With a diameter of 11-1/2 inches, a depth of 5-1/4 inches, and a high domed lid, this 7-quart pan is sized for a family's braising, baking, and stewing tasks. Chili for a soccer team, cassoulet for a family reunion, curried chicken for a block party--all these are well within the pan's capacity. Though it's not nonstick, like some Calphalon cookware, the matte-finish pan is anodized for stick-resistance as well as hardness. Metal utensils won't harm the surface. To brew up a large pot of home made soup, chili, a pot roast with brown potatoes (Dan Quale where are you?)and carrots - you just won't find a better large pot. Brown your meat and onions on the stove top add some water, and pop into the oven until the meat is tender, add veggies and continue to cook at 300~325, covered, for the best roast you'll find anywhere. The down side is the price, here.You can find this pot at less than half the price as listed here if you do a bit of searching. As great as they usually are here, they do get a bit pricy from time to time so it is worth shopping around to find the best deal. But you will not go wrong with this pot.

I recently purchased this pan and have used it on several occasions, and each time the casserole has proven an invaluable buy. It's great for stews, braised dishes (like lamb shanks or osso bucco) and even plain ol' pasta. Cleaning up hasn't been much of a hassle, either, despite what some folks say about the difficulty of keeping Calphalon Hard Anodized stuff clean.

It's a great multi-purpose pan...a bit on the expensive side, but a tremendous investment for the home cook.

Calphalon's new Commercial Hard-Anodized line of cookware is great! I love the stainless steel handles which, unlike the cast aluminum handles of their regular hard-anodized line, stay much cooler to the touch. Also the lids on this line of cookware are domed, which create a tighter seal that reduces evaporation, so you don't have to add liquid during cooking. The handle on the lid is also stainless steel, and the shape has been redesigned to allow for easier lifting. These pans can also be used in the oven.

The Commercial Hard-Anodized 7-Quart Chef's Casserole with Lid is perfect for making a large batch of split pea, lentil, or chicken soup; Irish stew; and Coq au Vin. It's easy to braise your meat first at a medium-high heat, and then add broth or stock when you turn the heat down to a simmer.

For a tomato-based pasta sauce or anything acidic, I still like to use my Le Creuset pots and pans. Also, I don't put any of the Calphalon pots or pans in the dishwasher. ... Read more

I have been thrilled with the heft and quality of the Le Creuset poterie line - and this is no exception. After years of trial and error I have found this to be the perfect pan for my lasagna. I like to make BIG batches of lasagna, and this pan lets me feed an army. The color and finish are flawless and that famous Le Creuset non-stick ability is in full force here. Even after baking a big lasagna in it, washing this thing by hand is a piece of cake!

So, to sum up: Its large, it looks great, it cooks evenly, and it is very easy to clean after use. All of that for a pretty good price too! Highly recommended!

I've used my Le Creuset enameled cast iron cookware for over 10 years; I'd be lost without it. The excellent heat retention and even heat distribution allow you to cook over low-medium heat; you'll save energy and your cookware will last longer. But who am I kidding?--I bought my Le Creuset pans because they're pretty and oh so French! That they're energy efficient, sturdy, and easy to clean are just bonus points.

Although I own a set of the cobalt blue pans, the heart shaped red pan with lid is my favorite Le Creuset piece. It would make a great Mother's Day or Valentine's Day gift; then again it would make a wonderful present to yourself!

From baking to stove-top and table service, this is a wonderful product. It is nice and heavy with a level bottom for those cooking on a ceramic surface. Things cook evenly and if you keep the temperature low its ceramic surface is easy to clean. Most of all, I like the lovely heart shape!

Le Creuset holds a well-deserved global reputation for its superior cooking products and this whimsical heart shaped casserole dish is no exception. My teens sons honored me with this beauty last Valentine's Day. And to my surprise it was not wrapped, it was warm to the touch, and when I slowly lifted the cherry red lid, my heart soared--they had filled that heart with their version of my homemade baked macaroni & three-cheese casserole recipe!

As we all grabbed forks, eating right out of the pan, in between bites, they excitedly took turns telling me all about the pan; "Mom--it's so cool, even the lid can go in the oven, (up to 450 degrees) it's that cast iron stuff you like so much, only coated, we can put it right in the dishwasher AND guess what? You can cook all your good stuff in it for 101 years!" (the warranty)

I'm not sure what made this the best present I ever received--the weighty, cooks everything deliciously, crimson pan or two teen sons taking the time to let me know, I, as a parent must be doing something right.

