5-0 out of 5 stars A great little gem for the kitchen, at a great price!
I picked up this Commercial Nonstick skillet along with several other pieces of Calphalon's open stock collection, and I have been impressed with every piece I've gotten. This is great for burgers as well as omeletes and pancakes. About the only "problem" with it is that I'm not accustomed quite yet to the high quality found in Calphalon, and I didn't expect the burgers to brown on a non-stick surface as quickly as they did, so I wound up with two rather rare burgers as a result of fearing that I would burn them. Now that I see how Calphalon's nonstick line cooks, I have had more success, and now I have beautifully cooked hamburgers every time.
This is nonstick, so you do have to treat it with kid gloves, but as long as you use nylon or wooden utensils, do not overheat the pan, and don't run it through the dishwasher, this pan should last you a lifetime. I'm so glad I bought this, because I know that Calphalon's line of Collector's Edition products are only available for a limited time each year. I'm glad I didn't miss out on this beauty before it was gone forever!

I can't say enough great things about this pan. I bought it as a low cost alternative to an omelet pan and it has far exceeded my expectations. It is absolutely wonderful to cook omelets in -or any egg dish. They come out perfectly every time and the non-stick coating and low sides allow you to simply slide the eggs out of the pan onto the waiting plate. It is the perfect size to heat a solitary tortillas too! This size is wonderful for cooking a serving or two and should be quite useful in anyone's kitchen. Once I heat up the pan I can make individual omelets in a couple minutes so it is useful for a larger family. It has the weight, riveted handle, etc that you expect from a quality Calphalon product. A great price for a great pan - everyone needs at least one non-stick pan and this is a wonderful choice.

If you are considering the purchase of this pan or any of the caphalon products in this line. Totally disregard the Toledo vs China comments. They have no validity WHATSOEVER! I've purchased three of these pans (2 Toledo's, 1 China), and there is absolutely no difference in quality, thickness, or weight. I've also purchased the Calphalon Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepans with Lids (1 Toledo, 1 China), the Calphalon Commercial Hard-Anodized 9-Inch, 2-Quart Chef's Skillet with Lid (2 China, 1 Toledo) and again,there is absolutely no difference in quality, thickness, or weight. There is a difference in thickness & weight, if you compare them to other caphalon product lines. However, that is not to say they are inferior. They have a nice thickness and weight, great heat retention and dispersment. Awesome for browning, making sauces, stir frying, etc. If you follow the instructions for use, you will have no problems with cleaning,food release, or sticking. I have read most of the reviews, and the bad ones can be attributed to two things: 1. We alway seem to think stuff is way better made in America ... not true in this particular case. Those who made statements about Toledo pans vs China pans, could not own pans from both plants. 2. Complaints about sticking, or cleaning, ...they didnt follow the SIMPLE instructions. For the price, brand, warranty, and quality, this is one of the better kitchen purchases. Oh...I'm all for buying "made in America"!

This pan has become one of the most useful pans I have. It is of heavy construction, heats evenly, and the non-stick surface is great. The sides are low, but it serves as a good griddle, is useful for breakfast, cooking 2 or 3 eggs easily or about 4 pieces of french toast.

This is not my first piece of Calphalon and it certainly will not be my last. I wasn't sure how large this saucier would be when I ordered it, and I still haven't found a place to store it in my limited cabinet space, but I have honestly had little need to store it since it works so well for most anything. It has a huge amount of surface area so it works well for searing and braising, but it is somewhat shallow so it is perfect for poaching eggs. Plus, this is an amazing price. Worth every penny.

Like all Calphalon Commercial pieces, you are getting a high-performance, sturdily constructed tool that will make you a better cook.

This saucier is wider and shorter than a typical stockpot, ensuring maximum heat transfer from the burners. It's great for such dishes as making chicken stock -- You can brown the chicken on the stovetop, then deglaze with water, etc., for a darker stock. Great for making soups, cooking squash, chili, etc. (Consider topping with cheese and sticking under the broiler for a few minutes to brown -- it's over safe to 700!)
The combination of Calphalon's superior aluminum heat conduction and a wider top reduces liquids quickly, while cooks enjoy easy access into the pan -- something that can be tricky in a tall, narrow stockpot. Keep in mind that space can be an issue -- this stockpot can crowd out other pans on a small cooktop, and does take up an awful lot of space in your cupboard.

One caveat: As with all Calphalon, you can not put this in the dishwasher (even if you could fit it in). The machine will leach out the Calphalon coating, causing pits and discolorations and void the lifetime warranty to boot!

To clean, I find a little Bon Ami or Dormond cleaner and a Scotchguard green scrubber gets out anything without much fuss. Cleaning will be aided by proper deglazing. Also, you will find your food will stick less if the pan is preheated and if the food isn't ice cold when tossed in.

I purchased (from Amazon) the Calphalon Commercial Hard-Anodized 8 1/2 qt. Saucier pan last Christmas as a gift to myself! It arrived prior to Christmas, so I used it to cook a beef roast on Christmas day. We were in temporary housing and even with having to cook the roast on the stovetop (oven not working), we couldn't have asked for better results. Then after our move, I roasted a hen in this pan in the oven; the hen was so moist and tender - my husband raved over it - the first time in 20 years that he's actually enjoyed a roasted hen. On top of that, the gravy made in this pan is the best - deglazing is so easy! This is a really large pan, but the heat distribution is so superb, there was not a bit of a problem even cooking on a small stove top burner. I LOVE Calphalon, and the Commercial Hard Anodized is my favorite line. Every few weeks I'm looking for another piece to add to my collection and replace my old stainless cookware. You just can't go wrong with cookware of this quality, and I know it will be passed down to my daughter becasue it just doesn't wear out. What a value!

This is the most versatile pot in my collection. I use it for everything from making marinara sauce to roasting my Thanksgiving turkey (a 25 pounder). I love the fact that the handles are heat resistant (unless you use the pot in the oven, of course). Some reviewers have complained about the size of this pot and insufficient heating. I have a fairly small stovetop, so to sufficiently heat the pot before using it, I turn the (gas) burner on high and test the perimeter of the pot by sprinkling water on it to test the temperature. Then I turn the temperature down to cook. This method has worked for me for over a year.

