I love cooking with this pan. I haven't noticed an unpleasant smell as other reviewers have, it's wonderfully nonstick and all around works great. Overall, I'm thrilled with this pan until I have to wash it. I do not have a dishwasher, so you might not encounter the same problems, but I find it incredibly hard to clean--it stains and if batter burns anywhere, it's pretty much adhered to the surface of the silicone. Using it is a joy but cleanup is a huge chore.

It's wobbly and flexible, with a sturdy base to easily get it into and out of the oven - but at 18" x 13" (appx) - it's hard to store unless you have extra room.

Like a previous reviewer said, it does give off a rubbery smell and I've noticed a smoky kitchen, too, when I oil or grease the silicon prior to baking with it.

BUT it does work as promised, and the three things I've used it for (corn bread, banana bread, and blackberry muffin bread) all came out perfect, even and brown on all sides, and they slid out of the silicone without a problem.

So, if you can figure out how to eliminate the smoky kitchen (maybe it's me) - and if you have somewhere to store such a large item - then you can't go wrong.

Let me just say don't listen to the person that said that this stuff sticks! We put sticky cinnamon rolls 2 per slot and they came out like a dream with a candy like bottom, and oh were they good! I also baked homemade bread in them for a party and everyone (who were older than I) wanted MY recipe. I am a good cook, but the pans held in the moisture and made the bread very tasty. If you're a smart cook...you're gonna "grease" your bread pans. That's just what you do. These are great...great...great...we can't wait for even more different type pans to come out to replace all the metal ones I own. KitchenAid is a good brand never think different. Buy these while they are a great deal, you won't regret it. I know I don't

I bought this pan based on KitchenAid's (well-earned) good reputation and my excellent experience with silicone baking mats (Matfer Exopat). Unfortunately, this pan does not perform anything like silicone baking mats, and it's surprising KitchenAid would put its name on it. A couple of hints that this would not work: first, this pan's silicone is not the same shiny, slick stuff as the Matfer or Silpat baking mats--you can see it and feel it in its dull, rougher texture. Second, the brief instructions call for oiling the pan (!)--why should silicone have to be oiled? I went ahead anyway, with horrible results. Cranberry-orange loaves stuck badly and fell apart; french bread and honey-wheat bread stuck; bar cookies stuck....The highest temperature I used was 385 degrees, and yet the pan gave off a synthetic, burning rubber smell each time--disconcerting, to say the least. I bought this pan and use it weekly. I put a pan in the bottom of the oven with boiling water to get the chewy texture for the crust. I also spray water in the oven several times while it is baking. What I get is a nice crunchy crust. I use my bread machine to make 2lbs of dough, then I divide it and make two baguettes.

Sometimes it is hard to find fresh sourdough baguettes at a store or bakery on the weekend, so I learned to bake them. After preparing the bread dough and dividing it into threes, I cover it with plastic wrap and refrigerate it overnight. The next day, I place the room-temperature dough in a lightly oiled Chicago Metallic Professional Perforated Pan on a baking stone on my oven rack. The baguette crust comes out crisp and the inside is chewy and moist.

5-0 out of 5 stars Sometimes a pizza stone just isn't enough
I've been working on making the perfect French bread baguette. (It's delicious with goat cheese and some artichoke-lemon spread, but that's another review.) I have an excellent bread machine recipe for the dough but letting the bread proof on my pizza stone before cooking it resulted in slightly "squashed" loaves that were more like narrow ellipses than circles. Although I love my stone's effect on a loaf's crisp crust, I finally ordered this baguette pan.

Mindful of the recommendations in other reviews, I sprayed the pan with cooking oil before using it. I also tossed some corn meal on it. (What can I say? I like its effect on the crust.) I laid the dough in the pan's "troughs," let it rise, then moved it to a preheated oven to bake. Unable to part with the stone entirely, I placed the pan on top of it. The loaves turned out beautifully. They're almost perfectly round, about 2" in diameter; the crust was even crispier than when I used my stone, and it's fairly even all around--slightly more brown on top than on the bottom, perhaps because of the stone being underneath.

