After being so pleased with a fine-edge Santoku knife that I use for chopping and slicing vegetables, I decided to add this hollow-edge Santoku knife to my collection of Wüsthof-Trident Classic knives. I've been using less-expensive Asian knives for a long time, but the Wüsthof Santoku knives have now become my favorites because of the shapes of the blades and the quality of the handles. On this hollow-edge Santoku, there are oval indentations or 'kullens' on the side of the high-carbon, no-stain steel blade, so you can quickly and easily make very thin slices of your meat, fish, and veggies. I use this Santoku for preparing sashimi and carpaccio. (I don't make sushi, but this knife would be excellent for that, too.) So far it has stayed very sharp without any need for professional sharpening. I hand-wash and dry it and store it in a wooden knife block.

5-0 out of 5 stars SPLENDID CHOICE FOR CHEFS OR AMATEUR COOKS
For those of us who love to cook much of our pleasure is experienced in the preparation - whipping egg whites to a perfect frothy peak, cutting cookies into imaginative shapes or slicing cleanly, quickly and neatly the ingredients for casserole or soup.

This Japanese inspired Santuko knife by Wusthof has certainly added to my joy in the kitchen. It's the perfect implement for slicing, dicing or chopping. Alternating indentations prevent food from sticking to the blade, while its heft and balance are perfection.

A razor sharp blade allows me to slice as thinly as I wish, whether it be for carpaccio or the prosciuto we so enjoy. It's ideal for the cheese and ham in panini, and makes quick work of onions and celery for a family recipe for vegetable soup.
Of course, an added bonus is the Wusthof name, which we have learned means quality.

I do recommend that you hand wash it, just as you would a fine piece of silver. Believe me, this knife is sterling in every way.

After chopping and slicing everything in the refrigerator since I got this knife yesterday, I thought I should take a break and write a review. This kinfe is just amazing.
I have a set of OK knives that until yesterday I thought were pretty good. I've never had a really expensive knife before, though.
After reading all of the great reviews here of the Wusthof Santoku knife and seeing how popular it is on the Food Network (Yea, I know, I'm a little susceptible. I also have an Eggstractor)I went to the store to check one out. I couldn't believe how well-balanced and light it was, without feeling flimsy. I took the plunge and do not regret it a bit.
The first time I chopped up an onion it sliced through it with hardly any effort. I just stood there in awe.
It's incredibly sharp and feels comfortable in my hand. I also like the shape, kind of a cross between a chef's knife and cleaver. I suspect my old knives will be relegated to chopping up bones and other things that would damage this one. But for anything that requires a bit of finesse, I will reach for the Santoku.
Well, I think I've gushed enough.

These Santoku knives have the fantastic Kullenschliff, also called the Granton, edge for extremely finely-honed thin slicing. They slice quickly into whatever width you want, from slivers to less thin pieces, with only a modicum of practice. The sharp flat cutting edge, safely lower than the handle, makes for an easy, comfortable grip. The Japanese version of the chef’s knife, the santoku is useful for straight chopping, mincing, and slicing of larger quantities of vegetables and meat. Cooks with smaller hands may prefer this 7-inch blade as the shorter length offers better control while cutting. The width also provides a great platform for transporting chopped vegetables from cutting board to sauté pan. This version of the santoku actually has a hollow edge or oval cut-outs along the blade. The benefit to this blade style is that cooks can cut paper-thin slices and individual slices won’t stick to the blade.

Part of the Five Star series of cutlery, this santoku has a fully forged high-carbon stainless-steel blade. The blade, bolster, and tang are welded of one piece of metal using Henckels’s Sinter Metal Component Technology, which distributes the right quantities of metal to each part of the knife. The result is a longer-lasting edge and a more consistent angle on the blade. The blade has also undergone Henckels’s Friodur ice-hardening process, which further strengthens it and protects it from discoloration. The ergonomically designed black polypropelene handle offers a secure and comfortable grip and is hygienically attached so there are no gaps between the handle and blade for food to become trapped. I have never had good knives before. After looking around and trying a few on for their feel, we picked a few of these five star knives and put them on our registry. Excellent wedding present! And this is the most useful of all our new Henckel knives. Not a day goes by when I do not marvel at this knife. I've never before been able to thinly slice tomatoes without a serrated edge! Slicing lemons or veggies is like going through soft butter, but with precision.
I highly recommend this knife.

This knife is no less than awesome. It does everything a traditional chef's knife does, and then some. It chops and dices almost effortlessly, but it also slices razor thin slices of vegetables that make presentation a dream. The knife feels solid, balanced and strong, and the hand grip is perfectly contoured to fit the hand - a far superior grip to the Wusthof, which is thinner, straight and flat. I recently purchased Global's highly rated 8" Chef's knife too - I love it, but not quite as much as the santoku. The deeper blade on the santoku makes cutting and slicing a bit smoother, especially with thicker foods. Buy one and enjoy - it is truly a staple of the kitchen.

My wife is Japanese and we have been looking for a good 'Hocho', the MAC fit her hand well and was closer to the size she was used to (american versions are big like most american things or the blade was not right).

Made in Japan right on the box too!

However it took two months to get it. I was told twice different shipping times and how a recent magazine article caused an extreme amount of orders (which they had to have known early on would not be fulfilled quickly) and then finally twice promised 2 day shipping as a free upgrade when my first and second ship dates came and passed (I had to pay $10.45 for shipping to begin with for ground). Well it was still shipped ground (took three days which is not the point of the offer...if you are going to promise an upgrade do it...they would have still profited on shipping more than likely as well).