This is the second peice of Calphalon commercial that is "NOT" nonstick that I have...Everything else is commercial nonstick, but there are times when you need this type of pot.
When you have to Braise a big roast for pot roast, or chicken etc.... I put a little olive oil in this and braise the roast, with vegies , wine etc, it makes the best french pot roast, with the stock to die for, then I finish it off in the oven for a couple of hours...yummmmm...

For some of you people that complained about this pot being too big for your stove top, cause you don't have the big burners, you can buy the Large Caphalon Defuser at William Sonoma, and you won't have that problem, it will cook everything on top of your stove even.
((Think the defuser is only made from calphalon for William Sonoma only))

If you soak this big pot you should not have any problem washing it, Just make sure you do not put this or the lid into the dishwasher, or you will ruin it and void out the warentee.

I think this is a must have, in your Calphalon Collection..I also payed less for this in amazon, but I hear that Calphalon is not going to be making there Hard-Anodized Cookware any longer, since they have come out with the Calphalon infused!!((call Calphalon and find out?))
Must say I love the Calphalon Commercial nonstick, but I do like the new handles better on the Calphalon infused.

5-0 out of 5 stars Fantastic Cookware Set at a Terrific Price
After comparing major cookware lines, All Clad, Emeril, Wolfgang Puck, Jamie Oliver online, as well as in major stores, Williams Sonoma, Macy's, Linen n Things, etc., I purchased Cuisinart's Chefs Classic set. Quality, features, and value could not be matched! The price (with free shipping), also included a kitchen tools set, a nice bonus.

Thanksgiving was my big "road test". The quality is outstanding! The mirror finish stainless kettles have a nice weight, well-fitting lids, classy sturdy riveted handles, flat bottoms that fit nicely on the burners, and stay-cool handles. They heat evenly. I do not like nonstick cookware, and by adding a little water to the pan after cooking, cleanup was a breeze. I put them all in the dishwasher and they come out sparkling.

I bought a chrome potrack and display them proudly. They indeed look and perform like very high-priced cookware. This was indeed a great purchase!

Any minor spotting or discloration from use, disappears like magic with the use of a small amount of Barkeeper's Friend powder.

I am so pleased with my set that I have already added to it; I purchased a 2qt. and 3qt. saucepan, and the 5 1/2 qt. saute pan. The saute pan is a work of art; especially good for those big pieces of meat on Holidays, and at $39.99, an unbelievable value. I plan on purchasing several as gifts.

It is also ovenproof to 550 degrees; something not found in the plastic-lid products.

You will not be disappointed.

My husband and I purchased this cookwear after our wedding with some of our gift money. We considered Calphalon, Anolon, AllClad and Circulon as options, but we saw this one at a local kitchen supply store and bought it there. They were offering it for a good deal but we came home and found this even lower price at Amazon so we returned the set at the store and bought it online. We're glad we did! The value is outstanding. This cookwear cooks quickly and evenly, the handles stay nice and cool and it is a breeze to clean up. Just put the pan in the sink with some water, let it soak for a few minutes and it wipes clean right away. It's even easier to clean than my old nonstick! We also bought the 5 1/2 quart saute pan, a two-piece nonstick skillet set (still comes in handy for scrambling eggs and cooking ultra low-fat meals) and the four-piece utensil set came free with the 10-piece set...Cuisinart makes excellent products...you'd be silly not to treat yourself to quality cookwear.

I have been in need of new cookware for a long time and through some research, including reviews here on Amazon, I decided this Cuisinart Chef's Classic Stainless 10-Piece set was the perfect choice. When this beautiful set of cookware arrived at my house, I was almost afraid to use it. The mirror finish was so gorgeous and I didn't want to get it dirty and risk it never looking good again! Of course, I got over it and used it right away.

Not only is this set beautiful, but also incredibly functional. The heat was dispersed evenly, making cooking so much nicer. The lids on this set are fantastic as well. As for clean up, they clean so easily and yes, still look gorgeous.

If you are looking for a great cookware set that holds up well on the stove, in the broiler and even in the freezer, this is the set for you. And the price is right!

Functional as well as beautiful, the 15 pieces in this cookware set will bring joy to any serious cook. The set includes a 1-quart covered saucepan, a 1-1/2-quart covered saucepan, a 2-quart covered saucepan, a big, 8-quart covered stockpot (6-1/2 inches high, 9-3/4 inches in diameter), and a 4-quart covered saucepot. I have used my Farberware stainless steel starter set constantly ever since I received it 37 years ago when I got married. Then the frypans were stainless steel--same guage as the pots and even the eggs still don't stick. Now I want to start my daughter off with the same set--and all that is offered is ordinary aluminum non-stick skillets. Definitely a downgrade. Wish I could find a set on special--but with stainless frypans.

We're happy with our 20-year-old Farberware stainless steel cookware, pre-dating the stainless steel capped base. The interiors are still like new. The lids are shiny and dent-free. The handles are faded, but remain tight with an occasional turn of a screw. We use it everyday.

We are equally pleased with a couple of "Classic" pieces we bought several months ago. We particularly like the added weight and improved appearance of the capped bases. Most recently, we bought a 15-piece set, giving us some redundant pieces but at a better price than buying fewer pieces individually.

We like stainless steel for several reasons: It cooks well. We can use metal utensils. It lasts for decades. It's dishwasher safe without consequence. It looks good. It's heavy enough. It cleans up easily. (For occasional stuck on food, we simply blot out what's loose, add about a cup of water, and bring to a boil. After a few seconds, the stuck on food wipes off easily. Or by "deglazing" if you prefer.)

There's pricier cookware available, some with aluminum cores that extend up the sides of the pan, some with copper clad bases, some with handles rated to 500 degrees, some made of anodized aluminum, and some so heavy you can use it as part of your fitness program. After years of no-complaints with our Farberware Classic stainless steel, we can't see paying the premium prices for anything else. We don't use our cookware in the oven, so we're okay with our 350-degree handles.

