM a few years ago but IMO it should be in the box.) It can be tricky to convert recipes, the book contains thorough charts with cooking times for most foods, and once you get the basics down you'll be ready to start experimenting with your favorites. If you would like to cook with more whole grains and beans, this is a must-have. If you want that slow-cooked tenderness, but not the boring taste of Crock Pot cooking, pressure cooking is for you. Unlike the Crock Pot, the PC allows you to start with a saute', use the pressure to speed up your cooking time, and then add more delicate ingredients at the end so they stay crisp and colorful. Also, on a hot day like today, I appreciate that the shorter cooking time uses less energy and doesn't heat up the kitchen! At first I had a hard time finding good PC recipes, but lately there seem to be more cookbooks coming out as the PC seems to be enjoying a bit of a revival. I just ordered Rick Rodgers' "Pressure Cooking for Everyone" and am happy to see more recipes for "gourmet" foods as well as everyday meals. My only complaint, and it's a small one, is that I wish they sold custom cooking inserts for puddings and cheesecakes. The standard method is to cover your springform pan with foil and make a "harness" from foil to lift your pan in and out. You end up wasting a lot of foil, and it is easy to accidentally dump your dish on the way out. It would be great if they made an insert with a lid and handles to make this easier. It would be hard to find a more versatile cooking tool, and I'm newly in love with my Duromatic(s) again after receiving my new set. BTW, the 7-year-old set is still perfect, not even the gasket has worn out, although it looks a bit shabby compared to the new styling and shiny finish of the new set. I can't say enough good things about Kuhn-Rikon or Duromatic. Give it a try! Here's to healthier, faster cooking in your home!

The things to know are: It's that simple. I will never go back to the outdated can openers.
I couldn't bring myself to give it five stars because: You can't squish the water or oil out of a tuna can with the lid, since the lid won't push down into the can. And even though I've had mine awhile now, I still find it difficult to get the opener positioned properly. Finally, it appears some lids are originally put on with some type cement, which seems to be a bit like rubber cement, and cutting the can from the side exposes this stuff. | |
