High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 8-3/4-inch bread knife, with a scalloped edge for slicing crusty loaves, is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety.

Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. When I was washing the knife I noticed that the fine edge on the serrations had bent over to the non-scalloped side of the blade. I guess i found this a little irritating since i spent a fortune on this knife. It cuts bread fine, but i would not purchase again if i had the choice.

A fine knife for most bread but when cutting large, tough loaves it has trouble "finishing" off the bottom of the crust. A better design is a knife with a slight curve, and sure enough Henckels has one of those as well. If you like hearty, thick crusted bread, then spend a few more dollars and buy the 9" instead.

What can you really say about Henckels knives? Only that they are the best on the market. As such you'd expect to see a 5star rating, however the reason it only attained 4 from me is because of one minor incident.

The first time I used the knife it was on a very hard crusted loaf from Panera that decided to not have them slice because i wanted to play with the new addition to my collection. The Henckles made quick work of the loaf as expected. When I was washing the knife I noticed that the fine edge on the serrations had bent over to the non-scalloped side of the blade. Nothing visiable, but you could feel them when running your fingers over them. A swipe or two with the honing steel from the back and a few twisting pulls in each scallop from the other side trued the folds straight again.

Honestly its a little my fault too for taking it straight to this "rock" before breaking it in a little first. Not that Henckels need to be broken in, but you know what I mean.

Seriously, this is a perfect bread knife, especially for someone slicing through tough-crusted baguettes almost daily. However, since it's "only" a bread knife, I can only give it four stars. But just as soon as I get my hands on one of those Santoku knives...

They shouldn't call this a bread knife, they should call it the Everything knife. The ultra-sharp steel saws through just about everything...I use it as my carving knife for meats, and it has held up without any problems for more than two years so far.

I love all my Henckel knives, but this one is definitely the most versatile. It's 5" length and super sharp serrated blade make it ideal for vegetables as well as meats and smaller bread loaves. If you're not going to buy an entire set of quality knives, you really should have this one amongst the few you choose.

We have several top quality knives of different types but this relatively affordable serated knife is our first choice for chopping or slicing any sort of vegetables. My wife especially likes the feel of the handle and overall balance.

(I say this with regret as I love the handle and balance of my Henkels chef knife). Henckels knifes are indestructable and I my experience (and I have heard this confirmed by a professional chef and cooking instructor) is that they are near impossible to sharpen. For many people this may not mean a lot, but a good knife should be able to have that remarkable edge for years (not just the first 3 mos). A professional may be able to sharpen these but not as well as other knives (e.g., Chicago Cutlery and others) -- no second honeymoons with these.

We purchased a Henckels Four-Star set about ten (10) years ago and use it daily. Out of the set of six or seven knives, this utility knife is our most frequently used. It is extremely useful in food preparation, holds an edge longer than the other non-serrated knives, and isn't affected by dish-washer abuse.

This is a great product that will last you many years. One caveat: NEVER allow your MOTHER-IN-LAW to borrow it and use it as a screwdriver. It will be ruined - hence my purchase of a second one of these knives. ... Read more

I've only used stamped serrated bread knives with tiny little teeth that create a mess and take some work.
I was amazed at the few crumbs this knife produced when cutting. With the weight of the knife it helps in making even slices very easy with minimum effort. Good value too.

I have used stamped, serrated knives for bread duty for some time. I really didn't think that anything else was needed. Most of my sandwich bread, as well as all of my ethnic bread is made here at home, so it pretty much gets sliced on the fly.

When I bought this knife, I was impressed by the way that the extra heft of the forged blade cut through crust without complaint. I also bought a plastic "bread keeper" (which works very well), and it included a plastic slicing guide. I noticed that the Calphalon bread knife was able to produce consistant, thin sandwich slices with less effort than the lighter stamped knives. The slices are also smooth and straight, and are made with less crumbs. You can live without this knife, but it does the job just a little bit better, and it looks and feels wonderful. ... I bake bread on the average of three times a week. With my old bread knife I could never slice the bread while it was still hot because it would just mash it down and the dough would stick from crust-to-crust. This baby slices right through the bread hot out of the machine like a hot knife through butter. With this knife you can slice the bread as thin as you like and you will have beautiful, even slices at a terrific price!

This knife is very sharp and has a comfortable grip. It is well balanced and feels solid and substantial but not too heavy. I received my Pro 8-Inch Bread knife as a gift with a block set, out of all 12 knifes in this set this is my favorite one. It goes through a freshly baked loaf of bread without any effort, no squeezing or crumbs. My knife is made in Tailand out of shiny stainless steel (not that high carbon steel that is impossible to sharpen) and it doesn't require sharpening. I wash it in a dishwasher and it seems to do fine. I highly recommend it.

I have been wanting a Henckel bread knife for some time, and even had it on my Christmas list, but no one took the hint. When I came across this one for $9.99 at Amazon I was very skeptical, but after reading the other reviews I decided to order it. When it arrived I immediately opened the box to check it out. I found it to be a good size, feels good in my hand, is very well weighted, and after washing and drying it, put it to the test. I sliced into a tomato, and it worked beautifully----I can make very thin slices without smushing. Then, I peeled and sliced a grapefruit with it---lovely. I still haven't used it on bread, but will as soon as I have time to make some crusty peasant herb bread or a loaf of focaccia. I have made a gazillion purchases from Amazon, everything from books to phones, toys, cutting boards, flatware, videos, yoga mats, all kinds of goodies, but have never felt compeled to write a review until now. That should tell you how much I love this knife. I did not give it five stars only because I assume the German made version must be superior---but then look at the cost. This is one of my happier purchases from Amazon. If you would like a great bread knife to use on bread, slice sandwiches, tomatoes, fruit, etc., get this one. For ten bucks it's a steal. And if you should see bread knife on someone's wish list, give them this one.

no complaints, no praises...other than it cuts bread. When I shopped, this seemed like the best priced bread knife. It works perfectly, but if there's cheaper out there...unless you're set on the looks of this one, get the cheaper one. They're bread knives - they have to be very good to do what they're supposed to do.