One complaint with the set: The non-stick skillets are 100% ALUMINUM with a PLAIN exterior and NO heavy base cap. Per Farberware's website description of aluminum cookware: "Aluminum stains easily and reacts with certain foods. A nonstick interior and porcelain or nonstick exterior prevents staining and food reaction. Nonstick aluminum is dishwasher safe. A plain aluminum exterior may discolor in the dishwasher."

We use stainless steel for most of our cooking, but prefer non-stick skillets for things like eggs and grilled cheese. We'd like the non-stick skillets in this set better if the exterior had a finish on them, but otherwise they seem like the typical lightweight non-stick aluminum pans we replace every few years. We may just give away these aluminum pans in favor of heavier, non-reactive, (but pricier) non-stick anodized aluminum.

I have most of these pans and would not consider giving them up for any other I have seen to date. I do not, however, trust the handles to oven use and I like to have a stock pot that I can use as a dutch oven in a pinch. I bought this pan based on the performance and construction of other Calphalon cookware I've purchased. However, as soon as I unpacked this one, it was apparent that the workmanship and finish was significantly below my other Calphalon pans. The pan rim was unevenly ground - the lid fits flat, but looks uneven when the lid is removed. The polished lid has numerous tiny pits and marks not found on my U.S. made Calphalon. I suppose this is one of the trade-offs for the great price, although if I were Calphalon, I'd market the China-made line under a different name if they can't maintain the quality standards of the Ohio made line.

I had previously purchased the 9" Commercial Nonstick Collector's Edition Everyday Pan with Lid from Amazon, which was made in the Ohio, and was very impressed with the contruction and finish. (It also works very well, but is a bit tippy on burners when empty.)

Cooking quality is fine so far. I hope the nonstick finish will prove as durable as the U.S. made pans.

The size, overall appearance, and dual loop handles allows this pan to work well as a serving piece on the table for casual dining.

This was my second Calphalon purchase and the first non-stick. I'm not a big fan of non-stick, but this is great. Use it almost everyday. We have a Vegetarian Communist in our house and sometimes it is necessary to cook the same thing in two different pans...this comes in really handy when I want to leave something cooking while I concentrate on real food. Never had anything stick to this or burn, looks great too, have actually brought it to the table and served from it. Makes a great frittata, but be careful if you use it in the oven, not for use under the broiler. The handles get VERY hot. I knew that when I bought it, but just last night I picked it up without a pot holder and have the blisters to prove it. I can't believe I went all these years cooking without Calphalon, it's the best. Cleans up without any effort, a swish of the sponge and it's clean, or you could let the cat lick it out, nothing sticks to it. If you want what you're cooking to brown, this is not the pan to use, grab the hard-anodized for browning to perfection. Ciao!

Got this little Calphalon pan about two months ago because of its price. Have been impressed with it ever since! Heats fast and evenly. Can cook on much lower temps than I do with my commercial stainless steel cookware. This "three-layer" nonstick coating IS FAR SUPERIOR TO CALPHALON'S TWO-LAYER NONSTICK USED ON SOME OF ITS OTHER PRODUCT LINES! Downside: a) Thought it would be made in Toledo, OH, as are other Calphalon Commercial pans, but was made in China; b) Is on the smallish side and its rounded sides make spillage and overflow a problem if you fill it much more than half-capacity with something that requires stirring--don't expect to cook servings for more than two or three in it; c) Lid and handles do get hot, so have to be careful. But overall, given its price and quality--not to mention its pleasing aesthetics--it is a "must have" pan for every kitchen! (Curiously, despite Calphalon describing this pan as its "commercial" line, the lifetime warranty notes that it does not apply if "used in commercial establishments"!)

I felt that I needed to write a review to correct another reviewer. One review says that Calphalon no longer seems to making their cookware in the United States, however this is untrue. The Calphalon Commercial Nonstick line is made right here in the good old USA. This is the line I own, and I LOVE it. I will never puchase anything else. Calphalon does make a (much) cheaper line of products that they sell in stores like Target that you can get for about a third the cost of the Calphalon Commercial Non-stick line, and I believe that those are made overseas. I have owned a cheap set of Calphalon from Target, and I must say, it was bad cookware. But the high quality stuff is well worth the cost. Calphalon Commercial Non-stick is the best- it really is nonstick, the clean up is a breeze, and the coating doesn't come off after heavy usage. They also have a lifetime guarantee, so if you happen to get a piece that missed quality control, they will replace it. I must say that if you enjoy cooking, this is the set for you. I consider the higher cost an investment, because before I bought this cookware, I would go through the cheaper cookware pretty fast. This line will last you a lifetime, and Calphalon will be the last brand of cookware you will ever own.

To brew up a large pot of home made soup, chili, a pot roast with brown potatoes (Dan Quale where are you?)and carrots - you just won't find a better large pot. Brown your meat and onions on the stove top add some water, and pop into the oven until the meat is tender, add veggies and continue to cook at 300~325, covered, for the best roast you'll find anywhere. The down side is the price, here.You can find this pot at less than half the price as listed here if you do a bit of searching. As great as they usually are here, they do get a bit pricy from time to time so it is worth shopping around to find the best deal. But you will not go wrong with this pot.

I recently purchased this pan and have used it on several occasions, and each time the casserole has proven an invaluable buy. It's great for stews, braised dishes (like lamb shanks or osso bucco) and even plain ol' pasta. Cleaning up hasn't been much of a hassle, either, despite what some folks say about the difficulty of keeping Calphalon Hard Anodized stuff clean.

It's a great multi-purpose pan...a bit on the expensive side, but a tremendous investment for the home cook.

Calphalon's new Commercial Hard-Anodized line of cookware is great! I love the stainless steel handles which, unlike the cast aluminum handles of their regular hard-anodized line, stay much cooler to the touch. Also the lids on this line of cookware are domed, which create a tighter seal that reduces evaporation, so you don't have to add liquid during cooking. The handle on the lid is also stainless steel, and the shape has been redesigned to allow for easier lifting. These pans can also be used in the oven.

The Commercial Hard-Anodized 7-Quart Chef's Casserole with Lid is perfect for making a large batch of split pea, lentil, or chicken soup; Irish stew; and Coq au Vin. It's easy to braise your meat first at a medium-high heat, and then add broth or stock when you turn the heat down to a simmer.