Since my kids ate them all, I had to make more the next day. This time, I didn't stretch the dough as much so they came out as 3" baguettes. I also reduced the heat a little, as the pan's instructions recommend. The loaves touched when they rose, so I pulled them apart after about ten minutes of baking. That wasn't a problem though, and they came out even better than before.

Cleanup is easy, especially if you spray the pan, but the perforations are a bit harsh on a sponge, so you might want to use the recommended nylon scrub or a paper towel instead. (Cleaning corn meal out of those holes is a little difficult, however, so I'm reconsidering using corn meal.)

If you bake baguettes frequently, I heartily recommend this pan! (No offense to my pizza stone.)

I USED THE BAGUETTE PAN FOR THE FIRST TIME TODAY AND WAS A BIT APPREHENSIVE AFTER READING THE REVIEW ABOUT DOUGH GETTING STUCK IN THE PERFORATION HOLES, BUT THIS WAS NOT THE CASE. IT REALLY DID A BEAUTIFULL JOB ON MY BREAD! BEFORE PLACING THE DOUGH IN THE PAN I SPRAYED IT WITH A NON STICK COOKING SPRAY AND THEN DUSTED IT WITH A SMALL AMOUNT OF FLOUR. AFTER THE BREAD WAS DONE IT SLIPPED RIGHT OUT OF THE PAN. I BELIEVE THIS IS A REALLY GREAT PRODUCT.

This has to be my favorite pan for making the outside crust on the bread very crisp. It seems that the heat flows better through this pan with the perforation. While the pan is very sturdy and of a heavy gauge, it should provide you with wonderful bread in the years to come. Be sure to give the pan a quick spray of non-stick spray before cooking, but you would do this when making any kind of bread. The three loaves gives you just enough bread so that there won't be any major dicussions of who is getting the last piece of hot bread. Before I received this pan as a gift, I was using a glass loaf pan. Compared to that, this pan makes a much nicer, crisper crust, and a moister loaf. For results, I love it. Cleanup, however, is another story! Since the pan is "folded" from one piece of metal, rather than poured into a mold, every corner gets full of food that is hard to get out. In any case, though, it doesn't prevent me from using it. If you're willing to be a little patient with cleanup, a great pan.

1-0 out of 5 stars Poor release of yeast breads & difficult to clean afterwards
Having just spent 5 minutes cleaning 2 of these expensive "non-stick" pans, I have vowed never to bake bread in them again. Perhaps they work well for sweets and meatloaf, but they do not release yeast breads easily--in fact, my loaves are marred by the holes left from chunks of bread that stuck to the pan.

And they are tedious to clean: They are harder to clean than any cast-iron or stainless steel pan. Baking seems actually to forge a new composite material from the metal and the dough. The folds and the corners are natural traps for debris and the worst parts to scrub, but even the flat parts cling to bread.

These are expensive pans and require babying. They have not worked for me, despite my taking extraordinary care to protect their "non-stick" surface and making numerous trials of using different lubricants and oven settings.

5-0 out of 5 stars Calphalon Commercial Medium Loaf Pan - Excellent!
The Calphalon Commercial Nonstick Bakeware line is excellent. The nonstick coating is superb, they are heavy, sturdy and very well made. The nonstick coating is so slippery nothing sticks to it. I have the large, medium and mini set of loaf pans and they are all fantastic. The large and medium sizes are great for breads, banana bread, pound cake, etc. and the minis are great for holiday baked gifts or personalized desserts. Who wouldn't like their own mini pound cake?

Although you could, I don't use my bakeware for meats, I prefer to use bakeware for baking and stainless (All Clad) or stoneware (Le Creuset Poterie) for meats and meatloaf.

One note: you may want to check on your baked goods a couple of minutes early. I have noticed that everything is done a little quicker in pans with a dark finish. Many newer recipes will indicate the timing for dark finish bakeware. These pans are also a breeze to clean, just a little soap and water and you are done.
Also, read the Calphalon brochure in the box, if you plan to nest this pan with others make sure to put a paper towel between them to prevent any damage to the nonstick coating. And, this pan is not dishwasher safe.
I wouldn't even trade my Calphalon Commercial Nonstick bakeware for All Clad bakeware, all my cookware is All Clad and I love it but nothing beats high quality, heavy duty Nonstick bakeware! Wonderful Pans! Highly recommended!

