First of all, you must preheat the pans and use some type of oil, fat, etc. Second, do not overheat these pans. A little over "medium" is about all you need unless you're just boiling water. Anything hotter than that will often cause the metal to look blueish until it is properly cleaned. This is true of all stainless cookware I've used. Also, the copper on the pot will tarnish because, IT IS COPPER. That's going to happen. So if you want the cookware to look nice and pretty then don't use them. If you actually plan to cook, this is some decent cookware at a decent price. (BTW, the copper cleans easily with Bar Keeper's Friend, or a common household solution such as lemon juice and salt). That said, I prefer All-Clad. (I plan on becoming a chef, and I'm insistent on having the best)

Folks concerned about the heavyness of the Emeril pans should check them out in the store, and compare to the Calphalon Commercial products, which also carry a lifetime warranty and have excellent cooking characteristics. This particular set would be an excellent starter for a couple. Families and entertainers will need to add at a minimum a 12-inch frypan and an 8-quart stockpot, also available here at Amazon. Enjoy!

Although it's sometimes nice to have such a big pan (the pan is 12 inches across the top, but only about 8 or 9 inches across the bottom), I wish it were an inch narrower on the top since I have a relatively small stove. The pan is so wide that the only other pan that will fit on the back burner behind the skillet is a 1 or 2 quart saucepan, but not anything larger. I didn't think about this before I bought the pan, so I recommend that others get out a ruler before making a final decision. Also, the pan is quite heavy, which is nice for retaining heat, but for someone who's relatively small (like me) it can be difficult to lift. The heavy weight and single long (rather uncomfortable) handle to one side means that it takes a lot of strength to hold the pan up by one hand while using a spatula to move food from the skillet to a plate. I can't offer a very confident evaluation of the non-stick surface. It's my first real non-stick pan, and I haven't used metal utensils or put it in the dishwasher, but I like to use high heat to dry-fry zucchini and tofu, which the instructions say not to do unless you're boiling water in it. I find this to be quite limiting, but still I suppose I can't complain that the surface is starting to flake off and the middle of the pan is no longer non-stick after about a year. I do like that the pan can go in the oven, but unfortunately what I most often want to do is put in under the broiler for a minute, which isn't allowed. I agree with the other reviewer that says the script "Emeril" on the handle is tacky, and that a lid would be *very* useful. Overall, if you have a large enough stove and big enough muscles then it's a good pan that heats well and cleans up easily as long as you accept the limitations of nonstick and follow the instructions and only ever use medium heat.

I've had this pan for several months now, and highly recommend it.
One of the things I like about the Emeril pan is that it has rivits that won't ever break. The pan is made by All-Clad, and is identical to their 12 inch pan, but at less than 1/2 the price. Other reviewers complained about "tilting" Emerilware frypans---I've NEVER observed this problem with mine. I would suggest such a pan is "defective" and should be returned. Cleanup for the Emerilware is effortless. I nest my pans between cloth dishtowels for storage, to protect them from scratching each other. This pan is excellent for dishes that start with browning meats on top of the stove, adding other ingredients and then baking in the oven. This is a GREAT pan, perfect for taking straight to the table. Beware! The handles do get hot and the pan is fairly heavy. I always used Revereware and similar, Emerilware was a "step up" for our household. I also bought the Emerilware 8-inch and 10-inch non-stick frypans---the three pans make a great set. We have the Calphalon "Kitchen Essentials" stainless pans set from Target, another great buy but no longer available, for cooking that doesn't require non-stick. I think the combination of a stainless set plus a few non-stick items makes for the best cook's tools. Love the Emerilware and I'm always looking for new pieces that would add to our set. ... I don't fully agree with the other opinion that states the handle is top heavy, causing the base to lift off the stove (I think that's what was said--sorry if I misphrased). I think it's just a matter of the handle being somewhat longer, which makes it a bit uneven feeling. However, that said, I have had no problems cooking with it. (In about 20 uses, the pan has not tipped over once!!) If you're worried about it, I think you may just want to be careful not to leave the handle of the piece hanging out over the edge of the stove where you might bump it. One other note: after having used other non-stick cookware and being used to using "Pam" style sprays to cook with, it has been a hard habit to break with the Emerilware pan. It is stated clearly in the instructions that you should NEVER use aerosol sprays because it can gunk up on the pans and is extremely difficult to clean. With these non-stick pans, you really don't need any coating, and when you feel you do, a bit of olive oil or butter works wonders. I can't wait to get the full set!!

The only downside to the pan is that it is quite heavy. The weight of the pan makes it cumbersome to clean. I have also noticed that the outside of the pan tends to scratch easily, but this does not affect the performance of the pan. For the price, the Emerilware nonstick pans are a great buy! ...