I have tried other brands of cookware and these are the best at any price I've seen. I own both a set of the Tri-ply stainless and the nonstick Contemporary cookware from Calphalon (bought one and won the other) and both are fantastic. As far as any discoloration on the stainless, try some Bon-Ami or Bartender's Friend powder. Works great and keeps everyting very shiny and clean. All-Clad is fine but for the money you can't beat Calphalon. Calpahlon is owned by Rubbermaid so maybe that explains why it is so good.

My fiance and I chose to add the Tri Ply series to our registry based on look and feel alone. We couldn't be happier that we did. They look beautiful and feel wonderful. FOOD ACTUALLY COOKS DIFFERENT IN THESE. I would recommend using lower heat than you would with a cheaper set.

I too experienced a discoloration after using one of the pots for the first time... had a heart attack! As per one of the earlier reviews: a little distilled vinegar... poof, back to normal!

FYI - We chose this set over an All-Clad set based on looks and price... but we have some friends who got the All-Clad set... ours seems better when it comes to quality...

I believe that both All-clad and Calphalon are now made in China. Go and compare both side-by-side. Check the lids for flatness (see if they "rock" back and forth or are level). Turn all of the pots and pans upside down and check for tightness of fit at the handle. Some of the more expensive All-clad have a space between the handle and the pan that you could slip a dime into. Really, go look for yourself. Calphalon has better quality control, the lids rock less (still a little every once in awhile), and the handles fit snug (less chance of food becoming trapped). They just seem to be a surperior product. Thanks for the tip on cleaning the inside with a tbs of distilled vinegar. Brand new and the insides picked up some rainbow color. A little distilled vinegar on the inside, rub with your fingers and rinse. Like new again. As for cooking these are great pots n pans. If you are not a serious cook get the commercial hard anodized or commercial nonstick. These are unbelievably easy to clean. A real pleasure to wash by hand, and they "brown" foods with no real difference if you are an average cook. If I were buying these again I would start with all the deep discount sale pieces and build my own set. Your food will tase better, the colors are much richer (carrots are orange and greens are really "green") I always thought that was just a lot of hype. My wife is a great cook. I am an "eater" and love quality products. Non of the handles get hot. Just use a normal light weight dish cloth. Happy eating

I was concerned that I wouldn't use all the pieces, but I have found uses for everything here. They're like artwork in the kitchen!

The pans are nicely weight balanced and the handles stayed cool. I like the glass lids so I don't have to open them and release all the steam, but the steam fogs them over for a while anyway. The pans heated up at lower temperature and more evenly than any other pans I have such as the T-Fal skillets.

The pans cleaned easily with hot sudsy water and minimal scrubbing. I had some discoloration in my 2 1/2 qt saucepan that was sort of purple even after washing it twice. I panicked until I remembered the universal solution for cleaning stainless: distilled vinegar! It works on water spots and calcium as well. I put a splash in there it cleared up immediately. After rinsing and drying it was shinier than before I used it. Phew!

These are lifetime pans. I replaced everything I had with these. Some of the stuff I had since I got married, but no regrets. Just beautiful!

I changed my stars to 4 from 5 because those handles just aren't big enough to grip the pans and kind of hurt really. I wouldn't recommend these if you have any hand pain or grip problems. Also, I have a hard time cleaning completely around those pesky rivets.

My wife and I bought this set about two months ago. We were excited to be able to get Calphalon quality at such a reasonable price.

Two months later, we find that the non-stick coating on the larger saucepan is already wearing through. I called Calphalon to discuss this. They were very surprised that this is happening already and offered to replace the pot under warranty. I told them I was concerned that this will be part of a trend and that all pots would have to be returned sooner than later. They suggested I try to return or exchange at the retail store where I purchased them.

I've been able to exchange the set at the retailers and have opted for Cuisinart MultiClad in its place. So much for the great non-stick experiment.

I'm surprised with the poor quality of the coating on these Calphalon pots. I have a large anodized saute pan of theirs (which I know does not have the non-stick coating) that performs beautifully, so was disappointed that the Simply Calphalon didn't perform better. I guess my set must have been a "Monday morning at the factory" set...

I was looking to buy some higher-end pans without having to refinance the house and these fit the bill. They are durable, the handles are comfortable and they clean easily. Lids fit well, pans sit nicely on a smooth top stove and heat evenly. Walls are thick but pans are not too heavy and have a good balance. You can't ask for more for such a nicely priced set. The only negative is that the outside of the pans will scratch. I found it was cheaper to buy a set with fewer pans and buy the 3-quart covered sauté pan separately.

These pots and pans will give you a new outlook on cooking and the subsequent cleanup. Easy, easy, easy. The cookware is heavy enough to do everything from omelets to fudge, and it cleans up with minimal effort. The lids are excellent also. These are some of the best pans you could own. First, there is no higher quality, heavy duty pan out there. Second, they is surprisingly cheap for such high quality. Third, I have never tackled a project with these pans that has not come out a success. It is truly professional grade for the home. Even if you are not a professional chef or a food enthusiast, these pans make building a great dish easy. You don't have to worry about those non-stick coatings that peel off but you also don't have to worry about your food sticking to the surface. Ignore the fact that it is more expensive than K-Mart Brand Pan--It is worth the extra cost! Food always cooks evenly and always seems to do so effortlessly. It is the perfect size for a family of four or five and can be used for just about any situation when you don't have the proper pan (although you should really go and check out all of Calphalon's other pans too).

I'm not sure whether this is the exact set I own, but mine has the same pieces. I bought my set when I moved into my first apartment, and I don't plan on ever buying another set of pans. The non-stick surface is amazing (yes, I can brown perfect pancakes without oil and I never have to *scrub* them, even with burned on food). Its definitely worth it to have the clear glass lids rather than opaque [Edited to add: One of my lids shattered a couple months ago--I think Calphalon has stopped making the glass ones because of this, although I still like having the ability to see my food while it's cooking]. Also, before you buy, check the handles: Calphalon seems to have redesigned their handles so they are much skinnier (mine are nice and fat, so I can easily pour a heavy pan one-handed without straining my wrists. My parents have a set with skinny handles, and it is much harder to hold them one-handed.) I've put mine in the dishwasher a few times, and it doesn't seem to do them any harm, but they tend to dry spotty. I would rather baby them and hand wash than have them looking dingy. I have used Calphalon pans quite a lot and they really are some of the best cookware you can buy. This pan didn't get much use in my kitchen, I tend to use the frying pan and pots more than this. Like the other Calphalon pots and pans, this one is made of heavy-gauge aluminum which I absolutely love. It heats up quickly and evenly. It also has stay-cool handles, which are great for me when I'm having a moment and forget the pot holders!

