The Japanese version of the chef’s knife, the santoku is useful for straight chopping, mincing, and slicing of larger quantities of vegetables and meat. Cooks with smaller hands may prefer this 7-inch blade as the shorter length offers better control while cutting. The width also provides a great platform for transporting chopped vegetables from cutting board to sauté pan. This version of the santoku actually has a hollow edge or oval cut-outs along the blade. The benefit to this blade style is that cooks can cut paper-thin slices and individual slices won’t stick to the blade.

Part of the Pro S series of cutlery, this knife has a fully forged high-carbon stainless-steel blade. The blade, bolster, and tang are welded of one piece of metal using Henckels’s Sinter Metal Component Technology, which distributes the right quantities of metal to each part of the knife. The result is a longer-lasting edge and a more consistent angle on the blade. The blade has also undergone Henckels’s Friodur ice-hardening process, which further strengthens it and protects it from discoloration. This knife is the cream of the crop. I am in the food industry and i have never used a knife this awesome. The weight and feel is unbeatable. Definatly a 10 out of 10.

After buying the Calphalon Classic Santuko knife I felt compelled to buy the J.A. Henckels version for comparison. First off, this knife was sharp as a razor and stayed sharp for a long time, the Calphalon dulled within 3 slices of a lime. The weight and handle are not as heavy and as comfortable on the Henckels, the steel is far more lightweight. But aside from the smaller grip handle and lightness, I enjoy using it more than the Calphalon. I suppose it's just personal preference. Once you use these knives, you will want to throw all your others out. At least I do.

I have been an avid amateur cook for 25 years and have worked with a wide variety of kitchen tools during that period. Knives that I have utilized range from the "cheap but effective" to the finest products from Henckels. But the knives I use daily are the Globals', and the one that I cannot be without is this one. Although it is designated by the manufacturer as a Utility knife, it is simply the best paring knife I have ever used, and I've gone through a lot of them. Its razor sharpness is easily maintained, it has a perfect heft and balance, and it is exactly the "right" size and shape. It just feels great. I love all my Henckel knives, but this one is definitely the most versatile. It's 5" length and super sharp serrated blade make it ideal for vegetables as well as meats and smaller bread loaves. If you're not going to buy an entire set of quality knives, you really should have this one amongst the few you choose.

(I say this with regret as I love the handle and balance of my Henkels chef knife). Henckels knifes are indestructable and I my experience (and I have heard this confirmed by a professional chef and cooking instructor) is that they are near impossible to sharpen. For many people this may not mean a lot, but a good knife should be able to have that remarkable edge for years (not just the first 3 mos). A professional may be able to sharpen these but not as well as other knives (e.g., Chicago Cutlery and others) -- no second honeymoons with these.

We purchased a Henckels Four-Star set about ten (10) years ago and use it daily. Out of the set of six or seven knives, this utility knife is our most frequently used. It is extremely useful in food preparation, holds an edge longer than the other non-serrated knives, and isn't affected by dish-washer abuse.

This is a great product that will last you many years. One caveat: NEVER allow your MOTHER-IN-LAW to borrow it and use it as a screwdriver. It will be ruined - hence my purchase of a second one of these knives. ... Read more

This is a classic French chef's knife, with a broad blade and a curved cutting edge for rocking through a chopping task. You can spend a lot more on a knife, but you won't buy any better performance where it counts, in the kitchen. Made of sharpenable stainless with a synthetic handle that will never loosen or break apart, this knife has a nice heft and a good edge and should last most home chefs a lifetime. Give it a few strokes with the steel every time you use it and the edge will last for years without needing to see a sharpening stone.

If your cutlery drawer is full of various inexpensive supermarket blades, "miracle" knives and the like, throw them all out and buy one decent blade like this, and you may be amazed how versatile a simple, quality knife can be.

I recently purchased this knife and am overjoyed with the performance. If you don't have a well balanced professional knife you can't imagine how nice it is to work with one. I went to the local restaurant supply stores and handled several brands and sizes to see what felt best. The Henckels Pro S 8" was the best. The 10" seemed top heavy but I'm sure someone else may feel different. The blade holds an incredible edge as well. I steel the blade before each use to keep the edge in the best cutting condition.

We live on our boat and don't leave the Cuisinart on the galley counter. I found that there is little reason to break out the Cuisinart unless I have a large amount of food to process. The 8 inch Pro S has stayed sharp and in the year I have owned it have only used the honing steel to keep the knife in perfect condition. Use a plastic or wood cutting board and use the steel and enjoy this fine knife. I plan to buy the six inch model soon.

