It's not that this isn't a high quality knife, it is.

For that quality, I'll give it four stars. It's got a full bolster, and it's forged (not stamped) in the German style. It's very hard, and takes a good edge, that lasts well. It's perhaps a bit tough to get an edge on without knowing what you're doing if using a flat stone, so for that I'll give it four not five stars.

The thing is, why do you need a $...sandwich knife? Many other companies make many other knives in a similar style and shape that cost a fraction what this knife does.

Forschner comes to mind. Sure it would be stamped and wouldn't have a full bolster, but it would cost $... instead of $..., and for a knife you're really not going to use that often you should save the money and get yourself a better chef knife.

Forschner makes a monderful 5-6" utility knife that looks like a mini chef knife that is great for cuting vegetables, and doubles as a terrific sandwich knife.

I frankly only have this knife because it came in a set with a 8" chefs knife and a pairing knife.

4-0 out of 5 stars Good Knife, But How Many Uses?
There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This particular model is the 6 inch sandwich knife. I don't find this knife to be particularly useful in everyday usage. The 8 inch chef's knife, or 4 ½ inch utility knife work just fine for jobs on either end of the spectrum. Do you really need this expensive of a knife to cut baloney? I don't.

Don't get me wrong; this is a good high quality knife. However, for the mainstream chef, I think its usage will be minimal, and thus it is overkill.

I just added this knife to my Wusthof collection. I arrived extremely sharp, and is nice for semi-fine work. Activities like dicing shallots, which are too small for a large 8 inch knife and to big for a paring knife, are nice with this knife. There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Culinar line is an all stainless steel look, rather than a black handle. Although the picture and some descriptions want you to think this is a single piece knife, be advised that the hand is a separate piece of stainless steel molded onto the tang. I personally prefer the handle of the Grand Prix and Classic, because the grip is surer for me, but this is, to some extent, a matter of personal preference. This series "looks" more professional to some (like a Viking stove).

This particular model, the 8 inch bread knife, is a great knife. Many people think tomatoes are the hardest food items to clearly cut. I think bread is much more difficult; but this knife makes the task seem easy. My only quibble is the length. I find the 9 inch bread knife to be a better length for most loaves of bread.

I recommend the Wusthof 8" bread knife, but I would try out the 8 inch and the 9 inch to see which you prefer. ... Read more

Global knives are great! and for the straight edged one's Global offers enough equipment to keep them nice and sharp. But for the serrated edged knives(and Global has such hard steel). It is almost impossible to resharpen them again. When ever I buy a a serrated knife I am going to stick with more affordable stamped knives by Henckels, Forschner, or Wusthof that don't cost a fortune if you can't resharpen them.

I bought this knife along with a few other Global knives and ended up returning it. This is not to say that this is a bad knife but I found that it was unnecessary alongside the rest of the Global knives I purchased. The non-serrated knifes are so sharp that there were practicaly no instances where I needed to use this knife. I did end-up keeping the 8" serrated bread knife but as long as you have that one, you don't really need another serrated knives.

I like being able to sharpen my knives frequently and this isn't very easy to do with serrated knives. A special tool and technique is required and the whole process is very time consuming. In addition, make sure that you use a ceramic sharpener on all global knives. Its supposed to have a different grit that is better for them. Kyocera (ceramic knife manufacturer) makes one specifically for Global but they are quite expensive.

A bread knife is a specialized tool -- you really can't use it for much other than cutting bread. It's tempting to purchase just any bread knife. But this is forged, rather than stamped, and the reduced flexing of the blade goes a long way towards making the slice the slice you wanted rather than what you happened to get. Functionally, this knife is beyond reproach. Even with crusty breads, the crumbs are minimized.

It does not use the traditional three-rivet handle -- the handle is molded. But it is a full tang, and there's no reason to expect any loss in longevity.

I gave this four, rather than five, stars primarily on the basis of the appearance of the blade -- but this is a matter of personal taste. Unlike knives used in the kitchen (where getting the job done is the job, and the appearance is not particularly important) a bread knife is likely to be used before guests. The utilitarian appearance of the blade is entirely appropriate to my tastes, however it may not appeal to those who expect a highly-polished appearance. If you are looking for a bread knife that will suit all of your needs, this is not it.

If you only need a knife for cutting bagels, muffins or soft, freshly baked breads, then this knife will work great for you.

The problem with this knife is that it is not nearly of the same quality as most of the Wusthof cutlery. It is a lot cheaper and it very flimsy. The product description says that it is a new construction that allows it to be thinner while retaining its strength, but it will bend easily if you are not very careful. Anything with a semi-firm crust will give this blade a hard time. It seems to me that it also dulled very quickly in comparison with other knives considering a never used it on anything tougher than a sesame seed bagel.

The smaller knife actually works great for cutting vegetables and I use it more often than the bigger knife.

My recommendation is that if you slice a lot of different kinds of bread, then you should get a higher quality Wusthof bread knife on plan to cut your bread at weird angles.

I agree with the 2nd. buyer, these are descent knives. I love mine & although they are a bit flexible it's not like I'm going to be cutting through tin cans or steel with them, lol. They slice through bread like butter and after trying basic cheap bread knives from cutlery sets I've owned in the past these are the best ones that work for my Breadmaker loaves of bread. I recommend these knives but would suggest waiting to purchase them if possible on another Amazon Friday sale like I did. I give them 4 stars!

I bought a whole block of these "silverpoint" wustoff knives thinking I would be getting a fairly decent knife considering their reputation even though it was their lower end. My husband and I are very disappointed. The knives are thin, flimsy and bendy...not good when you need to cut a very crusty slice of bread or anything else a little tougher. They aren't as sharp as I was expecting either. I would have been better buying a cheaper brand with a thicker, more solid metal part. I guess if you're going to go for Wustoff...go for their expensive knives, because in their case, you get what you pay for...and less.

A curved blade helps cut tough homemade bread when that bit of crust at the bottom hangs on until the end. Straight blades tend to hang up at the tip. I'm not sure that you need to spend this much on a bread knife, but it's a beautiful knife that fits with the rest of this set and it's the better of the two.

First of all they are both Henckel Pro-S knives. They don't have bad points.

#1 The country knife has a slightly curved blade as compared to the straight edge of the regular bread knife

#2 The country is 1" longer (duh)

And the winner is . . . 8" Regular. The reason? They are both made by Henckels and both are top of the line. Unless there is a real need for an extra inch of cutting surface and slight curve to the blade for a couple of bucks more(and so far I can only see that holding a bigger knife is more spectacular), go for the 8" regular unless you really believe that bigger is better. ... There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Culinar line is an all stainless steel look, rather than a black handle. Although the picture and some descriptions want you to think this is a single piece knife, be advised that the hand is a separate piece of stainless steel molded onto the tang. I personally prefer the handle of the Grand Prix and Classic, because the grip is surer for me, but this is, to some extent, a matter of personal preference. This series "looks" more professional to some (like a Viking stove).

This particular model, the bread knife, is a great knife. Many people think tomatoes are the hardest food items to clearly cut. I think bread is much more difficult; but this knife makes the task seem easy.