I have no idea how other reviewers claim that they can cook a roast in this casserole. I have to admit it's very cute but I am heart broken that I cannot use this for anything other than to keep spaghetti sauce warm and a pretty decoration on my stove. I love it and want to use it more, but it's simply too small to cook anything other than a few potatoes.

My mother gave me an 8 qt lecreuset pot as a birthday gift. It has seen a lot of use over the last 10years. Through normal use the coating on the bottom has completely worn away revealing the cast iron interior. Are these guarenteed? If so I would love to replace it so that i can again say that it is my favorite pot.

This one piece, constructed with an copper core and aluminum layers inside the stainless steel, is so amazingly great to cook with, we use it for almost everything!It is large, so we don't need a griddle or another skillet. This storage system is absolutely wonderful. The bowls are sized perfect for the kitchen to use as storage (they stack well in the fridge or pantry) or cereal/serving bowls. I take my lunches to work in them everyday. They work great in the dishwasher and microwave wherethey neither stain or pickup smells from any food- unlike plastic. They are the only really safe thing to use with your food around heat, as all forms of plastic leach into food at some temperature. The best thing of all are the lids. Le Creuset has a reputation for creating high-end, high-quality products, and the buffet casserole certainly helps maintain that reputation. I purchased one as an early Christmas present for myself, and have been using it every day (sometimes several times a day) since I got it. So far, I've used it to scramble eggs, caramelize onions, bake a chicken, roast garlic, brown meats, make pancakes - you name it.

My favorite way to use it is in the oven. The lid fits so well there's almost no loss of moisture, which means I no longer need to use oven baking bags or foil in order to retain moisture in food being baked.

True to their advertising, cleanup is a breeze. There is no such thing as "burned on food" - A few minutes soaking in warm soapy water is all that's needed to make even the most stubborn food release from the dish.

I was so impressed with the performance and versatility of the buffet casserole that I bought several more, which I gave as Christmas presents.

For a small kitchen or a single or small family, this is one of those handy pieces you tend to keep on the stove right next to the tea kettle. Functions as a medium-large skillet, low stewpot, round roasting pan, and small-medium casserole. Heat a tortilla, fry sausage & potatoes, scramble eggs, grill a cheese sandwich, do a ham slice with pineapple, bake macaroni & cheese or green bean casserole, make chicken & rice or pork chops & kraut or pot roast & veggies, saute onions or mushrooms, fry salmon patties or crab cakes, scallop potatoes or cauliflower or oysters, stew tomatoes or apple slices, stir up Rice-a-Roni or a frozen stir-fry mix, roast a chicken or batch of veggies, bake cornbread or gingerbread or an upside-down cake! This brand absolutely cannot be beat for gently cooking anything on low to med heat (for high heat use Scanpan). A few minutes soaking and ANYTHING washes off in a snap. Limited on space? This baby replaces the need for LOTS of other pots & pans, and does so in grand style!

This wonderful pan is a cross between a dutch oven and a heavy skillet. It's perfect for slow, wet, braising of tough cuts of meat like brisket, or for baking a couple of skinless chicken quarters without them drying out. Rice dishes like paella and jambalaya turn out beautifully - the even heat makes carmelizing onions and browning sausage a pleasure, the heavy lid does wonders for the rice, and the pan is pretty enough to bring the whole thing right to the table once you're done.

As an added bonus, this pan can share lids with the 5.5 quart (26cm) leCreuset dutch oven. Since this pan has a dome lid, and the dutch oven has a flat one, using this lid will give you a little extra space for a roast or chicken when using the deeper pot. The two pots together live on my stovetop - one or the other gets used almost every day.