I absolutely love this pan!! It is the perfect size (the more common 9x5 size is too big for most bread recipes, resulting in flat, disappointing loaves) and is a great quality product. The nonstick surface is great for sweet loaves. Every loaf I've baked in mine, including the first, slid right out without any prodding. It bakes evenly, and puts those lighter duty pans to shame in durability. I wouldn't bake a loaf with any other pan!

We have used this meatloaf pan for a few years now and it is the best! We lightly spray our pan with oil and then put our meatloaf into the pan and all the grease drains to the bottom of the loafpan. It really works! Clean up is so easy! And........You don't get all that grease into the meatloaf!

I love this pan so much, I am buying another one for my daughter who is getting married soon. I had no idea I could find another meatloaf pan on Amazon.com. I had forgotten where I bought my original pan. I am so glad I found you www.amazon.com!

My Mom taught me how to make her delicious "Ketchup Meatloaf" when I was young. It was baked at 350ΒΌ for one hour in a square pan. We always used ground chuck meat for this recipe, and when the meatloaf cooled after cooking, it sat in a puddle of congealed fat. No more! I have found this Chicago Metallic 2-Piece Lowfat Meatloaf Pan. (Another bonus is that I can now have a "dedicated" meatloaf pan and no longer have to use my Calphalon loaf pan for meat.)

At first, I was worried that the meatloaf would be too dry, but after trying out Mom's recipe in this pan, I am convinced! The fat from the ground meat drains out through the holes and collects in the bottom pan. When making meatloaf, you want to use ground meat that has about an 85% meat-to-fat ratio ("ground chuck") for the best flavor.

When the meatloaf is cooked, let it cool for five minutes, and then slice it for serving. The leftover meatloaf makes for great leftovers and wonderful sandwiches.

This 2-Piece Meatloaf Pan is truly nonstick, so clean-up is easy. I wash my pan by hand with a mild liquid detergent. I highly recommend this product--it is not a gimmick!

This is a great meatloaf pan! I received one as a gift after I raved about a meat loaf cooked by a friend in one of these pans. It is great for people trying to watch their fat intake. The fat drains easily into the bottom pan and cleans up very easily. You are still left with a nice, juicy, flavorful meatloaf. I have not yet run into the rusting problem that other amazon.com reviewers have. This pan is highly recommended!

I recently purchased this pan and have used it about five times to date. I prepared the south beach recommended meatloaf and was pleased with the result. It is actually a multipurpose pan. I have no complaints. I wash the pan by hand immediately after use. Nothing appears to stick in this pan.

Yesterday I picked up a cornbread mix from Trader Joe, and baked it in the pan. I sprayed the pan with olive oil cooking spray and it came out beautifully. This is the second item I owned from Chicago Metallic products and I am truly impressed. I definitely recommend this pan.

Purchased this pan recently and am so pleased with the how well it bakes - I am looking to add to my baking set with more Nordic Ware. I baked two loaves of "Friendship Bread" in this pan and my traditional loaf pan. The one in this pan absolutely fell out beautifully!! It did not stick at all and the shape made it extra nice. The other one - well, it was a good thing it tasted good. Definately recommend this pan!

Why shouldn't you have a good looking cake? This pan is perfect when it comes to baking sturdy, non stick and it has not hot spots. The shape is quite nice, and the design turns out well. Cakes and jello both turn out very well in this pan.

The Calphalon Commercial Nonstick Bakeware line is excellent. The nonstick coating is superb, they are heavy, sturdy and very well made. The nonstick coating is so slippery nothing sticks to it. I have the large, medium and mini set of loaf pans and they are all fantastic. The large and medium sizes are great for breads, banana bread, pound cake, etc. and the minis are great for holiday baked gifts or personalized desserts. Who wouldn't like their own mini pound cake?