Now I don't think the seller is a bad seller overall, they were semi-quick with replies...packaged the item well, included a couple pieces of candy as a gratitude. Maybe next time they can let the consumer know before they get the money.

The MAC is not the first santoku that i have owned. i have 15 or 16 others from $5.00 up to $150 and i find i like this santoku the best. its slightly larger handle (compared to other MACs and such) gives more comfort and accuracy to each cut. notice that on the MAC there is a slight upsweep of the handle, which gives a better cutting angle as well as more hand/knuckle clearance.
(all my other santokus have "straight" handles) also, the matted band above the edge really helps keep food from sticking to the blade. (ever notice how "wet" vegetables cling to, then climb up a blade if you are slicing quickly and then run all over the cutting board??) but the best part is the incredible sharpness of the blade. really, i am tired of ads and opinions for other knives claiming how sharp they are when the reviewer has yet to use a properly sharpened MAC knife. this knife (as well as other MAC knives i own, five in all) truly gliiiiiiides thru food. altho the "superior series" is thicker than the "original series", it nevertheless slices just as easily. in a world where those German knives (wustof, henckles, messermeister) seem to get all the attention, for the money i find the MAC knives to be a much better value.

the MAC superior santuko knife can go head-to-head versus ANY other santuko on the market (any except for maybe the newer MAC forged santuko with the scalloped edge). i have used most of the german models of the santuko design (henkels, f.dick, wustof,
shaaf, messermeister ... yeah, bought them all!) and find the MAC to be superior in sharpness (i don't know how some people can claim those knives are sharp after using a MAC), edge retention, and ease of slicing through all sorts of meats and veggies. the knife simply does not seem to "stick" when going through things! also, it does not seem to "wedge" through veggies like the thicker german blades ... it simply glides through the material. the slightly upswept handle keeps hands and knuckles off the cutting board and is blazing fast when chopping/slicing/mincing. it is sometimes hard to describe how easily this knife works, it just does. the only other knife that rings my bell is the kai shun santuko, but the MAC's flatter handle makes me feel that i have a more accurate grip on the knife, unlike the kai's rounder profile.
by-the-way: take a tip for using "bolsterless" knives ...

I've been using a Chef's knife (7") for many years, when I went looking for a new blade, I settled on Shun, and I thought I would get one. But when I hefted it, I didn't like it compared to the Santoku. (I've heard it referred to as the Japanese Chef's knife).

So I got the Santoku instead, and I have not regretted it. I like it much better than the traditional (French?) Chef's knife, even for Western-style cooking.

With regards to the Shun Classic....this is a fabulous knife. I've used quite a few Chef's knives, including my friends' Wusthoff and Henkel, and I was not nearly as impressed with those as I was when I first used the Shun Santoku.
This is a very, very sharp edge that is holding up very well.

The few times I prefer not to use the Shun Chinese Chef knife (like for "lighter" duty), I pick up the Santoku.
You may not believe it, but it's so sharp, it doesn't stick to things, that I can chop _much_ faster, with more consistency, almost like the "pros" on TV.

The handle is shaped nicely. The wood is not slippery even when wet, the only drawback...you may not like the shape if you're left-handed, as it is assymetrical.

I received this knife just a few days ago by accident and was told to keep it. I am extrememly happy for the mess up. I love this knife, it is extremely sharp and makes cutting large quantities of food a dream. It is also well balanced and the handle fits my hand rather nicely. My husband loves the way the knife just "sings" as it is being pulled out of the block. The stainless steel is a very high quality.

High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 5-1/2-inch knife for precisely slicing and chopping vegetables is an example--have thinner blades and are lighter than traditional European-style knives. I truley adore my global vegetable kife. My husband grew up only using a giant meat cleaver in his family kitchen. So he believed that you only needed one knife in the kitchen of all uses. So for him to actually pick up this knife to use for normal day to day use is a major accomplishment.

Great balance, Beautiful design, keeps its edge, and a lot less intimidating then a giant meat cleaver.

I got this knife because chef's knives are too wide at the back and wedge the cuts and santoku knives with their ultra thin edges should be saved for softer foods. For cutting squash,carrots and other hard foods this knife is perfect. Great balance, amazingly sharp, cleans easily, and worth every penny.

I loved my 8 inch Global chef knife so much I ordered this veggie knife. Oh wow, this thing is perfectly balanced and because of it's smaller size it is just about perfect for most veggies. It also fits in your hand extremely well. If you are going to cut up a potato, it is hard to beat the chef's knife. However, for cutting up a tomato, carrot, etc. this thing is the best tool I have ever used. Just wonderful!

Until 2 years ago, I used German knives, but even though I steeled with every use, they seemed to dull too quickly. When introduced to the Global line, the first thing that struck me was how well they held a razor sharp edge. Add to that excellent balance and outstanding design and you have top stock!

I've 8 in my collection now and my previous work horse 10" chefs knife has been relegated to cutting pizza!

The only other piece that rates a bit higher is my KASUMI DAMASCUS Japanese SANTOKU Chefs Knife... that is my all time favorite piece.

In summary, this global vegetable knife serves us well everyday. It is simply a pleasure to use, doing its job well while never stressing your grip.

After buying the Calphalon Classic Santuko knife I felt compelled to buy the J.A. Henckels version for comparison. First off, this knife was sharp as a razor and stayed sharp for a long time, the Calphalon dulled within 3 slices of a lime. The weight and handle are not as heavy and as comfortable on the Henckels, the steel is far more lightweight. But aside from the smaller grip handle and lightness, I enjoy using it more than the Calphalon. I suppose it's just personal preference. Once you use these knives, you will want to throw all your others out. At least I do.
