We enjoy wok cooking several times a week and have gone through several "off the shelf" electric woks. Manufacturers had not yet produced a heavy-duty electric wok until now. The Circulon 14" wok is far superior to any similiar product we have found on the market - price included. The pan is heavy and retains heat exceptionally well. The controls are easy to use and offer the variety of heating temperatures needed for oriental cooking. Although non-stick surfaces have been available for years this pan is truly that. The ability to totally submerge the pan for cleaning is a definite plus and allows the user to hang the pan on a suspended cooking rack system. This wok with be the last one you will ever buy.

I bought this wok because I have a ceramic top range and could not get good results from so called flat bottom woks and fry pans. I have envied an asian neighbor's gas range and the carbon steel wok he uses. Since a kitchen remodel and a gas range is a long way off for me, I decided to try an electric wok. I read many reviews of various electric woks and was not certain I would be satisified with any of them. I took a gamble on this one and I am not disappointed. I prepared several dishes the first weekend I got this wok and it performs as well as the carbon steel wok on a gas range. It gets extremely hot, very quickly. I deep fried chicken for General Tso's Chicken in this wok, drained the oil, wiped it clean with a paper towel, then stir fried the chicken with sauce for as good and authentic a dish as you can get at any restaurant - crispy in a spicy sweet sauce. I also prepared Szechuan green beens, shrimp fried rice, and fried crab wontons, all with excellent results and the clean up in between dishes was very easy, again requiring a simple wipe with a paper towel in between dishes - even the caramelized sauce remains that usually stick and burn on my other pans. At the end, I just disconnected the control element and washed the wok with hot soapy water in the sink and it cleaned up in a snap - inside and out. I used a metal spatula for all the stir frying and the circulon annodized nonstick looks as good as it did when I removed it from the box. Even my neighbor was impressed with the results. I highly recommend this product to anyone who wants the results of a gas fired wok but for what ever reason can't use one.

I have spent thousands of dollar's, On Meyers cookware everthing from KitchenAid, Anolon, Prestige, Faberware, & Circulan, just to name a few. Though Meyers does manufacture very high quality pots & pans and I would recommend them to anyone it's just sad that if you have any problem with them, under warranty, you have to go throught the chain of command, that never gets you anywhere, even if you want to speak with upper management about the rudeness of the customer service department. Their customer service department employees are always very rude and snotty and they act like they are doing you a favor to even talk to you about their products. Don't get me wrong they do make good cookware, probably the best, but you as the consumer are at the mercy of their customer service and their descision or your fait on wheather your life time warranty is honored or not. ... Highly recommended.
It's a "2", making it a sturdier, heftier pan than a "Classic." I bought this "2" 12-Inch pan to replace my "Circulon Classic 11-Inch Nonstick Stir Fry Pan" bought in 2000 here at Amazon (= still available at Amazon) because of its slightly larger size.
I gave the 11-Inch Classic [in still perfect condition after all my use of more than 3 years] away to my college kid who wanted to buy one like Mom's stir-fry pan herself.
Just take good care of your pan, wood or plastic utensils only, and DO NOT overheat coated pans, and you'll be happy.

Of all the pans in my kitchen, this is the one I use the most. This pan is pretty heavy and is extremely durable, and nothing sticks to the surface, even crusted items that have been burned on the bottom of the pan. They didn't skimp with the handle like on some other pans -- its thickness makes it easy to lift a heavy load of food, and it seems like it can take a lot of abuse. Overall, I think the closest competitor to this pan is the stir-fry pan from Analon, but after holding both in my hands at the store, I chose this one due to the handle and the seemingly-better non stick surface.

This appears to be the exact pan that Martin Yan always uses on his PBS show ("Chinatowns") -- he almost never uses a wok, and when he does, it's the Circulon 2 wok (which I don't have, because who needs it with this 12" stir fry pan). Granted, I'm sure that Circulon sponsors his show, but it's still a good pan.

This pan is most useful as a wok replacement. Because it doesn't have a flat bottom, I can't use it for everything (e.g. omletts), but I also frequently use it in non-wok situations such as pasta sauces. At 12" it can fit a surprising amount of stir-fry, enough for 4-6 people if it's filled to the brim, but occasionally I do wish Circulon made a bigger stir-fry pan besides their wok. I also wish it came with a lid, but I own a 12" lid from another pan, so I don't need one.