My favorite buffet casserole recipe: soak about 2 lbs of beef flanken-cut ribs, or 3 lbs of short riblets, in heavy salt water for a few hours, or overnight. Rinse and dry well. Brown the ribs in the buffet casserole until the meat starts to "tighten up" (you may need to do this in two batches), then remove the ribs from the casserole, pour off any fat, and let the ribs cool a bit (some juice will run out). Rub the ribs all over with a mixture of garlic powder (1/8th cup), cocoa powder or hot cocoa mix (1/8 cup), dry mustard (1 tablespoon), ginger powder (1/2 tablespoon), and cayenne pepper powder (1 shake). Return the ribs to the casserole (bone down), cover, and cook on very low heat on the stovetop, or in the oven on 325, for about 45 minutes for the flanken, or 1.5 hours for the riblets - the meat should be falling off the bone. Salt to taste and enjoy. (This recipe cures PMS :-))

I bought this casserole wanting to make duck confit in it, and it has worked great. It's a heavy, beautiful dish, that's perfect for slow cooking. Vegetables, duck, and pork chops will all work great in this dish. The dish has a plastic handle, which is approved to work in ovens up to 400 degrees fahrenheit, so this dish is just as easy to use on the stove top as in the oven. If you're cooking for two on a budget and you can only afford two pieces of Le Creuset I highly recommend this one and a larger French oven (at least 4 qts).

You can cook just about anything in this pan including omelets. The lid will also fit the 10" black enamel lined skillet.

I've had mine for a while now, and it's great for on top of the stove and then into the oven recipes, like pork chops. I haven't tried it yet for a paella, but it would be lovely for that as well. It weighs a ton, so be forewarned. I love all my Le Creuset cookware and I am so proud when I use it, I really love it!

I bought the casserole, and let me tell you, everything I love about the French oven is present right here. Wider than the oven, it is, of course, shallower, but it still holds a healthy amount of food. Certainly it's big enough for a good-size casserole. It's also great for browning meat before baking. I find that pork chops (holds four small or 3 porterhouse chops comfortably) browned in a little olive oil, then smothered in vegetables and slow baked (covered, always covered!) at about 325 in this casserole, turn out moist and juicy and tender, with a gorgeous brown sauce that you can turn into gravy or just spoon over the chops. The vegetables emerge aromatic and tender. Everyone is happy, and the world spins contentedly for one more night. This is a high quality piece of kitchenware; since I got the French oven I've been sold on Le Creuset, and I'm here to sing its praises. Things don't burn unless you're not paying attention, and cleanup is a marvel. Who needs non-stick when you have enameled iron? The red, as I've said elsewhere, is very jolly, and might even provoke you to flights of Gaulic fancy (Vous: Et pour dejuner, les escargots en casserole! this is my first Le Creuset casserole. When I first received it, it was smaller than i was expecting. But after cooking with it couple times, I really fall in love with it! Now I always clean it after using, and have it on my stove top in the kitchen! it's so cute and fun!

The pumpkin casserole is my first piece of Le Creuset, and it is awesome. I find it's easier to keep my kitchen clean because I WANT to clean this casserole dish. It displays beautifully on my stove, saving me cabinet space, and it works better than any nonstick pan I've ever used. I am in love with this cookware, and plan to eventually replace almost every cooking item I own with Le Creuset. It is the most artful and functional cookware I've ever encountered. The only thing that might be a drawback for some is the heavy weight of it, but hey, it's good exercise, right? I think it is worth every penny.

Le Creuset's cast iron cookware is great stuff. It is heavy, so it distributes heat evenly & holds it well. No hot spots, and the food stays warm at the table. The enamel is very easy to clean (even if you get a bit careless and burn something on). The lid on this fits really well. The pots are individually sandcast, and they are really high quality. Just in case, they come with a really long guarantee (it will definitely last longer than you will). This is not the cheapest cookware you can find, but you won't find better.

This pumpkin shares all the great features of the other Le Creuset cookware, and is a great visual pun besides. It looks good on the fall table (think Halloween and Thanksgiving). As someone else pointed out, it's easy to find when it's time to go home from a potluck.

I do not think there is a better way to sample this product line than through the fun casserole pots. They are reasonably priced, much cheaper than the standard 2 quart casserole, and still carries the same quality. These are extremely heavy pans that distribute the heat evenly though what you are cooking. I like the pumpkin for the fall cooking, I also purchased the tomato as well for summer and other seasonal cooking. This holds your standard casserole recipes. This is great for a pot luck, I promise you will be able to identify your dish, and it just flat out looks attractive. The colors are bright and distinct. This casserole is excellent. I bought this one, and the green pepper, as a set to use when serving salsas and sauces. They look great on the table together. Then I went and gave them their own shelf and they've been so pretty together up there. I get compliments on them EVERY TIME someone new comes into my kitchen - often from regulars who just admire them all the time. I think they are worth the money just for the quality and uniqueness of the product but make no mistake, as darling as they are they are real workhorses when it comes to cooking and serving and a delight to use for host and guest alike.