The 8" chef knife is an absolute joy to use in the kitchen. It actually makes prep work enjoyable. Chopping, slicing, dicing, etc. are now effortless. It's razor sharp and stays honed that way for quite sometime under heavy use. I am very good at maintaing its edge by hand, and its high quality carbon steel blade lends itself perfectly to this task compared to stainless steel blades. I have been using a typical chef's nice since starting my career in the kitchen and have an AMAZING case of carpal tunnel sydrome/ RSI as a result. I was recommended a Santoku knife as a change and the difference is UNBELIEVEABLE.
Yes, you cannot "rock" with a Santoku or break bones, but a cleaver comes in handy for bones and I could NEVER get the razor-thin slices I can get with this nice little baby!
I have never been a fan of rocking and have taught all my fellow chefs to do what feels right for them ... and they do not rock their knives, either ... and if any handles crack, that is why Henckels guarantees EVERYTHING for life (www.zwilling.coM for an FYI if you read the review about me where he said he only uses it for back up now that he has a cracked handle).
I would highly recommend this knife ... the divots in the Wustof are nice, but jusdt a fancy addictive ... that is what a bench/dough scraper if for.
Buy this knife and you will be ecstatic ... I am going to buy them as gifts for everyone I know for thei b-days this year!

Henkles, Wusthoff ect all have different ranges of knives ranging from so-so to excellent. Well these are the so-so ones. If you are a weekend cook, these would be fine but if your in the kitchen daily and want a quality knife that you would use often for many types of food, get a better high-carbon, FORGED one from any company.

I have this exact model and after less than a year of hand washing, I noticed a crack in the handle. Now it's almost falling off. I only use it as a back-up.

It's too light for harder foods like carrots and requires a lot more effort to cut anything requiring force to cut. Even after it's sharpened I find it awkward chopping larger, harder foods. It just doesn't have the weight, even if it was a chef's knife which is honestly probably more of the functions I use it for. It's about the same weight as a cheaper bread knife. For the types of cuts this knife is supposed to be designed for, it's just too light to be effective. It's just too hard (and too dangerous) to make good chopping cuts with such a light knife.

Spend the extra $5-$10 to get a forged knife from any company, Henkels or not.

This knife is great, it's light weight, sharp, and it has all the good things you expect from a Henckels knife. It's also affordable for household kitchens.

I saw this exact Mezzaluna chopper in an article about herbs in a recent issue of Cooking Light. It seemed to be the perfect alternative to chopping herbs on a flat surface. The Wusthof 4 1/2 Inch Utility Knife is perfect for almost any small to medium size job in the kitchen. It is exceptionally well balanced and almost infinitely adaptable. The knife is amazingly sharp when it comes out of the box, and holds a great edge even after a lot of use. I find this knife to be my personal cutting implement of choice when I need something smaller than a boning knife.

Wusthof knives have been in my kitchen for years and they are the best knives I have ever used. I used to be a chef in a gourmet beef restaurant and I would have loved to have had a set of Wusthofs then. Now I have my own set, but of all the knives in my kitchen I think this one probably gets the most use. Buy a Wusthof once, and never replace it: they are expensive but worth every penny.

I absolutely love this knife. It's light weight, but can do a heavy workload in the kitchen. Great for dicing, slicing, and paring. I especially love how it easily cuts through onions, making the finest dice. The manufacturer says that it is dishwasher safe, but I would definitely not run it through the dishwasher, may dull the blade. The best thing about it is it's weight in your hand, and also the safety sharpness of the blade. If you love to cook, and don't look forward to the dicing, splicing, chopping, and paring of your favorite recipes...this is the knife for you. It will make those jobs fast, and accurate. The price fluctuates on this item as well. I've seen it on sale for as low as $13.95 at some speciality stores. ENJOY!!!

I purchased this knife by itself (not in a set) and find it to live up to it's "utility" claims. For those of you who buy knives individually instead of in large sets, this is a nice addition. I was looking for something smaller to compliment my Santoku Chef's knife, but thought the smaller paring knife wouldn't be very useful for much else. This size works well for small chopping tasks and is easy to use for paring as well.

It really doesn't make much sense to get a set that includes several of these smaller knives. This one alone has exceeded all expectations.

This refers to the classic style which to me is my choice between both styles. This is one of the favorites in my Wusthof set. Quality,well balanced,holds a sharp edge,comfortable,rated #1 by Consumer Reports magazine; are some of the great comments on this knife as with all the other Wusthof knifes I have. Try one & you might be hooked on them like me. I recommend trying each style for some prefer the Grand Prix & others choose the Classic style. Either way, you are a winner with a Wusthof.

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

The Wusthof 4 ½ inch utility knife is a great all-around knife. This is the knife I use for the majority of my small chopping work (when I don't use a Chef's knife). ... Read more