I have used this particular pan for making omelettes and browning meat for tacos, so while its not the most commonly used pan in my kitchen it has seen a decent amount of use. I've never had a problem with the stick-resistant surface, its always been super easy to clean after each use. If something is particularly sticky, I just soak the pan in water for 20 minutes and then scrub it down. I also only use nylon Calphalon utensils, using metal will probably scratch up the pan.

The only bad thing about Calphanlon pans is that you are not supposed to put them in the dishwasher. You "can" but it tends to damage the surface and it also voids the lifetime warranty (which is one of the main reasons I tried Calphalon in the first place!).

I LOVE this pan! Can't believe I bypassed my review of it. It's been a wonderful addition to my growing CALPHALON collection.

This has become THE first pan I grab for almost ANY application. The size is perfect for one pan family meals. Cooks a wonderful stir fry and will take the heat needed to acheive the same. I've fried egg rolls in it, browned meat in it, and even steamed veggies in it. Chili, sauces,paella...you name it...it'll work 9 out of 10 times you grab it.

This pan is broad and low, but has plenty of room for whatever you're cooking. Brown your stir fry meat, toss in your veggies and sauce, place the domed lid on top and "dinner will be served in 5 minutes!"

Calphalon heats quickly, browns beautifully, deglazes wonderfully, and clean up is a breeze in my book.

I now own quite a Calphalon collection and must say, with few exceptions, this has become my most used pan. (Gee, maybe that's why it's call the "EVERY DAY PAN.") Look at the great price Amazon.com is offering this for and click to order. You absolutely will not be disappointed and will have a new workhourse in you kitchen collection.

I have used Calphalon pans for years, and I agree with other reviewers that their hard anodized pans are far superior to other pans on the market. Unlike stainless, they do not scorch. Unlike copper, they do not require laborious cleaning and polishing to keep looking nice. I find that when I read the reviews of people who have been disappointed with Calphalon's hard anodized pans, they typically did not understand what they were purchasing or how to use them. Hard anodized cookware is not non-stick. It is because the food INITIALLY sticks to the pan that you get such great browning. They are stick resistant, meaning that after the food has cooked properly, it releases, leaving a wonderful crust on the food and great browned bits in the bottom of the pan.

And what's all this about "ruining" the pans by putting them in the dishwasher? They may discolor, but they are not ruined. Nor do you need any special cleaners to clean them. If there is anything stuck that you didn't deglaze, a brief soak takes everything off. I've had my pans for over 10 years, and none of them have stuck on food, places where the anodation has come off, or any of the other problems of which some other reviewers have complained.

The everday pan is no exception. It conducts heat wonderfully, and works great on top or inside of the oven. It works for almost any job you can throw at it, from scrambled eggs to roasted pork loan to braised lamb shanks. Its size makes it perfect for family meals, yet it is not so big that you wouldn't pull it out for a meal for just one or two people. It is nonreactive, which makes it great for acidic foods like pasta sauce. The domed lid really seals in steam and promotes self-basting. And the dual handles make it easy to carry from oven to table. This pan really can handle it all. And at this price, it deserves to be in every kitchen.

You will see the beginning of this review on several pans I am rating. After much research I decided on Calphalon anodized pans. I did so because A. I read that they were easier to care for and clean than stainless and B. I put together a set from Amazon at a wonderful price. I regret my decision because these pans are anything BUT easy to care for. They show every spec of oil and it does not come off easily with the special cleaner needed to protect the anodized finish. They also scratch easily when they touch each other. I hand them but cannot imagine how bad they would look if I stacked them instead. I am in the process of gradually replacing these pans with stainless which will not be ruined if one of your children forgets and puts it in the dishwasher.

I have noticed that the nonstick pans were made in China and the others were made in Ohio. I have seen reviews saying the Ohio pans are better. I did not find this to be true. The nonstick pans have shiney handles and lids that are much more attractive than the dull metal from the US made ones. Neither appears to be more or less sturdy.

Of all the pans this one gets the most use and believe me it shows. One reviewer said "who cares" about looks but it is not only the look but the health issue here. I do not feel comfortable with pans that are no longer anodized and thus leaching aluminum into my food. The jury is still out about aluminum and alzheimers, but I don't want to take the risk. My recommendation if you want anodized it to only buy non-stick so you do not have to worry about acids ruining the anodized finish on the interior. This is a great Calphalon "Commercial"griddle I thought I was buying?

I bought Three last year (2gifts), and thought I was buying Calphalon Commercial Nonstick, as that is what was Advertized on Amazon.
Now after reading Your reviews, I went and took a look at the bottom of mine, and Your all right, it just says Caphalon, made in China!!!
The box read Calphalon Commercial nonstick.
I also noticed on my Calphalon Commercial nonstick crepe pan, it just says, Calphalon made in China!
Now when I took alook at other Calphalon Commercial it just says Caphalon, some say made in toledo Ohio, and some say made in China, and some say, Calphalon Commercial.

I thought The Commercial line had a life time warrentee, Now I wonder how Calphalon can tell what all this cookware is , if it doesnt say!!

I just typed in Calphalon Commercial nonstick Griddle, and the page comes up that does read that, but its also MORE money, with different reviews, then this one has!

Last Xmas I bought 15 piece's of Calphalon commercial for my daughter, and bought an other 10 pieces for my son.

I'm really confused, and will be calling Caphalon tomorrow, and see what I have really bought.
I do know that Calphalon mades cookware for Target , and that is a much cheaper line that I do not want.