After owning this pan for a year, I am so impressed with Circulon that now I always search for pans in the Circulon 2 lineup before considering anything else. ... Read more

Well, first off, circulon makes the BEST nonstick woks!
Yes, and I DO use it over very high heat all the time!

The key to keeping the wok in good condition is to use oil... you cannot stir fry without oil!!! With a nonstick wok, you simply use less oil than with a carbon steel wok.

I also NEVER wash it with dish soap, like palmolive. I follow the traditional Chinese method. After using your wok, fill it
with HOT water (never cold, as that will kill your wok and warp the metals), let sit for half hour or longer if you made food with a sticky sauce. Simply take a o-cel-o sponge (no scouring side scrubbers needed with the Circulon brand or you will break the nonstick surface), and leftover particles come out easily. Rinse with more hot water. Dry the wok with a towel.

Once a week, take a paper towel, and with a dab of cooking oil (I use safflower oil) or PAM spray, wipe the entire inside cooking surface with a very light thin coat of oil. Your wok will last a long time.

So far, using the above procedures, I've managed to keep my wok in excellent condition for 12 years. (yes, ALL woks require a tiny bit of effort to keep it in shape, but the Circulon nonstick makes it REALLY easy to do so).

I'm Chinese, and I cook Chinese food at least 4 times a week. And I use it for American food too.

Over the years, I have bought many Circulon woks to give to friends, and every one of them were very happy with the woks.

So follow the instructions and happy wokking !

Does it really exist a frying pan that is non-stick? Yes and No.
Frying Pan is meant for high heat. All non-stick cookwares are
meant for medium heat. The result?. A non-stick frying pan that
last no more than 1 year.

I have used the Circulon Steel 12-Inch Stir Fry pan for a few
months. Using maybe 5 times a week. It already start to stick.
That means a relatively thin coating. Do not believe any
salesman about these things last a lifetime or something. It

I have had this pan for several months, my chinese fiance's mother also uses this and I have also bought one for my father recently as this is an indispensible item in the kitchen. I have tried many other non stick products and all tainted after the first few uses, however this pan barely needs washing. Most things will wipe off with tissue, the non stick is simply that good.

Brilliant for tricky items such as egg fried rice and also low fat stir fries, the non stick coating is very durable as long as the pan is treated with reasonale care. Maybe those who found that the non stick dimished were using the pan over heat that was too high. Furthermore I have used this pan on both electrical and gas and both worked find.

I would recommend this pan to everyone.

5-0 out of 5 stars Great For Us Scrambled Eggs And Ham Breakfast Guys!
On weekends I love to start the day with scrambled eggs, some fried ham alongside it, and a rasher of toast with English style tea. it is a habit I picked up while living in Britain about twenty years ago, and although it probably would make my internist unhappy, I plan to keep doing it. So to my mind one of the greatest innovations in the 20th century has been the teflon-coated frying pan, of which this is one! It allows one to prepare quick and relatively healthy meals in a few minutes with what seems to be a quite durable and yet attractive everyday pan.

My Circulon pan seems to conduct the heat evenly and quickly, and I don't have to use anything but a smudge of butter to lubricate my eggs and ham into cooking. It has an 11-inch wok-shaped stir-fry pan, and its "Hi-Low" nonstick surface lets the cook work on delicate foods such as vegetables or fish without fear of sticking, although I usually add a little butter, as much for taste as anything else. I have used mine for a year or so, and am about to buy another since we spend many weekends up north, and I purloined the pan for use there. This is handy, reasonably priced, and easy to use and maintain. Enjoy!

My Mom gave this to me years ago and I thought the rings around the bottom of the pan were weird. But, it's one of the best all-purpose pans I have. It heats quickly and evenly. The non-stick surface works well and has lasted years without any signs of wear. The rings clean easily and Circulon makes a brush that safe to use on the surface for extra scrubbing when needed.

The only 2 drawbacks I've run into are: 1) Like all of this type of aluminum cookware, you can't put it in the dishwasher and it's somewhat succeptible to stains. Not a big problem for me so far, but I prefer the AllClad stainless cookware otherwise; 2) It's a great pan for one, but it gets small fast! We already bough a larger one and it's great too!

A worthwhile purchase.