Although you could, I don't use my bakeware for meats, I prefer to use bakeware for baking and stainless (All Clad) or stoneware (Le Creuset Poterie) for meats and meatloaf.

One note: you may want to check on your baked goods a couple of minutes early. I have noticed that everything is done a little quicker in pans with a dark finish. Many newer recipes will indicate the timing for dark finish bakeware. These pans are also a breeze to clean, just a little soap and water and you are done.
Also, read the Calphalon brochure in the box, if you plan to nest this pan with others make sure to put a paper towel between them to prevent any damage to the nonstick coating. And, this pan is not dishwasher safe.
I wouldn't even trade my Calphalon Commercial Nonstick bakeware for All Clad bakeware, all my cookware is All Clad and I love it but nothing beats high quality, heavy duty Nonstick bakeware! Wonderful Pans! Highly recommended!

I bake breads a lot, especially sweet breads. I had bought a medium Calphalon loaf pan from the same line and absolutely love it. However, I couldn't find the Calphalon brand mini-loaf pan locally, so I bought a set from Williams-Sonoma. The WS pans looked very similar, but were absolutely no comparison. For one thing, the WS pans started rusting under the rim immediately (after the first wash, and, believe me, I baby my bakeware!) So, needless to say, the WS pans went right back to the store! I found these pans here at a great price! I am so glad I have these now, and I will never make that mistake again!

I can't tell you enough good about these mini baking pans. Around the holiday's i bake pumpkin nut bread to give to neighbors and friends. I used to buy those aluminum throw away loaf pans and they are terrible, i would re use them and they would stick in the pan after i baked them...wasted a lot of money on them. This product is excellent. I have used it twice with no problems (knock on wood). Even though it's nonstick, I still coat the pan with shortnening. The loaves come out with no problem and the pan is a snap to clean. Just rinse and that's it. Nothing gets stuck in crevices and the loaves come out just the right texture and color. Great pan for a great price.

I have taken much pride in my kitchen wares, only buying what I thought was better products. Then I discovered Calphalon! I am presently replacing everything. I purchased this large loaf pan and compared it to what I presently have. The pan is heavier and obviously is of quality. I could not beleive the results that I acheived with this pan. I immediately got rid of my other three loaf pans and will only purchase Calphalon from now on.

This is a nice size and good heavy weight loaf pan. It did a good job on the meat loaf. Would have been fantastic, if I had lowered the temperature and watched the time better. My main complaint is the cleanup. Had to use a toothbrush to clean out the deep creases on the sides and went over it several times before getting all the gunk out. Think I will use these pans just for bread from now on.

Great Pan for breads, meatloafs, Tofuloafs (Ick!). Your Product will cook a bit faster than the cheeper loaf pans that are out there. You will need to stay by your oven and check for doneness instead of gabbing on the telephone. Cheeper Loaf pans are not sexy! The reason your product will cook faster is the heavy aluminum commercial quality and construction. They are non-stick, but I still grease and dust the pans the way any recipe would require. My first observation while taking this strange pan out of the box was how big it looked, it measures 13 x 15.5 and another 2 inches counting the handles, also a generous 1.5 deep. The thing is rubbery and flexible and I was skeptical. The sled is great for keeping it stable. I very lightly oiled it rubbing with an oiled paper towel (PAM would work well) as the instructions said and put my whole wheat bread dough into each compartment. Into the oven it went and WOW did it come out great! The loaves puffed up all around even on the bottom, they pulled away from the pan and fell right out! I tried mango bread yesterday without oiling it, it did try to stick a little where the fruit touched the pan, so DO OIL IT LIGHTLY, you also need to cool quick bread a bit as usual before unmolding, unlike yeast bread which jumped right out. I also like that the sides are straight up not angled so when you slice the loaves you get a nice square slice! Nice you can work the pan off the loaf pushing the pan inside out thanks to it's flexible nature. I also like that 3 mini loaves is exactly the recipe for 1 regular loaf, baking time was just a hair shorter then for regular loaves at the same temp.