I do have say, this is a great piece of Calphalon and I would buy it again.
I do love all my other Caphalon also.
The only Thing I don't like about it, the handles.
There too slim for the weight (I have thin hands), unless I use the swede sleave pot holder, then it doesnt turn over on me, but that only happens when I carry it to the sink, and when I wash it.

I do notice when cooking with Calphalon there is a better taste to my soups , stews, ect.

Granted, it should have been a little more obvious to me that this would not work on my oven after looking at the picture a bit more closely.1) I have a standard-sized oven and 2) the oven top is a flat-top design.Because of of the size of my oven, I cannot fit it back to front as most griddles are designed to work.Because of the type of my oven (a flat top) I cannot use this because the cooking surface is elevated above the bottom of the pan (there is a reservoir along the sides that is flush with the bottom).If you have gas or electric (with elevated burners) this should work ok for you (although I still cannot gaurantee that it will fit front-to-back).

Some doubts have been raised by some of the previous reviewers as to the particular Calphalon line that this piece is from. This was a big deal for me as well so I called Calphalon, provided the model number off of the box and was assured that this is indeed a Calphalon Commercial Nonstick product.Also, while the packaging materials do not use the word "Commercial" anywhere on the box, it is reassuring to note that the pan is in the typical green box that most "Collector's Edition" Calphalon COMMERCIAL nonstick pieces are packaged in.

This is a nice griddle, however, be advised of a couple of things:

1. the box, nor the griddle, NOWHERE say this is a part of the COMMERCIAL NONSTICK line, therefore you have no guarantee of the legendary LRS3 commercial nonstick coating being used to build it.This seems deceptive to sell this as "Commercial Nonstick", when nowhere is the word "commercial" to be found, and it is made in China, which could be just fine, or maybe not.It would be nice if Amazon just called this "nonstick", which is what the box says, or else get Calphalon to use correct nomenclature on their boxes, if it is really the Commercial Nonstick line.This is important, because I previously bought a set of baking pans that Amazon advertised as "Commercial Nonstick" and the coating quickly flaked off when the jelly roll pan was used at 400 degrees, which is not even very hot for that type of pan. (although these did not even have ANY name on the back of the pan!)

I have used the REAL Calphalon Commercial Nonstick at 450 for years with no problem, including some pieces made in China, however those said "Commercial" on the box.So, to summarize, this ~may~ be the LRS3 commercial nonstick coating or may not be, but someone at Calphalon needs to decide what this is, and Calphalon and their biggest customer Amazon need to get together and get their box and description to jive.


2. also, be aware that this griddle cannot be used in most ovens anyway, because IT WON'T FIT! I was hoping that this griddle might make a good roasting pan for vegetables, fish, etc, but the 13" x 20" advertised size makes it easy to not realize that the handle-to-handle dimension is 23" across rather than the 20" as described, meaning it will not fit into a 22" wide standard oven whatsoever.This fact could also be made more clear in the Amazon description.Alton Brown says in his book that he once had a catering job disaster when he realized a similar pan would not fit in the standard oven available, due to the wide handles, so I don't feel quite so dumb....I apparently am in some very esteemed company!


so for $39, it is a quite a nicely made griddle, but don't believe that this is necessarily the "commercial" Calphalon line, we have exactly ZERO evidence to support that, and even the Calphalon factory website does not acknowledge the existence of this particular griddle (even though Amazon says it is a "new arrival")It is, however, based on the hard-anodized Calphalon aluminum, so heat distribution should be great.

This is a delightful piece of cookware.The ability to span two burners allows for making enough pancakes to feed a family or to cook and keep warm at the same time!The heat is spread very evenly without any hot spots.There is absolutely no need for oil or butter (I use butter/olive oil for flavor!) as the nonstick works wonderfully. There are two corners that are "crimped" which allow for the easy pouring off of bacon/sausage grease without it running to the underside of the griddle (a really nice touch). There is a depression which runs all the way around the griddle and collects the grease of bacon or sausage.

It is very easy to clean but does require some special handling.First, never put this griddle in a dishwasher (I doubt it would fit). There will be significant discoloration of the anodized aluminum. Second, use only non metal utensils, the metal ones WILL SCRATCH the surface.

Overall, this griddle is as good as I have ever used (in my 40+ years of cooking).This griddle is a real pleasure to use . ... Read more

I don't have time to baby my cookware! The pans that I use often worked well for a few months and then I noticed the circles were chipping into my food! My neighbor found the same thing happening with hers! I bought mine in 2001 and now I am looking to replace them!

How can you use cookware that you can't get hot??! Want to sear some ahi tuna? Forget it. Cook a large batch of pasta? Have a good book handy while you wait for the water to boil on medium heat! Your cooking times will double, and if you try to rush the process by using high heat you'll end up with cookware that sticks badly.

What's next, a Circulon line of stemware that is ruined if you put liquids in them?

I couldn't decide what pans to get when I was ready to get rid of my mixed, hand-me-down collection of old pots. Although I was attracted to this set, I delayed for quite a while because I thought having to hand wash pans would be a pain. I was wrong!

I've had a set of Circulon pans for over two years now, and it was the best purchase I ever made. They are so incredibly easy to clean, that you simply swish some soapy water over them and they are done! Nothing sticks, and the finish is incredibly durable.

I've simmered hours of soups, stews, spaghetti sauces, stir fries, etc., in these pans, and they still look like new.

The pans are well made and distribute heat evenly. The circular pattern in the finish seems to help foods brown too.

Warning: the Manufacturer's instructions tell you not to use cooking sprays (like "Pam"), but to use oil instead. (Apparently cooking sprays can get too hot, hurting the finish.) That's the only down side. However, I hope the tiny drizzle of olive oil I use doesn't add too many calories to my dishes!

The Manufacturer's instructions also tell you to hand wash the pans. I believe doing so is why my pans still look like new after years of use. However, my husband did put them through the dishwasher once or twice while I was gone on a trip, and it didn't seem to harm them. (Whew!) So, maybe they can stand up to ONE machine wash! But, hand washing them takes just seconds, so you won't mind doing it.