This wok is fantastic! I've owned many nonstick woks, and this is the best! This is deep enough to be called a wok, (most woks are NOT deep enough, but this IS). Rinses clean in hot water, easy to cook with. I'm so impressed with this wok that I have bought several over the years to give as gifts. The 11" size is perfect for the average American home stove. The 12" wok is a tad big if your stovetop is not a professional stovetop.

I can't say good enough things about this wok. I'm ready for my second wok! The first one has lasted 11 years, and it's still going strong. I want another one, so it's easier to prepare full Chinese course meals.

Most gormet stir fry guys tell you stay away from non-stick surfaces in woks and sf pans because they don't let you pull items to the side ... they just slide back into the oil. This one is different! Circulon uses a ringed grove system in all of their non-stick pans and it works well in this one, because it gives the food a grip on the sides. The flat bottom sits nicely on your cooktop and gives you a bigger 'hot' area, the grooves and gentle slope of the sides allow you to pull small amounts out of the hot oil. I recommend it. ... I have gone through at least 4 woks since I got married 8 yrs ago. This one is by far the best. I wish I had gotten this one years ago. It is a great size and deep enough that I don't spill rice out while making fried rice. The lid fits great and I can cook up a wok full of perfect steamed rice. In fact my husband said it was the best rice I had ever made. I can make great stirfrys without tossing everything out. I recommend this wok!

Circulon really makes the best nonstick woks!! I own the 11", 12" and 14" woks. The nonstick coating makes using little oil in stirfrys easy.

You can use high heat to cook, but I find once I heat the wok up on medium high heat, I add the 1 tbsp of oil, then I toss my ingredients in, and it cooks quickly and evenly.

After dishing out the food, if you need to stirfry something else, all you need to do, is to rinse with HOT water (if the wok is hot, use warm to hot water to wash; if the wok is cold or cooled down, use cold water to wash; this way, you won't warp or damage the metals). You really don't need dish detergent, unless you have made something with really sticky sauce.

The large 14" size is really nice; I can cook for 4 people easily in this, and it is a deep enough wok to work properly.

Most American woks are not deep enough. This is close to perfection. The deep sides are critical to making good Chinese food, since it makes it easy to leave food on the sides, while you mix/heat the sauce in the middle.

My 11" wok is still going strong after 12 years, the 14" wok is working fabulously after 9 years, and the 12" wok is working well after 6 years.

I can't say enough about this wok - it makes Chinese cooking so much easier and less fat. Plus the cleanup is SO EASY, fast, with hot water and a nylon scrubber sponge, you really don't need detergent. If you do use detergent, I recommend a very small amount, and let the soapy water soak inside the wok while you eat. After dinner, it takes a couple of swishes and light scrubbing and all food particles come off.

I'll admit out front that I'm a big fan of Circulon cookware. I also love to do stir-fry dishes and I've had a number of woks over the years that always disappointed me. Not so with this big beauty. It is heafty and has lots of room for doing big recipes. The hard-anodized exterior of the wok conducts heat wonderfully and you'll be able to use lower heat settings than with most other pans. That's good because it has a non-stick interior that could be damaged at higher heat levels. You should never need more than a medium-high setting to get a good sear on meats or to crisp up those lovely veggies.

This wok has a flat bottom so it can be used on either gas burners or electric. It is safe and stable. No pesky wok ring is needed (I've always found those rings to be very unstable, anyway).

The high-domed stainless steel lid is as beautiful as it is practical. The handles on both the lid and the wok are oven safe up to 350-degrees F. The wok handles are especially helpful because they are well designed to make handling a heavy wok-full of food safe and easy. I often turn out some stir-fried veggies into a holding bowl so I can then brown some meat. There is never a wobble or slip-up with the handles on this wok.

Clean-up is a breeze, too. Hand-washing is recommended for the pan because of the hard-anodized (HA) exterior. HA should never be put in the dishwasher because the harsh chemicals of the detergent used will cause spotting and discoloration. The non-stick interior can be cleaned up quickly in hot, sudsy water with a nylon scrubber sponge. I also quickly go over the ridged pattern of the non-stick interior with a dish scrubbing brush just to be sure to get out any last bits of food residue. The hard-anodized exterior can be scrubbed with Scotch Brite pads or something similar, if needed. The stainless steel cover should be cleaned with nothing more abrasive than a nylon scrubbing sponge to preserve that mirror bright finish. You could put this lid in your dishwasher, but it will probably come out with a lot of unsightly spots.