This is the perfect knife. I have many, many other knives of various brands including Cutco, and I always find myself reaching for this one. Well worth the price! I always throw mine in the dishwasher and after several years, still no sign of rust.

I bought the 7pc. Pro-S block set. This knife was included in that set. As I was admiring my new tools I was utterly suprised to see what looked like a stain at the bolster of this knife. As I looked closer it was actually a small section of pitted steel. As I was looking at this moderately small spot I noticed a pitted crack approximately 1/2 inch in length extending from that spot down toward the point. At the point another pitted area covering approximately 1/8-1/6 of an inche from the tip down the scalloped side of the blade.

Don't get me wrong the Henckels Pro-S is still the best knife you could buy, but I was astounded that quality control missed this defective blade. I thought I would never have to make use of the lifetime warranty (especially 3 days after buying a set). But hopefully the exchange will go just as smooth as these excellent knife cut though food.

The Professional S series has been a blessing in our family in the two years since it replaced a set of those cheapo "Never-needs-sharpening" knives.

We live on our boat, almost full time. Although our galley is about the size of a medium on-land kitchen, the space for cutlery is relatively compact. The Pro-S series, in general is superior to any knife I have ever used. Specifically the 5 inch serrated utility knife is the single most used knife in our collection. For slicing veggies or anythng with a crust there is no equal. We admit to being a little partial to Henckels cutlery and have wanted a 5" utility knife for some time for dicing green peppers, fine-slicing onions, and similar tasks. This item has a great smooth feel in the hand, with enough heft in the handle, and enough length on the blade, to provide excellent precision in whatever your smaller cutting tasks might be. "Sharp" goes without saying and our prior experience with Henckels serrated edges leads us to believe the knife might well outlast its owner!

I got this knife as a "Gold Box" item. I expected it would be the same well designed full tanged knife as the rest of my Wusthof "Classic" knives (I have 8). It is not, and it doesn't have the same balance and heft that I've learned to expect from the Classic line. None the less this is a good bread knife, I'm am concerned about how long it will hold an edge however. I do prefer my 9" Classic bread knife. On the upside I find I cut bread more evenly with the offset handle.

You can only slice crunchy crusts with a serrated blade. So obviously this is your best bet for slicing bread. But, I use my Wusthof Bread knife for cutting frozen meats and it works great for that too.
High quality steel ( x50 Cr Mo 15), high production standards. Comfortable, "familiar" Wusthof Classic 3 rivet handle construction, with a stiff backed forged blade with sturdy weight and balance for multiple uses in the kitchen.

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This particular model, the 8 inch bread knife, is a great knife. Many people think tomatoes are the hardest food items to clearly cut. I think bread is much more difficult; but this knife makes the task seem easy. My only quibble is the length. I find the 9 inch bread knife to be a better length for most loaves of bread.

I recommend the Wusthof 8" bread knife, but I would try out the 8 inch and the 9 inch to see which you prefer.

I never thought that I could fall in love with cutlery. But after having used the Grand Prix knives for a year, and having them stay as sharp as new, and cut so effortlessly, I have to say that I'm truly enamoured, and it's made my time in the kitchen so much more pleasant, that I'm becoming a better cook, just because I like to find new things to try out just so I can carve and cut them.

I did a lot of research before purchasing my Wusthof knives. The Wusthof Grand Prix line is consistently rated #1 by Consumer Reports. The bread knife did not come in my set, so I purchased it separately. Great investment! This knife goes through bread like, pardon the pun, a hot knife through butter. Wusthof is impeccable quality and very much worth the extra price. My next purchase will be the 5-inch serrated utility knife. Highly recommended!

One of my young ones received this as a gift and when it arrived at work we all just HAD to give it a try. We bake all of our breads from scratch and our crusty loaves surrendered meekly to this blade in two strokes no matter which recipe we attacked...it even sliced our house "Wonder Bread" sandwich loaves cleanly! This 9 inch is sooo much more versatile and heftier than the 8 inch ...size really does matter.
I'm biased against all Wusthof "Classic" knives...I think that they're too light weight and small scaled (the grip is too narrow for me) but...
I bought TWO of these for myself 'cause this is the BEST bread knife that I've EVER used although I highly recommend the "Grand Prix" line for it's better "grip".
Biased or not I'm still loadin' dis bad boy up wit tha MAX ...5 mojo*z! HAZAAH!!!

This knife makes me wish bread did not come sliced. It feels great and performs great. It works on watermelon too, though I'm not sure if I should be using it that way, so don't take my advice there.

By far the best Bread knife I have ever used. Its weight and design lets it slice effortlessly through bread (and tomatoes if you are too lazy to get another knife out of the block). We bought this knife as part of a set, and out of the bunch it is my favorite knife.

If you are having trouble deciding between the Classic and the Grand Prix, I prefer the Classic.Although the Grand Prix is slightly more comfortable, I prefer the construction of the Classic. If you inspect the knives, you will see that the Wusthof Classic has a full metal tang with 3 rivets. The Grand Prix, although having the same blade, has a smaller, cylindrical tang that runs the entire handle of the knive. This tang is secured by a single large rivet at the end of the handle. Although I'm sure the Grand Prix is well built, I bought these knives for a lifetime of use and heartier construction of the Classics just appealed to me more. ... Read more