Since I purchased my set I've sworn off all other cookware. These pots and pans are simply amazing. Non- stick, easy to clean and a delight to cook with. I can fry in just a teaspoon of oil since the grooves prevent meats from sticking. I don't even mind washing pots and pans anymore since cleanup is a breeze. I don't need any abrasive sponges or cleansers. A regular yellow sponge and some dtergent will get rid of the greasiest, messiest grime you could cook up. I have never been happier in my kitchen.

I recently ordered this based on my appreciation for Calphalon products and the great price. This is a fantastic saucepan that can practically double as a saute pan. It is surprisingly large and roomy, and the extra diameter gives it plenty of room for fitting in two or three chicken breasts, a modest steak, or a handful of veggies. I love it for making coq au vin since it isn't too large and goes right in the oven.

Nothing sticks to this pan if you add just a dab of butter or oil, and it heats up and cools quickly. One great feature of pure aluminum cookware is the fact that aluminum dissipates heat quickly, so pulling the pan off the heat is a great way to regulate the temperature when making a sauce. This is a great product and a wonderful addition to my Calphalon cookware collection.

Ok, let me get this straight...Amazon has 2 different 2.5 quart Calphalon Commerical Hard-Anodized saucepans, the regular, and the shallow. Inspecting the technical details of the two pans, one quickly realizes that they are identical except for the diameter and the height of the pan. The shallow is, naturally, more shallow (3 in. compared to 3 7/8 in), and therefore wider (8 3/8 in compared to 7 in) to accomdodate the fact that they hold the same amount of volume. What does this mean? More SURFACE AREA. What does surface area do? Well, think about it for a second: more of the pan is in direct contact with the heat because of the larger bottom. As a result, more of the food is exposed to the heat. The result? Faster cooking!
And this is a "sauce" pan after all. So what does this mean for sauce? Same thing as above, but remember, more of the sauce comes in contact with the air. More surface-to-air ratio = faster reducing times for sauces.
So we've established that from a technical standpoint, the shallow saucepan seems superior. It cooks faster because of a greater area for heat to contact food and for the surface of a sauce to contact the air. With that in mind, take a guess which one costs more. Surprsingly enough the pan with the lower amount of surface area costs at least %50 more than the more useful shallow saucepan.
So unless you are looking for a pan that reduces more slowly and has a much lower amount of versatility (try browning a couple of chicken breasts in the regulation sized saucepan...you'll have squished chicken), I recommend this pan whole-heartedly. The anodized aluminum does not react with acidic foods such as tomato sauces, looks really cool, heats quickly and evenly (aluminum is an incredible heat conductor), and won't bust your budget. This is the perfect way to own a piece of excellent cookware for a bargain basement price. Just remember, it is stick-resistant, not non-stick. This browns up much nicer than the Calphalon non-stick stuff, and you don't have to treat with kid gloves. About the only thing you can't do is throw it in the dishwasher (which you shouldn't do with any decent pot or pan) and use a knife or electric mixer in it (a hand blender is fine...the blades never touch the pot).

If you are considering the purchase of this pan or any of the caphalon products in this line. Totally disregard the Toledo vs China comments. They have no validity WHATSOEVER! I've purchased two of these pans (1 Toledo's, 1 China), and there is absolutely no difference in quality, thickness, or weight. I've also purchased the Calphalon Commercial Hard-Anodized 9-Inch, 2-Quart Chef's Skillet with Lid(2 Toledos, 1 China), and again,there is absolutely no difference in quality, thickness, or weight. There is a difference in thickness & weight, if you compare them to other caphalon product lines. However, that is not to say they are inferior. They have a nice thickness and weight, great heat retention and dispersment. Awesome for browning, making sauces, stir frying, etc. If you follow the instructions for use, you will have no problems with cleaning,food release, or sticking. I have read most of the reviews, and the bad ones can be attributed to two things: 1. We alway seem to think stuff is way better made in America ... not true in this particular case. Those who made statements about Toledo pans vs China pans, could not own pans from both plants. 2. Complaints about sticking, or cleaning, ...they didnt follow the SIMPLE instructions. This Calphalon Commercial Hard-Anodized 2-Quart Chef's Pan with Lid is a "collector's item" from the newer line of Calphalon's Hard-Anodized cookware. Thus, it is the same alloy aluminum type pan as in the older "Professional" line, but its handle is "stay-cool" sculpted stainless steel, instead of an older chrome-covered iron handle, which could get very hot to the touch. The 9-Inch bottom of this chef's pan is slightly smaller than that of the 3-Quart Sauté pan, another useful pan that usually comes with a Calphalon starter set.

This pan is a bargain. Since Calphalon rarely offers such deep discounts, it seems worthwhile to add it to one's collection. Because it has the rounded chef's shape, I would use it for stir-frying, reducing sauces, and making demi-glace. I have two flat-bottomed woks (Joyce Chen and Calphalon), but they do not work that well on an electric range. This chef's pot works well for a small-to-medium stir fry on either gas or electric burners. When the stir fry is done, I use a Calphalon nylon scoop to remove the cooked food, then I reduce the sauce.

The hard anodized finish of this chef's pot makes it virtually non-stick. Using a pan spray is not a good idea because it can leave behind a sticky residue. Hand-washing is recommended, with use of Bon Ami or Dormond cleaner for any stubborn stains.

Even though mine came from Toledo, this pan IS lighter weight than my other Calphalon pans, but after using it for several months, I don't notice any less performance compared to its heavier siblings. It's a great size for sauteing vegetables or shrimp for 1-2 people, and with its deep tapered sides, it's ideal for reducing sauces. Even with thick cheese sauces, you don't have to worry about "hot spots" burning or sticking (it makes a killer alfredo sauce). This pan won't wipe clean with a paper towel like a non-stick pan will, but after following Calphalon's guidelines, I haven't had any problem cleaning any of my hard-anodized pans, whether I fried, baked or broiled in them. I have gotten a few oil spots on my pans, as other reviewers have mentioned, but they don't look that bad, and it doesn't affect performance. This is a great little pan and a great big value.