I highly recommend this item. Mine has seen lots of use and I'll never be tempted to buy any other wok.

This 16-inch wok is very comfortable for 2-4 servings and provides enough room for 8+ servings of stir fry dishes. Unlike traditional steel wok, this wok is very light, so stirring is a bit awkward at first. The hi-low grooves in this wok is not as deep as some other Circulon products, but the liquid and the ingredients don't "slide" in the wok in the same way as steel woks. The wok makes some funny sound when using bamboo or plastic utensils in the wok. So there are a few differences from steel woks to be noted almost immediately when using this wok, but none of them is shortcoming. Once I get used to, I prefer this wok over steel woks.

I was a bit worried at first whether such an aluminum wok can provide strong heat necessary to cook stir fries. Aluminum is superior heat conductor than steel or stainless steel, so the heat is applied more evenly. On the other hand, steel or stainless steel can act as a mild "temperature regulator" or "heat reservoir." Well, I tried it anyway. The temperature can be very easily controlled by adjusting the gas flame. The response is faster than steel woks. This is particularly valuable for recipes that require different levels of heat at different stages. (Note: stir fried ingredients should be thrown in to a wok that is heated by strong flame to be so hot that oil in the wok makes slightly visible smoke. The ingredients should be cooked quickly from this heat held by the wok. Despite aluminum construction and non-stick coating, Circulon seems to take this level of heat reasonably well. It could be better if it were thicker.)

Cleaning a large wok takes a bit of work, but it is easy as long as there is enough space in the sink. One matter of preference is whether the wok should be non-stick coated or left as bare anodized aluminum. I personally prefer anodized aluminum, but knowing how durable the teflon coating used in Circulon products are, I have little to complain about this wok. (I have a few Circulon products purchased in 1996, and despite my heavy use, they are still in good shape.) This wok won't rust, unlike steel woks, which is another plus.

A large wok like this is useful for various things, not just stir fry dishes. Because the bottom is small and top is wide, this type of wok is ideal for boiling pasta or vegetables, particularly asparagus. With a steaming rack, this wok can be used to steam food as well, though the depth of the wok limits the size of items that can be steamed. Thanks to the two handles on this wok, a lot of food can be comfortably cooked in this wok, and the wok can be easily lifted to strain food or drain liquid.

So, what is wrong with this wok? Why is it so cheap? The particular product I received had two minor flaws. The size and capacity of the wok are inscribed at the bottom of the wok. However, the inscription said 12-inch, not 16-inch. This is clearly wrong, and this might be the reason why it's cheap. (The size printed on the box is correct.) The circular hi-low pattern is not quite concentric at the center of the wok. This slight eccentric pattern does not cause any inconvenience upon use -- I had to look very closely to figure it out. The fourty dollars price tag on a wok like this is still a bargain.

Finally, I should say that this is sold as an "open wok," coming without a lid. A serious cook should get a lid -- a 38cm or 15-inch stainless steel lid fits nicely on this wok. Unlike the case of pans, lid for a wok should be chosen slightly smaller than the maximum diameter of the wok.

A really good size of a wok, but sort of "light weight" as all Classic models are! I expected the light weight before I ordered, - so no surprise.

It does have a flat bottom, but only of 5" diameter, which is not at all ideal for a regular small = 6" electric coil element. Because of the small bottom surface this wok is not stable on the stove. Just hold on tight to one of the handles when stir-frying! One * subtracted for wobbling.

[I also own the "Circulon 2 12-Inch Open Stir Fry," which is of much higher quality, but too small for some of my cooking. If size is not an issue then I recommend the "Circulon 2 12-Inch Open Stir Fry " over the 16."]

We have used this wok almost everyday since we got it. It is fast becoming our favorite piece of cookware. There is plently of space to stir-fry a meal for our entire family without slopping over, and the heat distribution is excellent. We no longer have to use high heat to get the desired results (as we did with our old wok). Excellent for use on an electric range. So far, nothing has stuck to the surface and clean-up is a breeze, although the wok is definately an oversized item and is a little tricky when handling at the sink. ... Read more