Both of my pots came with a "stemlike" handle, not the round handle shown in the pic. Check out the yellow pepper to see the handle you'll probably get.

This piece from Le Creuset is pretty enough to leave out on top of your stove. I use mine constantly, from soup to rice to baked items in oven. Great tip: warm in oven and use to transport/serve food made in a different kettle. Great for keeping mashed potatoes HOT until served. Also, incredibly useful for anyone who prepares and transports meals... keeps food warm -- recipient of your dinner-gift will be thrilled to receive ready-to-eat food. I have owned mine several months and it has never made its way into the cupboard.

$100 for a casserole dish? You have got to be kidding. I don't care how good it is. For $100 it better load itself up, walk itself over to the oven, turn it on and get in. I pity anyone who buys this. $100 is bad enough but look at it. What's wrong with cookware that looks like cookware?

4-0 out of 5 stars An excellent starter pot for any collection of Le Creuset.
Pictures don't do justice to the brilliant red of the Le Creuset tomato - it's adorable and very cheerful. It's highly durable, and the interior is incredibly easy to clean!

One reason I always end up reaching for my Le Creuset pans is the formation of "fond" (the little brown bits) which is so impossible to manage when browning meat in a non-stick pan. Le Cresets seem to promote fond creation, and this allows you to make magnificent sauces with what's in the pan once you're done cooking the meat. (That's a definite advantage if you're learning any French cooking.)

These pots are also amazingly flexible - you can take it from the stovetop to the oven with no problems! (Be forewarned, though, that the cute 'stem' of the tomato can only withstand temperatures up to 400 degrees F. But I have yet to have this be a problem.)

There are two small downsides to this particular Le Creuset pan. One of which is common to all Le Creuset enameled cast iron pots - you cannot use these over high stovetop heat, or you risk damaging the beautiful enameled surface. These pots are made for a "slow and steady wins the race" method of cooking, not a quick sear. (Save that for your Lodge cast iron pan.) However, this is not really a handicap - because once you heat this vessel up steadily, it holds the heat for an extraordinary amount of time, and it heats very evenly. It's great - when you take the dish to the table, the contents stay warm throughout the meal!

The second down side of this pot is the lid - the quirky tomato shape, while adorable, causes the lid to only fit snugly in one way. This can be minorly aggrivating when you're in a real rush. (I always put the lid on the wrong way the first time.) This is the only reason for my giving this pot a four-star rating, in lieu of the five stars it would have normally earned.

I purchased this 2-Quart Tomato Casserole about
three months ago and have had time to use and evaluate it.

Wonderful!

We have a magnetic induction cooktop and I have written other
reviews of Le Creuset and All-Clad cookware here at Amazon.com in
regards to the virtues of magnetic induction so I won't repeat
myself -- other than to say that this casserole works great on
a magnetic induction cooktop as well as conventional cooktops.

What is so great about this casserole is that you can use it on
your cooktop as a skillet to brown, then add ingredients and put
it into your oven to bake, then take it straight to the table to
serve! Its tomato shape makes for a very nice presentation on
the table. Cute. :-)

By the way, the picture (at least right now) shows the
knob on the lid to be the normal round shape knob as found on
other Le Creuset cookware. That is _not_ the type of knob that
came with the one that I purchased. Rather, the knob is a three
pronged handle that resembles the part of the vine that connects
to the tomato. Once again, _very_ cute. :-)

Since we have had a number of months now to use a variety of
Le Creuset cookware, there is one item that I'd like to pass
along regarding Le Creuset in general; I have not seen this
mentioned in other reviews. Namely, the lip of the casserole,
sauce pan, etc., and the adjacent lip of the lid are exposed
cast iron. The enamel coating is not applied to these lips.
What this means is that if you leave the lips exposed to water
for a period of time they will rust -- so don't leave them
soaking in your sink! It's very easy to avoid, just keep the
lips dry.

In summary, wonderful cookware. Definitely a 5-star review! ... Read more