If you are considering the purchase of this pan or any of the caphalon products in this line. Totally disregard the Toledo vs China comments. They have no validity WHATSOEVER! I've purchased three of these pans (2 Toledo's, 1 China), and there is absolutely no difference in quality, thickness, or weight. I've also purchased the Calphalon Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepans with Lids (1 Toledo, 1 China), and again,there is absolutely no difference in quality, thickness, or weight. There is a difference in thickness & weight, if you compare them to other caphalon product lines. However, that is not to say they inferior. They have a nice thickness and weight, great heat retention and dispersment. Awesome for browning, making sauces, stir frying, etc. If you follow the instructions for use, you will have no problems with cleaning,food release, or sticking. I have read most of the reviews, and the bad ones can be attributed to two things: 1. We alway seem to think stuff is way better made in America ... not true in this particular case. Those who made statements about Toledo pans vs China pans, could not own pans from both plants. 2. Complaints about sticking, or cleaning, ...they didnt follow the SIMPLE instructions. For the price, brand, warranty, and quality, this is one of the better kitchen purchases.

I bought this , as it looked cool in the website.
First -- Don't buy unless you are single and are making
a one serving of the dish -- it is too small--
aLL the food gets spilled on the stove.
Second -- It doesn't have the protective coating-- like non stick
It doesn't work if you want to cook on high flame
and less oil.You have to compromise on time or fat.
Third -- I bought couple of more in the hard anodized -- they
are good for making soups, not stir fry's.
Fourth -- I cannot use it for deep fry's as I am scared that it
will spill, as it doesn't have a flat base and is not
stable on the stove.
Fifth -- I highly recommend the contemporary style that amazon
has -- I use it all the time.

My wife and I bought this set about 3 years ago and they are still nearly as good as new. We selected them over Analon and Cephalon because the saucepans and skillets have molded rubber handles. This makes it possible to handle the pots without using pot holders. My wife does the cooking and I clean up so I can tell you that she has never been able to damage or even get food stuck on the cooking surfaces.

One thing that you should understand about any aluminum or cast iron cookware is staining of the outside surface. Any oils or food that spill onto the outside during cooking will actually be absorbed into the metal surface creating a dark stain that cannot be removed. I consider this part of the seasoning of the cookware and not unattractive but people who like their cookware to always look new should consider stainless steel or something.

I love these pans! I grew up using cast iron pans. I loved the way they cooked, but hated the clean up! I never have a problem with food burning or sticking on these Circulon Classic pans. Small bits of egg do stick, but wipe right out. Everyone always comments (postively) on the circles on the pancakes from the grooves. I left this set of pans behind after a break-up and now I'm buying the set piece by piece since I loved them so much. Sometimes I miss the pans more then the ex!

I've had my circulon set for about 4 1/2 years now and I loved them, couldn't live without them, until a few months ago. They're becoming increasingly difficult to clean and are forming a sticky residue despite the fact that I've cared for them exactly as the maufacturer said. When looking for the Meyers web site to email them, I came across some complaints of the exact same nature by people who sent their cookware back to Meyers in hopes that they would make good on the lifetime warrenty and Meyers sent a form letter (!!) saying they obviously misused them and that the warrenty is void. Unless you're willing to shell out a few hundred dollars for pots every few years (I'm not!) look elsewhere.

I bought this set (14 piece + the free 9 in skillet) for 170.00, just saw a similar set (only 10 pieces) at Sears for about 250.00. Have been cooking with the set now for a couple of weeks and my wife and I both love them. Easy clean up, no "hot" spots (even heating) and you could probably couldn't get super-glue to stick to them. I have absolutely nothing negative to report........... Great buy.

I am an All Clad user. While browsing for All Clad I came across the 14 pc Circulon set with bonus pan. It was over half what my mother in law paid for her ten piece set several years ago. What a bargain! I ordered it as a filler set of cookware. The box came rather quickly and the cookware is wonderful. As with any non stick cookware, you do not want to cook on high heat. As long as you can remember to keep your heating element on meduium or low you will be okay and will enjoy this item. I don't normally purchase items that are endorced by celebrities. They are usually lower in quality in order to keep the price down. However, this cookware set is a quality product. Good weight, flat cooking surface and heats evenly. I like the glass lids, although I understand they are cheaper to manufacture. For the price you can't beat the quality and the All-Clad name. I researched other brands and I would recomend this product. By the way, a tip from my lovely wife, insert the corks from your wine bottles or champagne (for the larger ones) into the handles of the glass lids. It makes them easier (cooler) to work with.

The Emerilware Stainless is great cookware for the price. I really wish people would understand that pots and pans that are NOT non-stick can not be treated as if they were nonstick.

First of all, you must preheat the pans and use some type of oil, fat, etc.

Second, do not overheat these pans. A little over "medium" is about all you need unless you're just boiling water. Anything hotter than that will often cause the metal to look blueish until it is properly cleaned. This is true of all stainless cookware I've used.

Also, the copper on the pot will tarnish because, IT IS COPPER. That's going to happen. So if you want the cookware to look nice and pretty then don't use them. If you actually plan to cook, this is some decent cookware at a decent price. (BTW, the copper cleans easily with Bar Keeper's Friend, or a common household solution such as lemon juice and salt).

That said, I prefer All-Clad. (I plan on becoming a chef, and I'm insistent on having the best)

For what it's worth, we had an aluminum pot that completely melted when the water boiled out (although we never thought to sue...sheesh!). It's entirely possible, and something I keep in mind to this day when dealing with aluminum on the stove. The melting point of various metals changes dramatically when alloyed with other metals. It's not a stretch to assume that an alloy is used by All-Clad, and that the alloy has a low melting point.

Just thought I'd add more information to the issue...

(DISREGARD RATING ABOVE) I was researching All-Clad, Calphalon, etc., and read the review below alleging the "melted" Emerilware. Even went to the website and looked at the pics. This guy has GOT to be full of it. For the curious, the melting temperature of Aluminum (Al) is 660C, or 1,220 deg F (in case you forgot, water boils at 212F). Unless he was cooking on a plasma torch, there's NO WAY THE Al IN THE POT MELTED. Only possible guess(giving the LARGE benefit of the doubt) is someone at the factory filled the pot with Tin (SN) instead, which has a melt temp of 231C/449F (which you could 'potentially' hit on a stove) . Unless, of course, he's just cruising for an easy lawsuit.... Thought y'all should know...
